This is a Johnsonville recipe that takes a little extra prep time but is well worth the effort. Give this one a shot for a holiday or special breakfast/brunch occassion.

2 (12 ounce) packages johnsonville* original breakfast sausage links
9 eggs
3 cups milk
1 1/2 teaspoons ground mustard
1 teaspoon salt (optional)
2 (20 ounce) packages refriderated shredded hash browns
2 cups shredded cheddar cheese
1/2 cup diced sweet red pepper
1/3 cup thinly sliced green onion
2 cups salsa (optional) or 2 cups picante sauce (optional)

Steps:

  • Place sausage on a 15in. x 10in. x 1in. baking pan.
  • Bake at 375 degrees F for 15-20 minutes or until sausage is no longer pink, turning once, drain and slice into quarter inch coins.
  • In a large bowl, combine the eggs, milk, mustard, salt and pepper.
  • Add the hash browns, sausage, cheese, sweet red pepper and green onions; mix well.
  • Pour into a greased 13in. x 9in. x 2in. baking dish.
  • Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking.
  • Bake, uncoverered, at 350 degrees F for 65-70 minutes or until set and golden brown.
  • Let stand for 10 minutes before serving.
  • Serve with salsa or picante sauce if desired.

3lbs. bacon ends and pieces--diced ham also if wanted
1 casing,4by 20 inches,approx

1t. onion powder
1 1/2 tsp. black pepper
1 1/4 garlic powder

  • ube bread--beat eggs--dice and fry bacon,not crisp,drain--dice ham if used--beat seasonings into eggs,then pour over bacon and bread.--mix well,stuff into casing, not too tight,to length of roaster. -tie end. prick about 6 times with table fork. bake in roaster in 2 inches of water,covered,for 1 1/2 hrs at 350 degrees-- cool before cutting--store in frig

This is the traditional family recipe from my grandmother. Although when I made it, I added a little easter ham in it as well for some extra flavor. This recipe is very very tasty, but not the most figure friendly dish. This is a large recipe which is freezable. I froze about 1/2 the recipe for a few months later and it still tasted just as good.

3 cups flour
1/2 teaspoon salt
5 tablespoons shortening
2 eggs
3/4 cup ice water (added as needed to form crust)
1 1/2 lbs Italian sausage (cooked and cooled)
1 lb basket cheese
9 eggs
1/2 cup grated parmesan cheese
1 tablespoon sausage pan dripping

Steps:

  • Preheat oven to 350.
  • Prepare crust as you would for any pie. Divide the pastry into 2 balls. Roll out one ball of pastry and put into a 9in pie plate. Set other ball of dough aside until filling is done.
  • Cut the basket cheese into about 1/2in squares and put into a large mixing bowl with cooked and cooled sausage. Beat the 9 eggs, sausage grease and parmesan cheese until combined. Mix the egg mixture into the sausage and cheese mixture until well combined. Pour into the pie plate.
  • Roll out other dough ball the was set aside and put it on top the sausgae egg mixture and close the edges with a fork.
  • Bake at 350 for about an hour and the crust is golden brown.

Our Grand Darlings are split between two homes on the weekends and during the holidays so we celebrated Easter last weekend on April Fools Day with Ham and all the trimmings. Therefore, today, Easter Sunday, I decided to make Easter Sausage with an ensemble of added goodies to make it special. My Peter said it was "magnificent." I simply said "thank you." Enjoy!

13 1/4 ounces whole wheat penne
8 ounces kielbasa (fresh, homemade and blessed by a priest or clergy)
30 ounces black beans (2 cans, rinsed)
30 ounces great northern beans (2 cans, rinsed)
1 cup spinach (finely chopped)
8 ounces mushrooms (cleaned and sliced)
1 small yellow zucchini (sliced)
1 small green zucchini (sliced)
2 teaspoons pesto sauce (tomato)
1 teaspoon black beans in garlic sauce (from an oriental market)
26 ounces spaghetti sauce (Hunts Zesty and Spicy)

Steps:

  • Cook pasta according to package directions (approximately 10 minutes) then drain. Meanwhile cook the sausage covered in 1/2 inch water in a non stick fry pan on high until done (approximately 10 minutes). Cool, halve lengthwise and slice very thin. In large bowl combine all ingredients and mix well. When ready to serve, placed about 12 ounces in a bowl (I use salad plates) and microwave on high for 90 seconds. Top with Parmesan cheese if desired or extra tomato sauce and a dash of basil. Enjoy!
