1 stick unsalted butter, melted, plus more for brushing (optional)
1 cup old-fashioned rolled oats
1 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup lowfat buttermilk
1/2 cup packed light-brown sugar
Finely grated zest of 1/2 orange
2 large eggs, room temperature
1/2 cup chopped pecans
1/2 cup chopped pitted Medjool dates (about 5)
3/4 cup old-fashioned rolled oats
1/4 cup unbleached all-purpose flour
1/4 cup packed light-brown sugar
Pinch of kosher salt
4 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • Muffins:Preheat oven to 400 degrees. Line a standard 12-cup muffin tin with baking cups, or lightly brush with butter. In a medium bowl, whisk together oats, flour, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, butter, brown sugar, orange zest, and eggs. Stir wet ingredients into dry until just combined. Fold in chopped pecans and dates.
  • Crumble:In a small bowl, combine oats, flour, brown sugar, and salt. With your hands, work in butter until large, moist clumps form.
  • Divide batter evenly among muffin cups; top with crumble. Bake until golden and tops spring back when lightly touched, about 20 minutes. Let cool 5 minutes in tin, then transfer to a wire rack and let cool completely.

1 cup pitted and chopped dates, or to taste
¼ cup cold water, or as needed
2 tablespoons white sugar
1 teaspoon vanilla extract, or more to taste
1 ⅜ cups self-rising flour
1 ½ cups margarine
1 cup oats
¾ cup white sugar

Steps:

  • Preheat oven to 355 degrees F (180 degrees C). Grease a 9-inch square baking dish.
  • Combine dates, water, 2 tablespoons sugar, and vanilla extract in a saucepan; cook and stir over medium heat until filling mixture forms a paste, about 5 minutes. Add more water if filling gets too thick. Remove saucepan from heat and cool.
  • Place flour in a bowl and rub margarine into flour using your hands until mixture resembles bread crumbs; stir in oats and 3/4 cup sugar. Press 1/2 of the mixture into the prepared baking dish. Spoon filling over over crust, smoothing with the back of the spoon, leaving a thin border between the filling and the edge of the dish. Sprinkle the remaining crumble mixture over filling.
  • Bake in the preheated oven until top is golden brown, 40 to 45 minutes.

1 1/2 cups dates, pitted, chopped
2/3 cup fresh orange juice
3/4 cup unsalted butter
3/4 cup light brown sugar, packed
1 cup rolled oats (a generous cup!)
1 1/2 cups self rising flour

Steps:

  • Preheat the oven to 350 degrees F, then grease & line (with parchment) a 7"x11" cake pan.
  • Combine the dates & orange juice in a saucepan & bring to a boil before turning the heat down to low ~ Cover the saucepan & simmer gently for 5 minutes to soften the dates.
  • Remove from the heat & mash the date mixture until smooth, then set aside to cool.
  • In a mixing bowl, beat together the butter & sugar, then stir in the oats & flour to form a crumbly mixture.
  • Press half of this mixture into the base of the prepared pan to form a smooth base, then use a fork to prick the base all over.
  • Bake for 10-12 minutes or until lightly golden.
  • Spread the date paste over the cooked base & sprinkle the remaining crumbly mixture over that as a topping.
  • Return to the oven & bake for another 30 minutes or until lightly golden.
  • Remove from the oven, cut into 12 bars & allow to cool in the pan on a wire rack.
  • Great served either warm or cold.

2 cups quick-cooking rolled oats
1 teaspoon baking soda
1 pinch salt
1 1/4 cups brown sugar
1 1/2 cups margarine
1 lb dates (packaged)
1 cup white sugar
1 pinch salt
1/2 teaspoon vanilla

Steps:

  • Crumble Mixture.
  • Mix and then rub together the first 6 ingredients.
  • Date Mixture.
  • Cut up the dates and cover with water.
  • Add sugar and salt.
  • Cook until the dates are not lumpy.
  • Add Vanilla.
  • Assemble in Glass Pan.
  • Put in half the crumble mixture in a oblong glass baking pan.
  • Gently spread the date mixture over the crumble mixture.
  • Spread the rest of the crumble mixture over the date mixture.
  • Bake in 350F oven until the top and the bottom are golden brown.
  • Cut into bars and serve warm or cold.

It may have the word "cake" in the title and you will end up with a cake shaped dessert, but in reality this is a recipe for an honest to goodness, old fashioned, winter warmer of a PUDDING! I made this for our Sunday meal and my DH thought it was so good he told all his work colleagues about it the next day! I think this pud works best with lashings of hot custard, but cream is good too! Use good quality 'cookers' (such as Bramleys if you can get them). This recipe comes from the 2005 edition of the annual BBC Good Food "Vegetarian Christmas" magazine.

2 ounces plain flour
1 teaspoon ground ginger
2 ounces butter
6 ounces butter, at room temperature
6 ounces caster sugar (superfine)
3 medium eggs, at room temperature
6 ounces self raising flour, sifted
2 ounces stoned dates, chopped
12 ounces tart baking apples, peeled, cored and sliced

Steps:

  • Pre-heat oven to 375F, 190C, gas mark 5: butter an 8 inch (20cm) round springform tin and base-line with buttered baking parchment.
  • To make the crumble topping, sift the flour and ginger into a bowl and rub in the butter until the mixture resembles breadcrumbs (you don't have to be too precise about this as the topping melts into the cake during baking): stir in the sugar and set aside.
  • For the cake mixture, cream the butter and sugar together until pale and fluffy; gradually beat in the eggs one at a time, adding a little of the flour with each egg to prevent curdling: fold the remaining flour and chopped dates into the mixture.
  • Spoon the cake mixture into the prepared tin and when it is all in the tin, finish off by making a slight hollow in the centre with the back of a spoon: layer the sliced apples evenly over the top of the cake mixture, pressing the slices down slightly as you work: scatter the crumble mix over the top.
  • Bake for 50 - 60 minutes until a skewer inserted in the centre comes out clean: cool the cake in the tin for 10 minutes, then serve warm with custard or cream.
