2 cans (10 oz each) Old El Paso™ red enchilada sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 package (8.2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.
  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1/2 cup of the enchilada sauce and the chiles.
  • Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread 1/4 cup beef mixture down center of each tortilla; sprinkle with 1 tablespoon cheese. Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese.
  • Bake 20 to 25 minutes or until hot and bubbly. Let stand 5 minutes before serving.

¼ cup chopped onion
2 cups shredded Cheddar cheese, divided
½ cup sour cream
1 tablespoon taco seasoning
1 pinch salt and ground black pepper to taste
2 ½ cups red enchilada sauce
1 ½ teaspoons chili powder
cooking spray
1 (10 ounce) package flour tortillas
1 (15 ounce) can black beans, rinsed and drained
1 (6 ounce) can sliced black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
  • Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. Spoon any leftover sauce, black beans, and olives over the tortillas. Sprinkle remaining cheese over the top.
  • Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
12 large flour tortillas
1 (16 ounce) can refried beans
1 (11 ounce) can canned corn niblets
cheddar cheese or colby-monterey jack cheese
2 (10 ounce) cans red enchilada sauce
olive (optional)
salsa (optional)
cilantro (optional)
green onion (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook the ground beef in a skillet until brown.
  • Add the taco seasoning and water (according to package instructions) and cook until beef is well coated, and sauce is thickened.
  • Pour a bit of the enchilada sauce in the bottom of a 9x13in pan and spread evenly.
  • Set up an assembly line: Tortillas, refried beans, taco meat, corn, any of the above optional ingredients, and lastly cheese.
  • Assemble enchiladas: Smear a line of refried beans from the top of the tortilla to the bottom, then top beans with the remaining assembly line items.
  • Fold in the sides of the tortilla to close the enchilada, then place in pan, side by side, until pan is full (pan should hold 6 enchiladas).
  • Top each enchilada with enchilada sauce, then cover with cheese, and optional ingredients, if desired.
  • Place assembled enciladas into the oven and heat through.
  • Repeat process to make the next batch.

These easy enchiladas are my husband's favorite recipe of mine. Because of the many different options, it is very versatile.

1 lb ground beef or 1 lb boneless skinless chicken breast
1/4 cup chopped onion
1 teaspoon garlic powder (I prefer fresh minced)
1 tablespoon Worcestershire sauce
1 (8 ounce) can tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder (more or less for your taste)
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese (I like the jack or cheddar combos)
1 (10 ounce) can enchilada sauce (I prefer the green sauce)
olive (optional)
12 corn tortillas
oil

Steps:

  • If using chicken, boil chicken in water.
  • Then rinse and shred with fork.
  • Add onion and garlic.
  • If using ground beef, brown with onion and garlic, drain.
  • Add next 7 ingredients (worcestershire sauce through black pepper).
  • In another skillet, heat oil.
  • Add tortillas, one at a time, for 10 seconds on each side.
  • Drain on paper towel.
  • In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  • Fill each tortilla with a spoonful of meat mixture.
  • Cheese, onions, and/or olives can be put inside each enchilada at this time, if desired.
  • Roll tortilla and place seam side down in pan.
  • Continue with remaining tortillas.
  • Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired).
  • At this time, pan may be refrigerated for several hours or overnight.
  • Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
  • Top with sour cream.
  • Enjoy!

EASY CROCK POT BEEF ENCHILADAS

This is an easy version of my easy oven baked beef enchiladas. There is probably a recipe like this, but I didn't use one and will make it often as it turned out well. It's also very easy. My hubby was hungry for this, but I wasn't going to be home, so I threw this together about 2 pm. He got home about 6 pm and said the smell was so good, he didn't take time to change clothes. I came in about 8 pm and even tho he had turned it off, it was warm and very good. Be sure not to over-cook as it will be dry and the tortillas tough on the edges. I think 4 hours would be the perfect amount of time. Serve with warm flour tortillas and butter or chips.

1 medium diced onion
1 (14 1/2 ounce) can diced tomatoes

1 1/2-2 cups grated cheese (I used mild cheddar)
1 (1 1/4 ounce) package taco seasoning (or make your own with chili, cumin, onion, and garlic powder to = 3T)
1 cup milk
10 -11 corn tortillas

Steps:

  • Brown hamburger and onion together.
  • Drain excess fat and add diced tomatoes (with juice).
  • Add chopped chilies and taco seasoning.
  • Simmer 5 minutes.
  • Spray inside of crock with cooking spray and place 4 corn tortillas in the bottom and spread 1/2 of the meat mixture.
  • Spread 1/2 the can of cheese soup on top of meat and place 3 more tortillas on top of cheese soup.
  • Pour in remaining meat mixture and place 3-4 more corn tortillas on top.
  • Spread remaining can of cheese soup on tortillas and sprinkle 1 1/2 to 2 cups shredded cheese.
  • Pour 1 cup milk evenly over top--do not stir.
  • Put on lid and cook on low up to 5 hours.

I Love to mimic things I eat at restaurants. I got this one from a Mom and Pop Mexican restaurant. It's so yummy and so simple not any spices but salt and enchilada sauce. Red or Green sauce, either will do. Save 1/2 of the meat in freezer for a future dinner.

3 lbs lean pork or 3 lbs beef roast
1 teaspoon salt
2 cups shredded cheddar cheese or 2 cups monterey jack cheese

28 ounces red enchilada sauce or 28 ounces green enchilada sauce

Steps:

  • Put the meat and the salt in a crock pot with lid, for approximately 4 to 5 hours on High, then put it on low for 1 hour. Meat should be falling apart. If you have a bone in the meat it should come off the bone, without a problem.
  • Separate the meat with your fingers. Then toss it like you are tossing a salad kinda. Using your fingers to find thick pieces of meat you might of missed. Grind them in between your fingers separating each individual piece of meat. Get all of the fat out of the meat.
  • Heat up the flour tortillas in microwave for 1 minute to soften.
  • Roll approximately 1/2 cup meat and sprinkle with cheese in each tortilla lining them up vertically in a 9x13 baking pan.
  • When you have all your tortillas you want rolled. Pour the enchilada sauce over the top of the pan of wrapped tortillas.
  • Sprinkle the extra cheese over the top.
  • Bake at 375°F until sauce is bubbling.
  • Let sit out side the oven for approx 5 minutes.
  • Put remaining ingredients in freezer for up to 2 weeks.

1 pkg soft flour tortillas large
1 can(s) any style enchilada sauce
1 onion chopped
1 pkg taco seasoning mix
1 pkg sharp chedder or any chedder cheese

Steps:

  • 1. Brown ground beef, drain
  • 2. add chopped onion and taco seasoning mix
  • 3. pour enchilada sauce in bowl. dip tortilla in the sauce.
  • 4. fill tortilla with ground beef mixture and roll. Place in lightly sprayed baking pan.
  • 5. Cover with foil, or if you like your tortillas a little crispy, leave uncovered. Bake at 350 for 30 minutes.
  • 6. Uncover, spread grated cheese over top of Enchiladas. Place back in oven until cheese is melted.
  • 7. Garnish with any of your favorite things from black olives, lettuce, tomato, Salsa and enjoy!

1 pound Ground Beef 85/15
Salt And Pepper
1/4 cups Diced Onion
2- 1/4 ounces, weight Sliced Black Olives (Or Whole Olives Halved)
1 teaspoon Christopher Ranch Crushed Garlic (Or 2 Fresh Cloves, Minced)
8 ounces, fluid La Victoria Enchilada Sauce Medium (See Notes)
4 ounces, fluid Del Monte Tomato Sauce (See Notes)
1/2 teaspoons Mexican Oregano
1/4 teaspoons Black Pepper
1/4 teaspoons Red Pepper Flakes (optional)
1- 1/2 cup Sharp Cheddar Cheese, Shredded And Divided
2 Tablespoons Chopped Cilantro, For Garnish

Steps:

  • Preheat oven to 350ºF. Spray cooking spray in a baking pan big enough to hold all the halved peppers lying flat cut side up. Set aside.
  • Cut bell peppers in half lengthwise (down through the stem, or just beside the stem). Remove seeds and membranes. Put peppers in a microwaveable dish and splash with a tablespoon of water. Cover tightly and microwave on high for 3 minutes. Drain well, and lay the peppers out in the baking pan or casserole big enough for them to lay flat with their cut sides up.
  • Brown ground beef with onion in a large skillet. Give the meat a light sprinkle of salt and pepper while cooking. Cook until onions are translucent and water from meat has evaporated. Drain the grease.
  • While meat is cooking, drain olives and set aside 6 halves or slices to use as garnish.
  • Add garlic to cooked meat, and continue cooking for another minute. Add enchilada sauce, tomato sauce, drained olives, remaining spices, and 1 cup of the cheese to the hamburger. Stir until cheese is completely melted and mixture has thickened somewhat.
  • Divide enchilada stuffing evenly among pepper cups. Sprinkle remaining cheese over the top. If you reserved any of the olive halves/slices, put them on top of the cheese. This is just for presentation, so if you forgot to set some aside, don't worry about it.
  • Bake for 30 minutes, or until cheese on top begins to brown. Remove from oven, and sprinkle with chopped cilantro. Serve.
  • Leftovers may be frozen.
  • Notes:
  • • I stuffed both red and green bell peppers, and I like the red much better for this dish. They give it a sweetness the green does not impart. The green bell peppers have 1 less carb per serving. To improve macros, I recommend serving with some avocado slices on the side.
  • • Use any enchilada sauce that is gluten free, sugar free, and has no added tomato sauce.
  • • You'll be using only 1/2 of a small can of tomato sauce. Be sure you use one with no added sugar. You can freeze the other half in a freezer bag and save to use next time, or make 2 batches at one time and freeze the extras to be warmed and served later.

2 lbs lean ground beef or 240 g vegetarian ground beef
2 tablespoons ground cumin
1 1/2 cups hot salsa, use thick salsa (use mild or medium if you want less heat)
4 cups cheese, shredded
1 cup cilantro, coarsely chopped
3 medium flour tortillas (about 7-inch wide)
1 cup sour cream, regular or 1 cup sour cream, light
2 avocados, sliced (optional)

Steps:

  • Preheat oven to 500F and oil a 9x13" baking dish.
  • Place meat, cumin and salt in a large non-stick frying pan and cook over medium-high heat, stirring often and breaking up meat to keep it crumbly until no pink remains or veggie ground round is hot (about 5 min). - *Omit salt if using veggie ground round.*.
  • Stir in 1 cup salsa and cook until hot.
  • Stir in 1/2 of the cheese and half of the cilantro.
  • Place a tortilla on cutting board and place 3/4 cup of meat mixture down the centre, dot with 1 tbsp sour cream, and roll tightly.
  • Place in baking dish seam-side down with an open end touching the narrow side of the dish.
  • Place 3 rolls beside.
  • Fill the other half of the dish with the remaining rolls.
  • Spread tortillas with the remaining 1/2 cup of sour cream.
  • Top with remaining salsa and sprinkle with cheese.
  • Bake until cheese is golden (about 15 minute.
  • Sprinkle with remaining cilantro.
  • Serve with sliced avocados and sour cream.

This is your basic enchilada, you may take these to another level by adding in other ingredients to the ground beef, like corn, cooked rice, green bell pepper, jalapeño pepper --- you may also adjust the olives and cheese to taste ---make certain to have the ground beef filling still hot when filling the tortillas, or the enchiladas will take longer to bake and will get soggy, baking time should be no more than 20 minutes or just enough to heat up the dish --- see my recipe#76616 and recipe#168653

1 lb ground beef
1 small onion, chopped
1 -2 tablespoon fresh minced garlic
1 (1 1/4 ounce) package taco seasoning mix
1 (1 1/2 ounce) package dry enchilada mix (can use 2 packages for lots of sauce)
6 (10 inch) flour tortillas
3 cups grated Mexican blend cheese, divided (or use cheddar cheese)
1 cup sliced black olives, drained

Steps:

  • In a large skillet over medium heat cook the ground beef with onion and garlic until no longer pink; drain fat.
  • Add in the package of taco seasoning mix; cook stirring for 5 minutes.
  • Prepare the enchilada sauce according to the package directions.
  • Pour 1/4 cup of the sauce into the bottom of a greased 13 x 9-inch baking dish.
  • Place an equal amount of ground beef mixture on each tortilla, then sprinkle grated cheddar cheese.
  • Sprinkle the black olives over the top of the cheese (reserve about 1 cup cheddar cheese for the top).
  • Roll each tortilla up and place seam-side down on the sauce in the baking dish.
  • Drizzle the remaining enchilada sauce over the enchiladas.
  • Sprinkle with remaining cheddar cheese.
  • Bake for about 20 minutes (no more than 25 minutes or the enchiladas will get too soggy). Bake at 350.

2 lbs ground beef
20 corn tortillas
2 (12 ounce) cans enchilada sauce (el paso brand)
1 (3 ounce) envelope taco seasoning (el paso)
1 lb shredded cheddar cheese
3 tablespoons vegetable oil

Steps:

  • Brown beef add taco seasoning, and about 1/3 cup of enchilada sauce.
  • In a separate pan, place oil and cook tortillas one by one just for a little bit -- they need to be soft.
  • After that just roll the tortilla stuffed with beef and cheese, until you complete the 20 tortillas, and when you finish bath the tortillas with the rest of the enchilada sauce.
  • Place some more cheese on top, and place in oven for about 20 min at 350 degrees.

1 medium onion, chopped
1 can beans (I use refried but pinto or black beans works well too)
1 cup frozen corn or 1 cup Mexican-style corn
1 (4 ounce) can of sliced black olives
1 cup precooked white rice (optional)
1 (15 ounce) can enchilada sauce (I like hot)
1 can cream of mushroom soup
1 cup picante sauce
12 8 inch size corn tortillas, cut into bite-size pieces (white or yellow)
2 cups shredded cheddar cheese

Steps:

  • Brown ground beef with onions.
  • Add the beans,olives,corn, sauces and soup.
  • Mix well.
  • Simmer 10 minutes.
  • In a 9x13 pan- spread a little of the sauce mixture on bottom of pan.
  • Layer 1/2 of the torn tortillas, 1/2 of the sauce and 1/2 of cheese.
  • Repeat layers.
  • Bake in 350 degree oven for 30 minutes or until bubbly hot.
  • Serve with sour cream and chopped green onions.

1/2 cup sour cream
1 cup salsa
2 tsp chili powder
1 1/2 lb ground beef or 2 cups chopped cooked chicken
1/2 cup shredded cheese
6 flour tortillas (6"), warmed
1 tomato, chopped
1 green onion, chopped

Steps:

  • 1. Stir the soup, sour cream, salsa and chili powder in a bowl. Stir 1 cup salsa mixture, chicken or beef and cheese in a large bowl.
  • 2. Divide the chicken or beef mixture among the tortillas. Roll up the tortillas and place them seam-side up in a 9"x13" shallow baking dish. Pour the remaining salsa mixture over the filled tortillas. Cover the baking dish.
  • 3. Bake at 350°F for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.

3 cups salsa (your favorite)
16 ounces shredded cheese
15 -20 corn tortillas or 15 -20 flour tortillas

Steps:

  • Brown beef in skillet.
  • Add about 1 cup of salsa(more or less to taste) to beef and heat until salsa is warm.
  • Turn off heat!
  • Spoon meat mixture and cheese into tortillas, making sure not to over fill.
  • Roll up and place in 13x9 baking dish.
  • The enchiladas will pack together tightly.
  • Spread remaining salsa over enchiladas and sprinkle with remaining cheese.
