LINDA'S CARROT CAKE image

Number Of Ingredients 9

2 cups of sugar
1 cup Wesson oil
4 eggs room temperature
2 cups of flour
2 teaspoons baking soda
2 teaspoons cinnamon
5 cups of finely grated carrots
1 cup of walnuts
raisins.

Steps:

  • Mix sugar and wesson oil add eggs one at a time beating well after each addition fold in 2 cups of flour add 2 teaspoons baking soda 2 teaspoons cinnamon beat well for one minute fold in 5 cups grated carrots, walnuts and raisins. Pour into prepared greased and floured oblong pan bake at 300 for 1 hour or until done. Cool and frost FROSTING 1 8oz cream cheese 1/2 stick of butter 1tbs milk 1 teaspoon vanilla 1 1/2 cups of confectioner sugar beat together. Frost cake.
