Time 6h20m

Yield 6 to 8 servings

Number Of Ingredients 6

3/4 cup sugar
12 large egg yolks, at room temperature
One 12-ounce can evaporated milk
One 12-ounce can sweetened condensed milk
1 teaspoon vanilla extract
1 teaspoon grated lemon zest, optional

Steps:

  • Add about 2 tablespoons of the sugar to a small saucepan over low heat. Allow the sugar to melt, about 15 minutes. Gradually add a tablespoon of sugar at a time, slowly swirling it and allowing it to melt in before adding the next tablespoon. This is a long process, which needs constant attention to avoid burning. When all the sugar is completely melted, it will become a rich, dark caramel color, about 40 to 45 minutes.
  • Carefully pour the caramel into a 9-inch cake pan, coating the bottom of the pan. Allow to cool completely, about 20 minutes.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Prepare a water bath: Place a large roasting pan on the middle rack of the oven. Bring about 2 quarts of water to a boil, then carefully pour it into the roasting pan in the oven.
  • When the caramel is cool, slowly whisk together the egg yolks in a medium bowl, then add the evaporated milk, condensed milk, vanilla extract and lemon zest (if using). Whisk gently to avoid adding air into the custard. Air will cause bubbles, taking away from the smooth and dense texture.
  • Pour the custard through a fine-mesh sieve into the cake pan. Lightly tap the pan on the counter to release any air bubbles.
  • Once the oven is at 350 degrees F, carefully place the cake pan in the water bath.
  • Bake until the center of the custard is set and a toothpick inserted in the center comes out clean, about 1 hour. Remove the cake pan from the water and allow the custard to cool to room temperature. Cover and refrigerate for at least 5 hours and up to 5 days.
  • To serve, unmold the flan: Allow the flan to come to room temperature (see Cook's Note). Take a sharp paring knife and run it between the edge of the flan and the cake pan. Hold a large plate firmly over the pan and, in one smooth motion, invert the plate and pan. Carefully remove the pan.

PORTUGUESE FLAN

Categories     dessert

Yield 8 to 10 servings

Number Of Ingredients 9

1 1/2 cups sugar
1/2 cup water
8 large eggs
4 large egg yolks
1 cup plus 2 tablespoons sugar
2 teaspoons vanilla
1 quart half and half
2 teaspoons port
Violets, nasturtiums, or other edible flowers, for garnish

Steps:

  • Preheat the oven to 325 degrees. To make caramel: combine the sugar and the water in a medium saucepan. Be sure all the sugar granules are washed down from the sides of the pan (use a wet pastry brush). Cook over moderate heat, swirling the pan occasionally, until the color is golden brown and the mixture smells like caramel. This will take about 10 to 15 minutes. Pour the caramel into a 9 inch round cake pan and, holding the pan with an oven glove, swirl it around to generously coat the bottom and sides. Set aside.
  • In a large mixing bowl, gently whisk together the eggs, egg yolks, sugar, vanilla, and 2 cups of the half and half, without whisking in any air. Bring the remaining half and half and the port to a simmer in a small saucepan and begin whisking this into the egg mixture a little at a time, whisking constantly until it is all incorporated. Pour through a strainer into the prepared cake pan. Place the pan inside a large roasting pan and pour very hot tap water into the pan so that it comes halfway up the sides of the cake pan. Bake for about 1 to 1 1/4 hours, or until the center is slightly jiggly but not wavy. Cool to room temperature and then cover with plastic wrap with the plastic gently touching the top of the flan. Refrigerate for at least 3 hours and up to 4 days.
  • To unmold the custard, run a small sharp knife around the inside edges of the dish several times to loosen it. Dip the bottom briefly in a basin of very hot tap water. Invert a round platter over the dish and turn them both over together, shaking the two a little to help release the custard (or rap the bottom of the platter gently on the work surface). The caramel sauce will run out around the edges of the platter. Garnish the top of the flan with violets or other edible flowers.

ORANGE-COFFEE FLAN

Orange-Coffee Flan image

Orange zest and cinnamon give rich, deep flavor to this Latin American classic that gets a pleasant nudge of bitterness from instant espresso.

Provided by Food Network Kitchen

Categories     dessert

Time 3h20m

Yield 6 to 8 servings

Number Of Ingredients 9

3/4 cup sugar
1 wide strip orange zest, very thinly sliced
4 teaspoons instant espresso powder
5 large eggs
1 14-ounce can sweetened condensed milk
3 1/2 cups half-and-half
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Kosher salt

Steps:

  • Heat the sugar in a medium saucepan over medium heat until it begins to melt. Cook, swirling the pan but not stirring, until deep amber, about 10 minutes. Stir in the orange zest and cook 30 seconds. Pour into a 9-inch-round cake pan; tilt to coat. Let harden, about 10 minutes.
  • Preheat the oven to 350 degrees F. Dissolve the espresso powder in 1 tablespoon warm water in a large bowl. Whisk in the eggs. Add the sweetened condensed milk, half-and-half, vanilla, cinnamon and 1/8 teaspoon salt; whisk until smooth. Pour the mixture through a fine-mesh sieve into the cake pan.
  • Loosely cover the cake pan with foil (do not let the foil touch the custard). Line a roasting pan with a kitchen towel and set the cake pan on top. Transfer to the oven and fill the roasting pan with hot water, about halfway up the side of the cake pan. Bake until the flan is set but still wobbly in the center, 1 hour, 30 minutes to 1 hour, 45 minutes. Remove from the oven and let cool in the water bath, about 1 hour. Remove from the water, cover with plastic wrap and chill at least 8 hours.
  • Run a knife around the edge of the pan to loosen the flan; let sit 20 minutes. Invert the flan onto a rimmed plate and unmold, letting the caramel drip out. Cut into wedges.

VANILLA FLAN WITH BUTTERSCOTCH SAUCE

Vanilla Flan With Butterscotch Sauce image

For this recipe, simply press the brown sugar and a little salt into the bottom of the dish. As the flan cooks and cools, it will caramelize and form it's own sauce.

Time 1h

Yield 8 serving(s)

Number Of Ingredients 6

3 cups half-and-half
1 vanilla beans or 2 teaspoons vanilla extract
1/2 cup brown sugar, packed
1/2 teaspoon salt
5 eggs
1/2 cup granulated sugar

Steps:

  • Heat a medium saucepan, over medium heat, with the half and half and vanilla until steaming, about 3 minutes; remove from heat, cover, and allow to steep 15 minutes (skip this step if using vanilla extract).
  • Position rack to lower third of oven; preheat to 350 degrees F.
  • In a small bowl, combine brown sugar and 1/4 teaspoon salt, pressing with spoon to remove any lumps; dump into a 9 inch pie pan and press down in an even layer.
  • Remove vanilla bean from half and half, scrape out seeds, and return seeds to half and half; heat to steaming, about 1 or 2 minutes.
  • In a large bowl, whisk together eggs, granulated sugar, and 1/4 teaspoon salt; gradually whisk in half and half mixture until well combined (if using vanilla extract, you would add it here).
  • Pour mixture into pie plate (do not worry if some of the sugar floats up, it will eventually settle back down to the bottom.
  • Place pie plate in a deep roasting pan; fill roasting pan with enough water to come halfway up the sides of the pie plate.
  • Bake for 35 to 40 minutes until a knife inserted in center comes out clean.
  • Cool flan on wire rack for 30 minutes, cover, and cool in refrigerator at least 6 hours or overnight.
  • To serve, run a knife around edge and invert on a serving dish.

Time 1h45m

Yield 8 servings

Number Of Ingredients 9

1/3 cup sugar
2 tablespoons water
3 tablespoons butter
2 pounds Granny Smith apples, peeled, cored and coarsely chopped
1/2 cup brandy
6 eggs
1/2 cup sugar
1 teaspoon cinnamon
1 cup half-and-half

Steps:

  • Place the sugar in a saucepan, and moisten it with the water without stirring. Bring to a boil and cook until light golden brown. Immediately pour the caramel into an 8 to 9 cup mold (a cake pan will do) and swirl and tilt the mold to coat it with the caramel, including the walls.
  • Preheat the oven to 350 degrees F.
  • In a large skillet, melt the butter and let it foam. Add the apples and cook on medium low heat, covered, for 15 minutes. Add the brandy and flame it, then continue to cook, shaking the pan, for 2 minutes or so.
  • In a large bowl, whisk together the eggs, sugar and cinnamon. Stir in the half-and-half and the apples. Pour this custard into the caramel-lined mold and bake in a water bath for 50 minutes or until a knife comes out clean. Remove the flan from the oven and let cool to room temperature. Run a knife around the edge of the mold then turn the flan out onto a serving platter. Pour any caramel sauce from the mold over the flan.
