SAVORY PLUM SAUCE image

Yield 2 cups

Number Of Ingredients 7

One tart apple, peeled and chopped into large pieces
A half-pound of prune plums, cut in half and pitted
A half-pound of peaches, pitted and chopped into large pieces
A two-inch piece of fresh ginger, peeled and chopped roughly
A Serrano chili, seeds removed from one half and chopped into quarters
2/3 cup white sugar
1/3 cup rice wine vinegar

Steps:

  • Put the apple in a large saucepan with a little water. Let it cook for about 5 minutes, or until it is soft. Add the remaining ingredients and a little salt. Let simmer on low heat for an hour. Remove from the heat and let cool to room temperature. Puree the sauce in a food processer. Taste for sweet (add more sugar) or sour (add more vinegar). Pour into a glass jar and efrigerate for a day or two before using.
