WE EAT THESE OFTEN IN THE SUMMER WHEN THE SQUASH ARE FRESH OFF THE VINE.I ALSO COOK EXTRA CRISPY AND DIP IN RANCH DRESSING AS A SNACK.

4 medium yellow squash
1/2 c cornmeal
1/2 c flour
1 tsp salt
1 tsp black pepper
2 tsp everglade seasoning or lowrys seasoning salt if you can't find everglade
1 c milk
canola oil for deep frying

Steps:

  • 1. Peel squash with a potato peeler(my preference)
  • 2. Slice thickness you prefer
  • 3. Put squash in milk
  • 4. Put all dry ingredients in a bowl and blend
  • 5. Put squash in dry mixture to coat then add to hot oil.
  • 6. Cook until golden brown remove and drain.

Yield Makes 4 serving.

Number Of Ingredients 13

Preparation & Cooking time from start to finish: 30 minutes or less
3 medium size Yellow Squash
1/2 cup + 1 tablespoon All-purpose Flour
2 tablespoons Cornstarch
2 teaspoon Grated Parmesan cheese.
1 teaspoon Sesame seeds
1/8 teaspoon Sesame Oil (optional)
A pinch of Paprika
1/4 teaspoon Salt
A pinch of black pepper
1/2 cup ice cold water (more if needed)
Vegetable oil (for deep frying)
(For dipping sauce I recommend Store bought Sweet Chili dipping sauce or Marinara sauce.

Steps:

  • Cut Yellow Squash crosswise into 1/8 inch thick slices, sprinkle with salt & black pepper to taste, toss in a bowl then set aside. In another bowl mix all the remaining dry Ingredients together and gradually add the cold water until you get a smooth consistency of a thick batter (like thick pancake batter)add more water if needed. Heat 1 1/2 inch oil in a 10-inch heavy skillet until it reaches 375°F. Add Yellow squash slices one by one into the thick batter; let the excess batter drip off back in the bowl. Carefully Drop it in the oil. Do the same with the rest of the yellow squash until you have enough in the skillet but do not over crowd the heavy skillet. Cook each side for 1 1/2 minutes or until golden brown. Drain the deep fried Yellow squash on a paper towel. Serve it right away with a Sweet Chili dipping sauce or Marinara sauce.
