1 3/4 cups all-purpose flour
1 3/4 cups Splenda zero calorie sweetner
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
1/2 cup canola oil
2 large eggs (room temperature)
1 teaspoon vanilla
1 cup freshly brewed strong hot coffee
8 ounces cream cheese ((softened))
2.1 ounces sugar free chocolate pudding ((1 large box))
1 1/2 cups milk
8 ounces Lite Cool Whip

Steps:

  • Preheat oven to 350 degrees. Grease and flour 2 round 9-inch cake pans.
  • For the cake, put flour, Splenda, cocoa, baking powder, baking soda and salt in a bowl and mix well.
  • In a stand mixer, mix the buttermilk, oil, eggs, vanilla together. Slowly add in the mix of dry ingredients while the mixer is on low. Add the coffee and make sure everything is combined. The batter will be very thin.
  • Pour the batter into the prepared pans and bake for about 25 minutes or until a toothpick inserted in the middle comes out clean.
  • Turn the cakes out onto a cooling rack. While the cakes are cooling, make the frosting.
  • Using a hand mixer, whip the softened cream cheese in a large bowl until smooth and creamy. Set aside.
  • In another bowl, mix together the milk and sugar free pudding mix, whisking until smooth.
  • Add the pudding, one spoonful at a time to the cream cheese, beating between each addition. Be careful not to add this too quickly or it won't mix in well.
  • After you've added in all of the pudding, fold in the whipped topping and mix gently until completely combined.
  • Place one cake layer on a plate.
  • Spoon and smooth about 1 to 1 1/2 cups of frosting over the first cake layer.
  • Place the second cake on top.
  • Frost the top and outside of the cake (if desired) with the remaining frosting.
  • Refrigerate the cake until serving. The frosting will soften and "melt" as it is at room temperature so be sure to keep the cake cold!

1 1/3 c cocoa powder (not dutch)
3 c splenda
1 Tbsp baking soda
1 tsp salt
1 1/2 stick butter, softened (3/4 c)
3 c buttermilk
1 tsp vanilla
5 lg eggs
FOR CAKE MIX:
place first 5 ingredients in freezer bag: store in pantry. label: (listing next 4 ingredients and directions below)

Steps:

  • 1. Preheat oven 325. Grease and flour two 9" round cake pans or line cupcakes with liners
  • 2. Place all ingredients in electric mixer bowl and beat on high speed for 3 minutes, scraping down sides once. Pour into pans.
  • 3. Bake 55 minutes or until toothpick comes out clean. Cupcakes bake 20-25 minutes.

Living with diabetes limits your indulgences, and finding this recipe had opened new doors for me. This cake is made in the microwave and is fast to boot. It is great for birthdays and valientines day. Since there is no sugar it is healthy and it has fiber too!!

1/4 cup soy flour
1 tablespoon unsweetened cocoa powder
1 egg
1 tablespoon vegetable oil
2 tablespoons Splenda sugar substitute
1/4 teaspoon baking soda
1/4 teaspoon vanilla
1 pinch salt
3 tablespoons sour cream
1 tablespoon unsweetened cocoa powder
2 tablespoons Splenda sugar substitute
1 large strawberry

Steps:

  • In a bowl sift soy flour, cocoa powder, salt, and baking soda.
  • Add egg, splenda, oil, and vanilla. Mix until combined.
  • Line a small microwave safe bowl with a cup shaped(not cone) coffee filter.
  • Pour batter into bowl and microwave on high for aprox. 1 minute or until there are no wet spots.
  • Take cake out of coffee filter and set on paper towl to cool.
  • Combine frosting ingredients in a small bowl.
  • Cut cooled cake across creating two layers.
  • Frost bottom layer and replace top layer.
  • Frost top of cake and sides and decorate with strawberry slices.

This is from the Splenda site. Please Note: Splenda Brown Blend is 50% sugar and this recipe uses 1/2 a cup. That's 1/4 cup of sugar in the entire cake. 1/4 cup =4 Tbsp. Steps:

  • Grease a deep cake pan or bundt with non-stick cooking spray, set aside.
