2 cups all-purpose flour
2/3 cup plus 1/4 cup sugar, divided
3 teaspoons baking powder
1 teaspoon salt
1/2 cup cold butter
1 cup 2% milk
2 medium tart apples, peeled and chopped
1-1/2 cups orange juice
1/2 cup honey
2 tablespoons butter, melted
1 teaspoon ground cinnamon
1-1/3 cups sour cream
1/4 cup confectioners' sugar

Steps:

  • In a small bowl, combine the flour, 2/3 cup sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Spread into the bottom of a greased 4- or 5-qt. slow cooker; sprinkle apples over batter., In a small bowl, combine orange juice, honey, melted butter, cinnamon and the remaining 1/4 cup sugar; pour over apples. Cover and cook on high 2-3 hours, until apples are tender., In a small bowl, combine sour cream and confectioners' sugar. Serve with warm pudding cake.

The batter for the cake goes on the bottom of the crock pot and actually rises up to make a soft, fluffy cake. The pudding portion appears when you scoop out the cake and apples.

2 cups all purpose flour
2/3 cup plus 1/4 cup sugar (divided)
3 teaspoons baking powder
1 teaspoon salt
1/2 cup butter (cold)
1 cup milk
4 apples (I used Gala Apples, peeled and diced)
1 1/2 cups orange juice
1/2 cup honey or light brown sugar
2 Tablespoons butter (melted)
1 Teaspoon cinnamon

Steps:

  • Combine the flour,2/3 cup sugar, baking powder and salt in a large bowl. Cut the butter into the mixture until you have coarse crumbs.
  • Stir the milk into the crumbs just until moistened.
  • Grease the bottom and sides of a 4 or 5 qt crock pot. Spoon the batter into the bottom of the crock pot and spread out evenly. Place the diced apples over the batter evenly.
  • In a medium size bowl, whisk together the orange juice, honey,melted butter , remaining sugar and cinnamon. Pour over the apples.
  • Place a clean kitchen towel over the opening of the crock pot, place the lid on. This keeps condensation from the lid from going into the crock pot. Set the crock pot on high and cook 2 to 3 hours until apples are tender.
  • Serve warm.

1 1/2 c. apple cider or apple juice
1 T. fresh lemon juice
1/3 c. honey
1/4 c. granulated sugar
2 T. butter, melted
1 tsp. ground cinnamon
whipped cream {optional}

Steps:

  • CAKE BATTER: In a mixing bowl, combine flour 2/3 cup sugar, baking powder, salt, and 1/8 teaspoon cinnamon. Cut butter in with a pastry blender, two knives, or your fingers until mixture resembles coarse crumbs. Stir in milk until just moistened. Spray a 4-quart or 5-quart slow cooker with nonstick cooking spray. Spread batter into the bottom of the slow cooker; sprinkle chopped apples evenly over batter. PUDDING MIXTURE: In a small bowl, combine apple cider, honey, melted butter, 1/4 cup sugar, and 1 teaspoon cinnamon. Pour over apples and cake batter. Do not stir. 1 (20 ounce) can apple pie filling
1/2 cup dried cherries, dried cranberries or 1/2 cup raisins
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons butter, melted
1/2 cup chopped walnuts, toasted
1 1/4 cups apple juice
1/3 cup packed brown sugar
1 tablespoon butter

Steps:

  • Lightly coat a 3-1/2- or 4-quart slow cooker with cooking spray; set aside. In a small saucepan bring apple pie filling to boiling. Stir in cherries. Transfer apple mixture to prepared cooker.
