DAD'S DOWN HOME CORNBREAD AND JALAPENO MEATLOAF



Dad's Down Home Cornbread and Jalapeno Meatloaf image

A savory, moist homestyle meatloaf that includes cornbread crumbs, corn, jalapenos, pepperjack cheese, onion, garlic, and more. This is a mild, yummy version that nicely balances the ingredients -- you can easily fire it up and customize the amounts and ingredients to suit your taste.

1 ½ pounds ground beef
½ pound ground pork
¾ cup canned whole kernel corn
½ cup crumbled cornbread
½ cup sour cream
½ cup shredded pepperjack cheese
½ cup finely chopped onion
¼ cup milk
1 egg, lightly beaten
3 fresh jalapeno peppers, seeded and minced
2 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Mix the ground beef and ground pork in a large bowl. In a separate bowl, mix the corn, cornbread, sour cream, pepperjack cheese, onion, milk, egg, jalapeno peppers, garlic, kosher salt, and pepper. Gently mix the corn mixture into the meat mixture. Form into a rounded loaf shape, and place in the prepared baking dish
  • Bake 1 hour in the preheated oven, to a minimum internal temperature of 160 degrees F (72 degrees C). Loosely cover with aluminum foil during the last 15 minutes of cook time if the loaf is overly brown.

This is another easy recipe! It is always appreciated! I sometimes give a little jar with honey or my home made pear honey, and always a jar of home made jam or jelly. This recipe is great for anyone, but seems like all the single guys like it the best!

JARS
15 pint jars (widemouth are best)
CORNBREAD MIX
12 1/2 c sifted all-purpose flour
12 1/2 c yellow cornmeal
1 1/3 c baking powder
3 1/3 c sugar
3 1/4 Tbsp salt

Steps:

  • 1. In large bowl: Mix all ingredients together well.
  • 2. Spoon 2 cups of mixture into dry sterilized jars. Wipe the rim of the jars. Place lids and rings.
  • 3. Make the following recipe cards: Preheat oven to 425 degrees. Down Home Cornbread: 1 jar cornbread mix 1 large egg 1 cup milk 1/4 cup Crisco shortening Put all ingredients in a bowl and mix together well with a fork or a whisk until smooth (for about 1 minute...do not over beat). Grease a 8-inch square pan. Pour in the batter. Place in oven. Bake at 425 degrees for 20 to 25 minutes.
  • 4. Cut 6-8 inch circles from cloth. Place a circle on each jar. Secure cloth in place with a rubber band. Cover the rubber band with a pretty ribbon, put recipe card on the ribbon and tie a pretty bow.

2 c white cornmeal
1 1/2 c all purpose flour
1 tsp salt
2 tsp baking powder
1 tsp baking soda
2 large eggs
4 Tbsp bacon drippings
2 c butter milk

Steps:

  • 1. Pre-heat oven to 425 degrees.
  • 2. My mother in-law used a huge cast iron skillet but I used a 13x9 baking dish. What ever you have on hand. Put bacon drippings in pan and place pan in oven. You can substitute vegetable oil or butter for the bacon drippings but everything is better with bacon. ;)
  • 3. stir the dry ingredients together in a large bowl.
  • 4. Beat eggs then add them to buttermilk.
  • 5. Add egg mixture to dry ingredients and stir just till smooth, don't over do it.
  • 6. Pull hot pan out of oven and pour hot bacon drippings into mixture. stir till mixed.
  • 7. Immediately pour mixture into hot pan and bake for about 40 minutes or until the middle springs back when pressed.
  • 8. Slather on the butter and enjoy! :D

1 c all purpose flour
1 c yellow cornmeal
1 Tbsp baking powder
1 Tbsp sugar
1/2 tsp salt
1 c milk
1/4 c crisco oil
1 egg

Steps:

  • 1. Preheat the oven to 425, and spray a 8x8 baking pan with non stick spray. (I use Pam with butter or olive oil)
  • 2. In a large mixing bowl, mix all your dry ingredients together. In another bowl, whisk the egg, milk, and oil together
  • 3. Make a 'well' in your dry ingredients and pour in the egg mixture and stir until completely incorporated.
  • 4. Pour into your prepared pan and bake at 425 for 25 minutes
