These Apple Streusel Cheesecake Bars are a delightful apple recipe perfect for Thanksgiving dessert. They have a buttery shortbread crust, creamy cheesecake filling and are topped with cinnamon apples and a cinnamon streusel!

1 1/2 cups (195g) all purpose flour
6 tbsp (84g) packed brown sugar
3/4 tsp ground cinnamon
1/2 cup (112g) salted butter, room temperature
4 1/4 cups (506g) chopped apples (3-4 large apples)
1 1/2 tsp all purpose flour
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
20 ounces (565g) cream cheese, room temperature
3/4 cup (168g) packed brown sugar
3 tbsp (24g) all purpose flour
1/2 cup (115g) sour cream
1 1/2 tsp vanilla extract
1 3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs, room temperature
1 large egg white, room temperature
1/2 cup (65g) all purpose flour
1/2 cup (112g) packed brown sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
4 tbsp (56g) salted butter, melted

Steps:

  • Preheat oven to 300 degrees and prepare a 9×13 inch pan with parchment paper that sticks up above the sides of the pan, so that you can remove the bars later for easy cutting.
  • 2. In a medium bowl, combine the flour, brown sugar and cinnamon.
  • 3. Cut in butter into the flour mixture with a pastry blender or fork until mixture is crumbly.
  • 4. Press evenly into the bottom of the pan and bake for 8-10 minutes. When the crust is done baking, turn the temperature up to 325 degrees.
  • 5. In another large bowl, combine the chopped apples, flour, cinnamon and nutmeg and set aside.
  • 6. To make the filling, blend the cream cheese, brown sugar and flour in a large mixer bowl on low speed until well combined and smooth. Be sure to use low speed to reduce the amount of air added to the batter. Scrape down the sides of the bowl.
  • 7. Add the sour cream, vanilla extract, cinnamon and nutmeg and mix on low speed until well combined.
  • 8. Add the eggs and egg white one at a time, mixing slowly to combine. Scrape down the sides of the bowl as needed to make sure everything is well combined.
  • 9. Pour the batter into the pan with the crust and spread evenly.
  • 10. Spread the cinnamon apples evenly over the top of the cheesecake filling.
  • 11. In another small bowl, combine the flour, brown sugar, cinnamon and nutmeg for the streusel.
  • 12. Add the melted butter and stir together until crumbly.
  • 13. Sprinkle the streusel evenly over the apples.
  • 14. Bake the bars for about 45 minutes or until the center is just set. Remove the bars from the oven and allow to cool on the counter for about 45 minutes, then refrigerate until cold and firm.
  • 15. Use the parchment paper to remove the bars from the pan and cut into bars. Serve cold. Bars are best when stored well covered in the fridge and eaten within 4-5 days.

I love cheesecake & apple pie so I thought this would be a great combination! It has everything that makes an apple pie delicious - apples, cinnamon, and a nice crumble topping plus the creamy-ness of a cheesecake!

1-1/4 cups crushed gingersnap cookies (about 25 cookies)
3 tablespoons butter, melted
FILLING:
2 packages (8 ounces each) reduced-fat cream cheese
1 package (8 ounces) fat-free cream cheese
1 cup sugar
1/4 cup fat-free milk
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
3 large eggs, lightly beaten, room temperature
2 medium tart apples, peeled and thinly sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar
2 tablespoons butter, melted

Steps:

  • In a small bowl, combine crushed cookies and butter. Press onto the bottom of a 9-in. springform pan coated with cooking spray. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheeses and sugar until smooth. Beat in the milk, flour and vanilla. Add eggs; beat on low speed just until combined. Pour 2 cups filling over crust. 15 graham crackers (or 2 cups crushed graham cracker crumbs)
3 tablespoons packed light brown sugar
1/4 teaspoon kosher salt
5 tablespoons unsalted butter, melted and cooled
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 stick unsalted butter, melted and cooled
1 tart apple, peeled, cored and diced
1 cup granulated sugar
2 tablespoons cornstarch
Pinch kosher salt
Three 8-ounce packages cream cheese, at room temperature
1 cup sour cream
3 large eggs plus 1 large egg yolk, at room temperature
2 teaspoons vanilla extract
Store-bought caramel sauce, for serving

Steps:

  • For the graham crust: Preheat the oven to 350 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and place on a baking sheet.
  • Add the graham crackers to a food processor and pulse until fine, then add the brown sugar and salt and pulse until well combined. Drizzle in the melted butter and stir until the mixture resembles damp sand. Press the crumbs into the bottom of the prepared springform pan in an even layer. Bake the crust until firm, about 10 minutes, then let cool.
  • For the apple crumb topping: Stir together the flour, brown sugar, cinnamon and salt in a medium bowl. Drizzle in the butter and stir until the mixture resembles wet sand, using your hands to form some clumps. Fold in the diced apple.
  • For the cheesecake filling: Stir together the granulated sugar, cornstarch and salt in a small bowl. Pulse together the cream cheese and sour cream in a food processor until smooth. With the processor running, add the sugar mixture 1/2 cup at a time until the mixture is smooth. Add the eggs and yolk one at a time, pulsing until well combined, then add the vanilla, scraping down the sides of the processor and giving it another pulse to make sure everything is incorporated. Pour the cheesecake filling over the top of the graham cracker crust.
  • Sprinkle the crumb topping over the filling. Bake the cheesecake until it is mostly set but still has a bit of a jiggle in the center, 60 to 70 minutes. Turn off the oven and leave the oven door slightly open for 1 hour. Remove the cheesecake from the oven and allow to cool to room temperature, about another hour, then refrigerate for 1 hour more. Run a paring knife around the outside before unmolding and slicing. Serve drizzled with the caramel sauce.

1 large egg yolk

4 cups sliced peeled tart apples
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar, divided
1 teaspoon vanilla extract
2 large eggs, lightly beaten
1 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • In a bowl, combine flour and sugar; cut in butter until crumbly. In a small bowl, combine egg yolk and vanilla; stir into flour mixture. Press onto the bottom of an ungreased 9-in. springform pan. Place pan on a baking sheet. Bake at 400° for 10-12 minutes or until set. Cool on a wire rack. Reduce heat to 350°. , Place apples in an ungreased 13x9-in. baking dish. 1/2 cup firm butter or margarine
2 packages (8 oz each) cream cheese, softened

2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
  • Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
