Easy Cheesy Macaroni and Cheese image

I have been making this macaroni and cheese for a while now. It satisfies my cheese craving. This stove top recipe doesn't take much longer than the box stuff, but tastes like homemade without the preservatives. This is definitely comfort food!

Number Of Ingredients 8

8 ounces elbow macaroni (or whatever shape you prefer)
3 tablespoons butter
2 tablespoons flour
1 cup heavy cream
1 cup 2% low-fat milk
1 1/2 cups sharp cheddar cheese (shredded)
4 -5 dashes Frank's red hot sauce (do not use Tobasco)
salt and pepper

Steps:

  • Cook macaroni until al dente. Drain and set aside.
  • Melt butter in large saucepan. When melted, whisk in the flour until incorporated and cook for 30 seconds or so until thickened.
  • Slowly pour in cream and milk while whisking. Cook until thickened on low heat, whisking frequently. Usually 3-4 minutes.
  • Remove pot from heat and stir in the cheddar cheese, hot sauce, and salt and pepper to taste. Once all the cheese has melted, add macaroni and stir well. Adjust salt and pepper per taste.
  • Enjoy!

8 oz elbow macaroni, cooked
1 can(s) cheddar cheese soup
1 stick cracker barrel extra sharp white cheese, grated
1/2 c milk
1/2 stick butter, melted
panko bread crumbs

Steps:

  • 1. Preheat oven to 350
  • 2. Cook macaroni as directed on box
  • 3. Mix soup and milk in medium saucepan, heat
  • 4. When soup mixture begins to bubble, add grated cheese, continue to heat until melted
  • 5. Mix cheese and macaroni, place in greased casserole
  • 6. Melt butter, then add panko bread crumbs, about a cup, stir until bread crumbs begin to brown, then top macaroni with bread crumbs
  • 7. Bake at 350 until bubbly, about 30 minutes

1/4 cup margarine
1/4 cup flour
3 cups milk (more if needed)
salt and pepper
8 ounces cheddar cheese, grated
8 ounces monterey jack cheese, grated (pepper jack would also be good)
500 g pasta (I used lumaconi- extra large macaroni-type noodles)

Steps:

  • Cook pasta and drain, set aside.
  • Melt margarine, add flour and whisk until well blended.
  • Add 2 cups of milk, heat until thickened (about 4 mins in the microwave, stopping half way to whisk).
  • Add more milk to thin, if needed and add cheese.
  • Stir until cheese is melted, heating again if needed.
  • Add more milk to thin, if desired.
  • Pour cheese over pasta, top with additional cheese and breadcrumbs, if desired, bake at 350 until bubbly.
