CROCKPOT CHILI RECIPE

This easy Crockpot Chili recipe is delicious, hearty, and perfect for chilly weather! Super easy to make and perfect for loading up with all your favorite toppings!

1 pound lean ground beef
1 pound Italian sausage (or spicy Italian sausage or ground beef)
1 medium yellow onion (diced)
1 red bell pepper (seeded and chopped)
1 to 2 garlic cloves (minced)
30 ounces kidney beans (rinsed well and drained (2 15 oz cans))
15 ounces pinto beans (rinsed well and drained (1 can))
29 ounces diced tomatoes (use the entire can, juice and all)
3 ounces tomato paste
8 ounces tomato sauce
2 tablespoons Worcestershire sauce
1 cup beef broth
1 teaspoon hot sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
¼ teaspoon cayenne
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon brown sugar or granulated sugar

Steps:

  • Brown the ground beef and sausage in a large skillet over medium heat until mostly cooked through. A little pink is fine.
  • Add the diced onion, bell pepper, and garlic and stir to combine. Cooking cooking over medium heat until onion is translucent.
  • Transfer the beef mixture to a 6 quart crockpot or slow cooker.
  • Add the kidney and pinto beans.
  • Top with diced tomatoes, tomato paste, tomato sauce, Worcestershire sauce, beef broth and hot sauce.
  • Next add the seasonings (chili powder, cumin, paprika, cayenne, salt, pepper and sugar). Stir to combine
  • Place the lid on the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours, stirring occasionally.
  • Serve with desired toppings such as shredded cheese, sour cream, corn chips, tortilla chips, etc.

1 bunch fresh cilantro, stems removed
1 ½ pounds boneless chicken thighs
4 cups water
1 onion, quartered
2 cloves garlic, peeled
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon ground black pepper
1 teaspoon salt
cooking spray
1 pound fresh tomatillos, husks removed, halved
½ jalapeno pepper, seeded and minced
1 tablespoon canola oil
1 (4 ounce) can chopped green chilies
2 tablespoons white vinegar
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon honey
1 tablespoon ground black pepper
2 teaspoons kosher salt
1 cup great Northern beans, rinsed and drained

Steps:

  • Remove stems from cilantro and tie together; save leaves for sauce.
  • Place cilantro stems, chicken thighs, water, onion, and garlic into a slow cooker. Season with 1 tablespoon cumin, 1 tablespoon chili powder, 1 tablespoon pepper, and 1 teaspoon salt.
  • Cook on Low until chicken is no longer pink in the centers and juices run clear, 8 to 10 hours. Transfer chicken to a plate and shred using 2 forks. Set aside. Reserve 1 to 1 1/2 cups cooking liquid. Let onion and garlic cool slightly, about 5 minutes. Dice and set aside.
  • Preheat the oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray.
  • Place tomatillos cut-side down and jalapeno onto the prepared baking sheet. Drizzle with canola oil.
  • Roast in the preheated oven for 25 minutes.
  • Remove from the oven and wrap jalapeno pepper in aluminum foil to let 'sweat' for about 10 minutes. Remove skin from jalapeno.
  • Transfer tomatillos, jalapeno, reserved cilantro leaves, green chiles, vinegar, cumin, chili powder, honey, pepper, and salt to a food processor or blender. Mix sauce until well combined.
  • Pour tomatillo sauce into a large pot and add shredded chicken, diced onion and garlic, and beans. Add reserved cooking liquid. Let simmer over medium-low heat for 15 minutes. Serve.

8 lbs coarse ground beef
3 medium onions, chopped fine
2 green bell peppers, seeded and chopped fine
3 celery ribs, chopped fine
1 (6 ounce) can tomato paste
2 (16 ounce) cans stewed tomatoes
2 (15 ounce) cans tomato sauce
3 garlic cloves, chopped
2 (3 ounce) bottles chili powder
3 tablespoons salt
1 (1 ounce) can chile salsa
1 teaspoon hot green chili pepper (canned, diced)
garlic salt
fresh coarse ground black pepper
oregano

Steps:

  • Brown ground beef in frying pan; pour off extra fat.
  • Put browned meat in bottom of crock pot; add chopped vegetables then all other ingredients.
  • Cook on low heat for 3 hours.

One of my most popular recipes and for good reason! This is the best chili I've ever tasted! Slow cooking it allows for the flavors to meld and the most tender beef. Try it tonight and see why everyone loves this! Recipe makes about 12 cups.

1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*
3 (8 oz) cans tomato sauce
1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)
Shredded cheddar cheese, (for serving)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

2 c chopped onions
1 c chopped green bell pepper
1 c chopped red bell pepper
3 clove garlic, pressed or minced
3 Tbsp chili powder
1 Tbsp dried oregano
1 Tbsp dried basil
1/2 tsp crushed red pepper
1 Tbsp ground cumin
1 Tbsp sugar
2 tsp salt
2-16 oz cans whole tomatoes, undrained
1-16 oz can diced tomatoes(spicy), undrained
1-16 oz can tomato sauce
1-6 oz can tomato paste
4-15 oz cans red kidney beans, drained and rinsed

Steps:

  • 1. Brown beef over medium heat in a large stockpot. Drain excess fat. Add onion, peppers and garlic. Stir in chili powder, organo, basil, red pepper and cumin, and mix well. Cook until onions are tender. Add sugar and salt. Stir in tomatoes, sauce, paste and beans. Bring to a boil, reduce heat and simmer at least 1 hour. Serves 16.

3 lbs steak, cut into 1 inch pieces
2 cans dark red kidney beans
2 cans black beans
1 jar chipotle chile, chopped with sauce (smoked jalapeno's)
2 bell peppers, chopped
1 large yellow onion, chopped
4 -6 cloves garlic, minced
1 can diced tomatoes (NOT italian or anything like that-just tomatoes!)
1 can baby corn, cut into 1/2 inch rounds (go ahead and gasp-it tastes good!)
cayenne pepper (optional)
salt and pepper (do a finger test)
Mexican oregano (toss in a small amount-it's really strong)

Steps:

  • Cut up your meat.
  • Put it into the crockpot.
  • Drain half the red and half the black beans and toss them in with the other cans.
  • add the onions, peppers, garlic and tomatoes-give a good stir.
  • Now add the remaining ingredients and stir well.
  • Cook on low for 8-10 hours.
  • Serve with hot corn bread.
