3/4 c olive oil, extra-virgin variety
3 Tbsp red wine
2 medium chipotle peppers in adobo s
2 Tbsp fresh clover honey
2 Tbsp lime juice, freshly squeezed
1 Tbsp rice wine vinegar
2 clove garlic, minced
1 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp salt, kosher variety, to taste
1/2 tsp ground fennel
1 - 2 pinch white pepper, freshly ground

Steps:

  • 1. PREP/PREPARE
  • 2. You will need a blender (or a simple whisk), a bowl, and a glass, or other non-reactive storage container to make this recipe.
  • 3. I have another way to mix this dressing that will save you messing up a bowl, and whisk. Place the ingredients into a pint mason jar, seal, and then shake to mix. Easy/Peasy... And no mess to clean up.
  • 4. Chilpotle Peppers in Adobo Sauce I you are like me, you usually get these peppers in a can, and most of the time you do not use all of them. Well, the solution is mash them up with the adobo sauce and freeze them. There are lots of good brands out there, one of my favorites is San Marcos.
  • 5. Because this recipe does not contain any preservatives, it should be refrigerated. But, since the olive oil will thicken in the fridge, you should remove it and allow to come to room temperature before using, about 30 minutes.
  • 6. How Long Will It Last? If kept tightly sealed and refrigerated, it should last 2 - 3 weeks, before the flavors begin to diminish.
  • 7. Gather your ingredients (mise en place).
  • 8. Add all the ingredients to a bowl, or pint-sized mason jar. Whisk or shake, then place into the fridge until needed.
  • 9. PLATE/PRESENT
  • 10. With its South-of-the-Border flavors, it works great on salads, chicken; even fish. Enjoy.

Making your own is simple and allows you to customize the seasonings to suit whatever meal you are preparing. The amounts given make about 1/4 cup and can be expanded infinitely for larger salads. It can be made several days ahead and kept in the fridge. Sorry about the slightly odd way of putting the ingredients for the creamy dressing variations. 3 tablespoons oil (I prefer extra-virgin olive oil)
2 tablespoons vinegar (white, cider, wine, ..., not balsamic)
salt
black pepper (I prefer fresh-ground)
basic vinaigrette (use EVOO and red wine vinegar)
1/2 teaspoon minced garlic
1/2 teaspoon italian seasoning
1 pinch crushed red pepper flakes (optional)
basic vinaigrette (use canola or corn oil and cider vinegar)
1 tablespoon crumbled bacon
1/2 tablespoon finely minced onion
1 pinch celery seed (optional)
1/4 teaspoon prepared mustard (optional)
1 -3 teaspoon brown sugar or 1 -3 teaspoon another sweetener, to taste
italian vinaigrette
1 teaspoon prepared mustard (I recommend Dijon or spicy brown)

1 pinch italian seasoning (optional)

Steps:

  • Shake all ingredients for your chosen variation together in a tightly-lidded container OR whisk together in a small bowl.
  • Let stand 10 minutes to rehydrate dried herbs and blend flavors.
  • Shake again then dress salad as desired.
  • Note -- I recommend the lemon dressing on spinach.
  • Note -- I recommend the Bacon Dressing, Mustard Dressing, and Balsamic Vinaigrette on strong greens such as escarole, curly endive, and dandelion greens.
  • Note -- The sweeter version of the mustard dressing is great for a vinegar coleslaw if you discover that you have accidentally gotten one of those occasional cabbages that are a touch on the bitter side.
  • Note -- feel free to play with other seasonings, more complex blends, flavored oils, and flavored vinegars. Once you've learned the technique you can customize your salad dressing to suit just about any meal.

4 tablespoons red-wine vinegar
2 tablespoons fresh lemon juice

1 clove garlic, peeled and slightly crushed
3/4 teaspoon freshly ground black pepper

Steps:

  • Chop thyme leaves to release the flavor. In a small bowl, combine remaining ingredients. Add chopped thyme; whisk well.
