Roasted Beef Tenderloin with Basil-Curry Mayonnaise image

Vegetable oil cooking spray
2 teaspoons cumin seeds
2 teapsoons coriander seeds
3 cloves garlic
1/4 teaspoon kosher salt, plus 2 teaspoons
1 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 (3 1/2 to 4-pound) beef tenderloin, trimmed
1 cup mayonnaise
1/4 cup mascarpone cheese, at room temperature
1/3 cup finely chopped fresh basil leaves
1 tablespoon curry powder
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil

Steps:

  • For the beef: Arrange an oven rack in the center of the oven and preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Set aside.
  • In a mortar and pestle, or spice grinder, finely grind the cumin seeds and coriander seeds. Heat a small skillet over medium heat. Add the spices and cook for a few seconds until aromatic and toasted. Put the spices in a small bowl. Chop the garlic on a cutting board and sprinkle with 1/4 teaspoon salt. Holding a chef's knife at a 45 degrees angle, scrape the garlic and salt together to form a paste. Add the garlic paste to the bowl with the spices. Add the remaining 2 teaspoons salt, black pepper, and oil and stir until smooth. Put the meat on the prepared baking sheet and rub with the spice mixture. Roast for 35 to 40 minutes or until an instant-read thermometer inserted into the thickest part of the meat registers 125 degrees F, for medium-rare. Remove from the oven and transfer the meat to a cutting board. Cover the meat loosely with foil and let rest for 20 minutes.
  • For the mayonnaise: In a small bowl, whisk together the mayonnaise, mascarpone cheese, basil, curry powder, and paprika until smooth. Season with salt and pepper, to taste.
  • To serve: Slice the meat into 1/4-inch thick slices and arrange on a platter. Spoon the mayonnaise mixture into a small serving bowl and serve alongside the sliced meat.

1 pound asparagus spears, trimmed
Salt and pepper
2 tablespoons cashews (recommended: Planters) plus roughly chopped cashews, for garnish
1/2 cup light mayonnaise (recommended: Best Foods)
1 teaspoon curry powder (recommended: McCormick's)
1/2 teaspoon lemon juice (recommended: ReaLemon)
Pinch salt

Steps:

  • Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.
  • On baking sheet, drizzle oil over trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in oven for 8 to 10 minutes depending on the size of the asparagus. While asparagus is roasting, prepare mayonnaise.
  • Process 2 tablespoons of cashews in a blender until finely ground. In a small bowl, stir to combine ground cashews, mayonnaise, curry powder, lemon juice, and salt. Set aside.
  • To serve, divide asparagus among 4 plates and top with a dollop of mayonnaise mixture. Garnish with a few chopped cashews.

Steps:

  • Mix mayonnaise, chutney, and curry powder in small bowl. Season to taste with salt and pepper.
  • Spread 2 tablespoons curry-chutney mayonnaise in 2-inch-wide strip down center of 1 tortilla. Top with 1/2 cup turkey, 1/4 cup cilantro, 1 1/2 tablespoons peanuts, and 1/3 cup coleslaw mix. Fold sides of tortilla over ends of filling, then roll up burrito-style, enclosing filling completely. Repeat with remaining ingredients. Cut each turkey wrap in half on diagonal.

An excellent dish for a picnic as you serve this cold. Comes from my handwritten book of tried and tested recipes, this is a firm family favourite in summer and is always requested, especially when we go on a picnic. Whilst the recipe states to use whole chicken pieces I find breaking the chicken into smaller pieces allows the sauce to penetrate each piece with a very tasty mild, curry mayonnaise flavour.

8 skinless chicken thighs or 8 skinless chicken breasts
2 large onions, sliced into rings
5 ml salt
25 ml oil
15 ml curry powder
15 ml vinegar
30 ml apricot jam
250 ml mayonnaise
75 ml water

Steps:

  • Season the chicken with salt.
  • place in a saucepan with the water and cook till done.
  • Set the chicken aside to cool off.
  • Saute the onions in the oil until soft.
  • Add the curry powder and vinegar and cook for 1 minute.
  • Add the apricot jam and simmer for about 5 minutes.
  • Remove from cooktop and set aside to cool off.
  • Arrange the chicken in a serving dish (or break into smaller pieces first).
  • Mix the mayonnaise with the cooled curry mixture and pour over the chicken.
  • Place in the refrigerator to chill.
  • Note: the flavour develops even better when you chill this overnight. Cooling time is not included in the timings.

1/2 cup celery, cut into 1/4-inch slices

1 1/2 cups Curry Mayonnaise, recipe follows
1/4 cup coarsely chopped cilantro leaves
Salt and freshly ground black pepper
8 hot dog buns
1/4 cup olive oil or unsalted butter
2 tablespoons olive oil
1 small Spanish onion, finely diced
2 cloves garlic, finely diced
3 tablespoons Madras curry powder
1/4 cup cold water
2 cups good quality mayonnaise
2 tablespoons fresh lime juice
Salt and freshly ground black pepper

Steps:

  • Combine all the ingredients in a large bowl and season with salt and pepper, to taste.
  • Split the rolls and brush with olive oil or butter. Grill, split-side down, until golden, about 30 to 45 seconds. Fill each roll with some of the lobster salad and serve immediately.
  • Curry Mayonnaise:
  • Heat olive oil in a small saucepan over medium heat. Add onions and garlic and cook until soft, about 3 to 4 minutes. Add curry powder and cook for 2 to 3 minutes. Add water and cook a few minutes longer. Remove mixture from heat and let cool.
  • Place curry mixture, mayonnaise and lime juice in a blender and blend until smooth; season with salt and pepper,to taste. Refrigerate until ready to use.

3 large onions
25 ml curry powder
50 ml smooth apricot jam
25 ml vinegar
12 1/2 ml cornflour
250 ml mayonnaise

Steps:

  • Season the chicken thighs with salt and pepper. Place in a deep dish and microwave for 22-25 minutes on 100% power, or until cooked. Turn over from time to time. Remove the chicken from the dish and allow to cool. Skim the fat from the liquid in the dish.
  • Peel and slice the onions in rings. Place them in the cooking liquid and microwave, uncovered for 5 minutes on 100% power.
  • Combine the apricot jam, curry powder, vinegar and cornflour. Stir into the onion mixture. Microwave the mixture, uncovered, for about 4 minutes on 100% power, or until thick; stir halfway through this time. Allow to cool. Stir the mayonnaise into the cold onion mixture. Arrange the cold chicken thighs on a serving platter and spoon the curried mayonnaise over them. Chill well.

  • Combine the first 7 ingredients together in a shallow plate/bowl/ziplock bag; mix well.
  • Coat the chicken strips with the flour mixture by placing them into the ziplock bag and shaking it, or using chopsticks to dredge them in the plate.
  • Lightly beat the egg (I put it in a wide soup bowl/plate; it's easier for dipping).
  • Shaking off excess flour, dip the chicken fingers in the beaten egg.
  • Immediately, roll the chicken in the crushed cashews to coat; set the nut-coated chicken onto lightly oiled baking pan.
  • Repeat with remaining chicken.
  • You may now bake the chicken fingers or chill it in the fridge for a few hours until you're ready to cook (chilling may help the coating to adhere better).
  • Just before baking, drizzle melted butter/oil over chicken and bake in preheated oven at 400°F / 210°C for 10-15mins, until cooked through and golden brown.
  • To make sauce: Combine all ingredients in a small bowl and mix well.
  • You may also serve the chicken fingers with ketchup or sweet Thai chili sauce.

Steps:

  • 1. Heat oil in a small saute pan over medium-low heat. Add onion and cook until it is limp, about 7 minutes, stirring frequently. Add spices and pepper totaste. Cook, stirring constantly, for 2 minutes. Remove from heat and let cool.

CHINESE TUNA WITH CURRY CHIVE MAYONNAISE



Chinese Tuna With Curry Chive Mayonnaise image

Recipe from The Riverfront Times' Recipes 1997 and states it was submitted by Chef Gregory Mosberger from te Carriage House Restaurant. He recommends serving the tuna atop a salad of tossed greens, nicoise olives, steamed green beans and hard boiled egg (similar to a Nicoise salad). Recipe is for 6 tuna steaks, so unless you are serving this at a party, you'll want to decrease the marinade and mayo accordingly. You also need to plan ahead for marinade time. NOTE: I made this today and the marinade is absolutely fabulous to say the least (I marinated the tuna for about 2.5 hours and it was so flavorful). I served mine atop some broccoli slaw that I simmered in chicken broth.

  • In a small skillet over medium-low heat, toast curry powder, stirring frequently, until aromatic, about 2 minutes. Transfer to a small bowl to cool.

You can't really go wrong with a beef tenderloin. It's a prime cut of meat that can be pricey, but I consider it for the holidays and special occasions. Really, it's so tender and flavorful that you don't have to do too much to make it taste delicious. The crust on this tenderloin, with garlic paste, cumin, and coriander, is so simple yet a wonderful surprise, and the basil-curry mayo is perfectly herby, spicy, and creamy. With any leftovers, you can make some pretty gourmet sandwiches, too.

Yield 6 to 8 servings

Vegetable oil cooking spray
2 teaspoons cumin seeds
2 teaspoons coriander seeds
3 garlic cloves, peeled
2 1/4 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 (3 1/2- to 4-pound) beef tenderloin, trimmed
1 cup mayonnaise
1/4 cup (2 ounces) mascarpone cheese, at room temperature
1/3 cup finely chopped fresh basil leaves
1 tablespoon curry powder
1 teaspoon smoked paprika
Salt and freshly ground black pepper

Steps:

  • For the beef: Place an oven rack in the center of the oven and preheat the oven to 400°F. Spray a heavy rimmed baking sheet with vegetable oil cooking spray. Set aside.
  • In a mortar and pestle or spice grinder, coarsely grind the cumin seeds and coriander seeds (see Cook's Note). Heat a small skillet over medium heat. Add the spices and cook, stirring, for 30 seconds, or until aromatic and toasted. Scrape the spices into a small bowl.
  • Finely chop the garlic on a cutting board. Sprinkle with 1/4 teaspoon of the salt. Holding a chef's knife at a 45-degree angle, scrape the garlic and salt together to form a paste. Spoon the garlic paste into the bowl with the spices. Add the remaining 2 teaspoons salt, the black pepper, and the oil. Stir until smooth.
  • Place the meat on the prepared baking sheet and rub with the spice mixture. Roast for 35 to 40 minutes, or until a meat thermometer inserted into the thickest part of the meat registers 125°F for medium-rare. Transfer the meat to a cutting board and tent loosely with foil. Let rest for 20 minutes.
  • For the mayonnaise: In a small bowl, whisk together the mayonnaise, mascarpone cheese, basil, curry powder, and paprika until smooth. Season with salt and pepper.
  • To serve, slice the meat into 1/4-inch-thick slices and arrange on a platter. Spoon the curry mayonnaise into a small bowl and serve alongside the meat.
  • You can also crush the spices by putting them in a small resealable plastic bag and pressing down on them with a rolling pin or the bottom of a small saucepan.
