Enjoy this fabulous go-to entrée for brunch, lunch, or dinner. It's like a savory, rich-and-crusty bread pudding. Vary the flavors here with different types of sausage-try spicy Italian, smoked, and even crumbled breakfast sausage-or use cauliflower or Romanesco florets instead of broccoli. You might also add a sprinkling of fresh herbs with each layer of cheese, if desired. Chopped fresh parsley or sage would be delicious. Reheat leftover servings, covered with foil, in a 350°F oven for 15 to 20 minutes for a crisp-meets-custardy texture just like it came from the oven the first time around. Or, reheat portions in the microwave for 1 1/2 minutes on high for a soft pudding-like consistency. You can prepare this through Step 4, but do not bake. Cover and refrigerate until an hour before you plan to serve it. Bring it to room temperature while the oven preheats and then bake as directed.

12 oz Italian bread do not use slices; use in loaf form
2 medium clove(s) Garlic clove(s) peeled and smashed (or to taste)
1 large Uncooked red onion(s) cut into thin wedges
4 cup(s) Uncooked broccoli florets
1 tsp Olive oil
12 oz Uncooked turkey sausage(s) sweet Italian-variety
1 cup(s) Canned chicken broth
0.5 tsp Table salt
0.25 tsp Black pepper
0.25 tsp Crushed red pepper flakes
1 spray(s) Cooking spray
0.75 cup(s) Weight Watchers Reduced-fat Mexican style shredded cheese sharp-variety

Steps:

  • Preheat oven to 400ºF.
  • Slice bread in half length-wise; rub insides with garlic clove. Place bread, open-face, on one side of a baking sheet; spread onion on other side. Place broccoli on another baking sheet. Coat vegetables and bread with cooking spray. Bake until broccoli is tender, flipping bread over and stirring vegetables halfway through, about 15 to 20 minutes total. Remove pans from oven and cut bread into 1/2-inch cubes; reduce oven temperature to 350ºF.
  • Heat oil in a large nonstick skillet over medium-high heat. Remove sausage from casing; cook sausage, breaking it up with a wooden spoon as it cooks, about 7 to 10 minutes. Stir in broccoli and onion, bread cubes, broth, salt, pepper and red pepper flakes. (Make sure to scrape up any browned bits of food on sides of skillet and stir into mixture.)
  • Coat a 9-inch square baking dish with cooking spray. Spoon 3 cups broccoli mixture into prepared dish; sprinkle with 1/4 cup cheese. Top with remaining broccoli mixture; sprinkle with remaining 1/2 cup cheese. Bake until cheese is melted and casserole is heated through, about 30 minutes. Slice into 8 pieces and serve. Yields 1 piece per serving

3/4 cup shredded low-fat cheddar cheese
3 ounces Canadian bacon, chopped
1/2 cup green onion, sliced
4 whole eggs, beaten
12 ounces evaporated nonfat milk
salt & pepper

Steps:

  • Preheat oven to 350°F.
  • Spray a 8x8-inch pan with nonstick cooking spray.
  • Arrange potatoes at the bottom of the dish.
  • Sprinkle with cheese, Canadian bacon and green onions.
  • In large mixing bowl, combine eggs, milk, salt & pepper; pour over potato mixture in dish.
  • Bake uncovered in a 350°F oven for 40 minutes or until center appears set.
  • Let stand 5 minutes before cutting.

This is our family version/replacement of the traditional green bean casserole that everyone always brings. I am seriously in trouble if this is not on the holiday table!

4 cups chopped fresh broccoli
1 (10.75 ounce) can cream of mushroom soup
1 cup shredded Cheddar cheese
¼ cup mayonnaise
2 cups dry bread crumbs
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Put broccoli in a large microwave-safe bowl with a small amount of water in the bottom; cook in microwave until tender, about 5 minutes. Drain liquid from bowl. Stir mushroom soup, Cheddar cheese, and mayonnaise with the broccoli until evenly mixed; pour into prepared casserole dish.
  • Mix bread crumbs and melted butter together in a separate bowl; spread evenly over the broccoli mixture.
  • Bake in preheated oven until the surface is bubbling, 20 to 30 minutes.
