LEMON-DILL PESTO



Lemon-Dill Pesto image

This is a Scandinavian twist on basil pesto. You may substitute this for basil pesto and it's particularly good on grilled fish or chicken.

Number Of Ingredients 6

5 tablespoons walnuts
5 garlic cloves
6 ounces fresh dill, roughly chopped (2-3 cups)
1 large lemon, zest of
1 teaspoon salt
3/4-1 cup rapeseed oil or 3/4-1 cup canola oil

Steps:

  • Place walnuts and garlic in a food processor and process until finely chopped.
  • Add the dill, lemon zest, and salt. Process until you have a thick paste.
  • Continue to process (pulse if your food processor can pulse) while gradually adding the oil until the pesto is the consistency of a thick tomato sauce.
  • Refrigerate until ready to use.

DILL LEMON PESTO

3 slices homemade-type white bread, torn into small pieces
2 tablespoons fresh lemon juice
3 tablespoons water
3/4 cup packed fresh dill (feathery leaves)
3/4 cup packed fresh flat-leaved parsley leaves, washed well and spun dry
2 teaspoons Dijon mustard
1/2 teaspoon freshly grated lemon zest
1/8 teaspoon sugar
1/3 cup olive oil

Steps:

  • In a bowl soak bread in lemon juice and water 10 minutes and squeeze out excess liquid between hands. In a food processor blend together bread and remaining ingredients with salt and pepper to taste until smooth. Pesto keeps, surface covered with plastic wrap, chilled, 1 week.

SAUTEED SALMON WITH DILL LEMON PESTO



Sauteed Salmon with Dill Lemon Pesto image

a 1 1/2-pound piece salmon fillet with skin
coarse salt to taste
freshly ground black pepper to taste
1 tablespoon extra-virgin olive oil
1/2 cupdill lemon pesto
1 to 2 tablespoons hot water

Steps:

  • Pat salmon dry between paper towels and sprinkle with salt and pepper. In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté salmon, skin side down, 3 minutes. Reduce heat to moderate and cook salmon 4 minutes more. Turn salmon and sauté over moderately high heat 2 minutes. Reduce heat to moderate and cook until just cooked though, about 3 minutes more.
  • In a food processor blend pesto with 1 tablespoon hot water, adding additional hot water if necessary to reach desired consistency.
  • Serve pesto over salmon.

Fresh pesto made with lemon and dill are all you need to make this halibut a crowd pleaser!
Ingredients:
2 (6 oz) halibut fillets
Olive oil
Salt and pepper
Lemon-Dill Pesto
1 cup fresh Italian parsley
1/3 cup fresh dill
1/3 cup slivered almonds, toasted
1/4 tsp salt
1/4 tsp pepper
3 Tbsp olive oil
Zest from 1 lemon
1 Tbsp lemon juice

Steps:

  • Brush halibut with a bit of olive oil, and sprinkle with salt and pepper. Grill or bake halibut at 450°F for about 20 minutes, or until flakes with a fork. Place pesto ingredients together in a mini food processor and puree until smooth. To serve, place a dollop of pesto on top of each piece of cooked halibut.
