2 tablespoons olive oil
1 tablespoon butter
1 large onion (chopped)
4 garlic cloves (minced)
1 teaspoon ground cumin
1 teaspoon turmeric
1 inch fresh ginger (peeled and grated)
1 teaspoon garam masala
1 tablespoon tomato paste
¼ cup vegitable stock (or chicken stock)
a good handful of fresh cilantro (chopped)
14 oz fresh spinach (washed)
salt and pepper (to taste)

Steps:

  • Heat the oil & butter on medium-high heat in a large, nonstick frying pan. Add the chopped onion and fry until it starts to brown.
  • Add the minced garlic and cook another minute. Add the ginger and cook another minute.
  • Add the cumin, turmeric, garam masala, and tomato paste. Stir to combine. Slowly stir in the stock, followed by the cilantro.
  • Add the spinach cook until it wilts season to taste.

1½ tablespoons oil
½ teaspoon cumin seeds
1 medium onion ((½ cup fine chopped))
1 to 2 green chilies
1 tablespoon ginger garlic ((½ tbsp ginger ½ tbsp garlic, or 1 tsp paste))
½ teaspoon salt ((adjust to taste))
⅛ teaspoon turmeric
1½ tablespoon besan ((gram flour) (substitute 4 tbsps almond meal or 6 tbsps fresh/frozen coconut))
¾ teaspoon garam masala ((adjust to taste))
1¼ cup water ((more if needed))
½ to ¾ tablespoon kasuri methi ((dried fenugreek leaves, adjust to taste))
1 to 1½ tablespoon lemon juice ((for serving))
¾ tablespoon ghee (or 1 tbsp butter or oil)
2 to 3 garlic cloves ((sliced))
1 to 2 dried red chilies ((broken))
⅛ teaspoon hing ((asafoetida))

Easy Potato and Spinach Curry image

This is an easy curry recipe. You can eat it with rice, or you can use it as a samosa stuffing. After you make it, let the flavors marry a bit before eating.

3 lbs potatoes, peeled and diced
1/4 cup oil
2 teaspoons black mustard seeds
1 teaspoon cumin seed
1 -2 teaspoon minced garlic
10 ounces chopped spinach
1/2 teaspoon turmeric
1 -1 1/2 teaspoon cayenne powder
2 teaspoons salt
1 1/2 teaspoons curry powder
1/2 teaspoon garam masala
2 teaspoons lemon juice

Steps:

  • Steam or boil the potatoes in salted water until very tender.
  • Drain and set aside.
  • In a large dutch oven put the oil, mustard seeds, and cumin seeds.
  • Heat over high heat until the mustard seeds have popped for a few seconds.
  • Quickly stir in the garlic.
  • Reduce heat to medium.
  • Add the spinach (fresh or frozen) and stir-fry until tender, adding a couple Tablespoons of water if needed.
  • If the spinach is still half frozen, that doesn't matter, just add it anyway.
  • Once the spinach is cooked, stir in the turmeric, cayenne, salt, curry powder and garam masala.
  • When everything is well blended, add the cooked potatoes and mix until the spinach mixture is evenly distributed with the potatoes.
  • Turn off heat and sprinkle with lemon juice.
  • Gentle stir.
  • Instead of spinach, you can also make this with watercress or fenugreek (methi) leaves.

10 ounces frozen chopped spinach
15 ounces diced tomatoes
2 diced onions
2 minced serrano chilies
1 teaspoon cayenne powder
1/4 teaspoon turmeric
1/4 teaspoon tamarind paste
1/2-1 cup water
1 -1 1/2 teaspoon salt
2 tablespoons oil
1 teaspoon channa dal
1 teaspoon black mustard seeds
1 teaspoon Urad Dal (split white)
1/2 teaspoon cumin seed
1/8 teaspoon methi seeds
1/4 teaspoon hing
1/4 teaspoon ginger powder
16 curry leaves

Steps:

  • Put the first eight ingredients in a large saucepan or a small dutch oven.
  • In the summer you may use fresh tomatoes.
  • Bring mixture to a boil, reduce heat, and simmer until the onions are very tender and most of the liquid has evaporated.
  • Add more water if needed.
  • Stir in salt.
  • In a small frying pan put the oil, chana dal, black mustard seeds, urad dal, cumin seeds and methi {fenugreek) seeds and heat over high heat.
  • Once the mustard seeds have started popping AND the dals are light brown, quickly stir in the hing, ginger powder and curry leaves.
  • Immediately add the spices to the spinach and stir to blend.
  • Serve with plain boiled rice.
