I came up with this recipe for chocolate milk when I had extra dutch-process cocoa on hand and I had a craving for chocolate. You won't miss the soy lecithin, salt, and natural and artificial flavors found in storebought instant chocolate milk powders. I use organic skim milk.

1 tablespoon Dutch-processed cocoa powder
1 tablespoon sugar
16 ounces skim milk or 16 ounces soymilk

Steps:

  • Mix ingredients together in blender.
  • Blend for 5 seconds.
  • Serve and enjoy.

Evaporated Soymilk image

A great alternative to storebought evaporated milk for those who can't have dairy. It actually makes slightly over a cup, so make sure you measure before you add it!

8 ounces water
6 tablespoons better than milk soymilk powder

Steps:

  • Mix together water and soymilk powder.
  • You may want to use a wire whisk, because sometimes the powder doesn't like to dissolve.
  • Pour into a measuring cup until you have 1 cup (you can get rid of the excess).
  • Note: This recipe works for Better than Milk brand; I'm not sure about any others!
  • The secret is adding 3 times as much soymilk powder as is directed.

2 cups soy (or almond) milk
3 tbsp cocoa powder (dark cocoa powder can be used)
3 tbsp sugar
1/4 tsp vanilla extract
1/4 tsp chocolate extract (optional)

Steps:

  • Add soymilk to a small saucepan and heat over medium heat, stirring frequently with a small whisk (this will help you get maximum frothiness), until desired heat is reached. Once milk is heated through, add vanilla, sugar and chocolate, stirring continually until fully dissolved. Remove from heat, pour into mugs, and serve immediately! Tips and Tricks You may want to increase the amount of cocoa and sugar (by about 1tsp or so) if you prefer a richer flavor.
