4 large onions, thinly sliced and separated into rings
1/2 cup butter, melted
1 tablespoon all-purpose flour
1 (10 3/4 ounce) can beef broth, undiluted
1 (10 3/4 ounce) can chicken broth, undiluted
2 cups water
1/4 cup dry white wine
1/8-1/4 teaspoon pepper
French bread, toasted
8 slices mozzarella cheese or 8 slices provolone cheese
1/2 cup grated parmesan cheese

Steps:

  • Sauté onion in butter in Dutch oven until tender. Blend in flour, stirring until smooth. Gradually add chicken broth, beef broth, water, and wine. Bring to a boil; reduce heat and simmer 15 minutes. Add pepper.
  • place 8 ovenproof serving bowls on a baking sheet. Place 1 bread slice in each bowl, ladle soup over bread. Top with 1 cheese slice; sprinkle with parmesan. Broil 8 inches from heat until cheese melts.

My mother gave me a crock pot cookbook a few years ago. The cook book has been lost somehow (!) But I remember this recipe by heart. Its simple and great for fall and winter. My husband requests it all the time when the weather cools, and it has become our traditional Christmas Eve meal. As with most recipes, I make my own condensed cream soups, but for the ingredient list I put it in as canned.

2 lbs baking potatoes, peeled and cut into 1/2-inch cubes (or not)
2 (10 3/4 ounce) cans condensed cream of mushroom soup
1 1/2 cups finely chopped green onions, divided
1 teaspoon garlic powder (I use a bit more)
1 dash ground red pepper
1 1/2 cups shredded sharp cheddar cheese (I use about 2 cups)
1 cup sour cream
1 cup milk
black pepper

Steps:

  • In crock pot combine potatoes, cream of mushroom, 1 cup of green onions and spices. Mix up well.
  • Cook on low 8 hours.
  • Add in cheese, sour cream and milk, stir until cheese melts.
  • Add the remaining green onions before serving.
  • We like this served with a garlic Tuscan bread.
  • Variation:.
  • You can greatly differ the taste by experimenting with different flavors of cheddar cheese. We like Vermont extra sharp the best, but have also tried cheddar bacon and cheddar garlic.

4 cups cauliflower, pieces
2 cups water
1 (8 ounce) pachage cream cheese, cubed
5 ounces American cheese spread
1/4 lb dried beef, shredded
1/2 cup potato flakes

Steps:

  • Combine cauliflower and water in a large saucepan, bring to a boil.
  • Heat slow cooker on low, add cream cheese and cheese spread.
  • Pour in cauliflower and water, stir to be sure the cheese is dissolved and mixed through the cauliflower.
  • Add`dried beef and potato flakes, and mix well.
  • Cover, and cook on low for 2-3 hours, or over the stovetop until cauliflower is tender and done.

  • Bring water and milk to boil in large saucepan.
  • Stir in Macaroni and vegetable blend. Return to boil; simmer on medium-low heat 12 to 14 min. or until macaroni is tender.
