This is a delicious bread with golden raisins and cranberries. It's perfect for Thanksgiving or any special holiday.

2 cups sifted all-purpose flour
1 cup white sugar
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
¼ cup butter
1 egg, beaten
1 teaspoon orange zest
¾ cup orange juice
1 ½ cups golden raisins
1 ½ cups chopped cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x5x3 inch loaf pan.
  • Whisk together the flour, sugar, baking powder, salt and baking soda.
  • Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice; stir to mix and fold in raisins and cranberries.
  • Pour into loaf pan and bake for 70 minutes or until toothpick inserted comes out clean. Remove from pan; cool on wire rack.

1/3 cup orange juice
Zest of one large orange
2/3 cup buttermilk*
6 tablespoons unsalted butter, melted
1 large egg
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon iodized salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cups (6 ounces) coarsely chopped fresh or frozen cranberries**
1/2 cup chopped walnuts or pecans (optional)
Loaf Pan**

Steps:

  • Preheat oven to 375° Fahrenheit. Grease a 9×5-inch loaf pan with butter or shortening.
  • In a small bowl, stir together the orange juice, orange zest, buttermilk*, butter, and egg.
  • In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda. Stir in the liquid ingredients, mixing until just combined and dry streaks still remain.
  • Stir in the chopped cranberries and nuts, if using.
  • Pour mixture into the prepared loaf pan*** and level using a spatula. Bake for 25 minutes, then reduce heat to 350° Fahrenheit and bake for an additional 45-50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack and let cool at least an additional 30 minutes before slicing.

2 cups unbleached all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sugar
1 large egg (well beaten)
2 tablespoon butter or margarine (melted + plus enough to grease the pan)
2 tablespoon hot water
1/2 cup orange juice
1/4 cup orange zest
1 cup fresh cranberries

Steps:

  • Preheat the oven to 325 F. degrees
  • Lightly grease non stick bread pan with butter.
  • Sift together dry ingredients into a large bowl.
  • In a separate small bowl mix the egg, butter, hot water, orange juice and orange zest: stir until moistened.
  • Mix the wet ingredients into the dry ingredients until just moistened.
  • Fold in cranberries.
  • Spread into a large greased loaf pan.
  • Bake 60 minutes in a preheated 325 degrees oven.
  • Cool completely on a wire cooling rack in the pan before slicing.

2 cups all-purpose flour (spooned and leveled), plus more for pan
1 cup packed light-brown sugar
1 1/2 teaspoons baking powder

1 large egg, lightly beaten
3/4 cup whole milk
1 bag (12 ounces) cranberries
1 tablespoon turbinado sugar, for topping (optional)
