Crab cakes are a traditional East Coast flavor; this recipe, however, gives them a Middle Eastern spin!!! They are moist and flavorful alone, but add the sauce, and WOW!

¼ cup mayonnaise
¼ cup plain yogurt
1 teaspoon curry powder
1 teaspoon ground ancho chile pepper
½ teaspoon garlic powder
1 tablespoon mango chutney
½ cup chopped green onion
1 jalapeno pepper, seeded and minced
4 cloves garlic, minced
1 cup dry bread crumbs
2 cups low sodium buttery round crackers, crushed
1 egg, beaten
½ cup mayonnaise
1 tablespoon spicy brown mustard
1 tablespoon Worcestershire sauce
1 dash lemon juice
Old Bay Seasoning TM to taste
1 (6 ounce) can lump crabmeat, drained
2 tablespoons olive oil

Steps:

  • In a small bowl, mix together 1/4 cup mayonnaise and yogurt. Season with curry powder, chile pepper, and garlic powder. Stir in the mango chutney. Cover and chill at least 30 minutes.
  • In a separate bowl, toss together the green onion, jalapeno, garlic, bread crumbs, and 1/2 the crackers. Mix in the egg, 1/2 cup mayonnaise, mustard, Worcestershire sauce, lemon juice, and Old Bay seasoning. Fold in the crabmeat. Form the mixture into 6 cakes and evenly coat with the remaining bread crumbs.
  • Heat the olive oil in a skillet over medium-high heat. Cook each cake about 5 minutes on each side, until heated through and golden brown. Serve with the chilled sauce mixture.

Crispy-Skin Salmon with Curried Yogurt Sauce image

Nailing perfectly crispy skin on salmon is easier than you think. The secret is prepping the fish before cooking it. Scraping the residual moisture will guarantee a crisp skin. You can also scrape it a few hours or days before cooking.

Two 6-ounce salmon fillets, skin on, scales and pin bones removed
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1/2 cup whole-milk Greek yogurt
1/2 cup chopped fresh cilantro
Grated zest of 1 lemon
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1/2 teaspoon garam masala
1/2 teaspoon curry powder
Kosher salt and freshly ground pepper

Steps:

  • For the salmon: Pat the fillets dry with paper towels. With the sharp edge of a knife, scrape the skin back and forth the length of a fillet over and over with light pressure. You will see moisture build up on your knife edge; wipe it away. Continue for about 1 minute, until there's almost nothing to wipe away. Cut a few 2- to 3-inch slits across the middle of the salmon skin. Repeat with the remaining fillet.
  • Season the salmon with salt and pepper on both sides. Drizzle with the oil and set aside until ready to cook.
  • For the yogurt sauce: Combine the yogurt, cilantro, lemon zest and juice, oil, garlic, garam masala and curry powder in a small bowl. Mix with a fork until well combined. Season with salt and pepper to taste. Set aside.
  • Heat a 9- to 11-inch cast-iron skillet over medium-high heat for 3 to 4 minutes. There is no need to oil the pan, because you oiled the fish. Add the fillets skin-side down, laying them away from you. Cook for about 3 minutes, or until golden brown. Shake the pan until the salmon releases from the bottom of the pan by itself.
  • Carefully turn the salmon over and reduce the heat to medium-low so the flesh side cooks more slowly. Cook until a thin-bladed knife inserted into the flesh meets with just a little resistance or an instant-read thermometer inserted into the thickest part of a fillet registers 125 degrees F, 2 to 3 minutes (thinner pieces will be done quicker than the thicker ones).
  • Serve the fillets topped with some of the yogurt sauce.

12 ounces green beans, ends trimmed
12 ounces carrots (about 4 medium), peeled and cut into sticks similar in size to beans
1 1/2 pounds skinless salmon fillet
1 cup plain low-fat yogurt
1 to 2 teaspoons curry powder
1/4 cup chopped fresh cilantro, plus sprigs for garnish (optional)

Steps:

  • In a large skillet with a tight-fitting lid, pour 1/2 inch water; bring to a boil, and season generously with salt. Add green beans and carrots. Return water to a simmer, cover skillet, and steam until vegetables are crisp-tender, 4 to 6 minutes. Transfer to a colander; rinse with cold water to stop the cooking process.
  • Rinse skillet with cold water to cool it down. Place salmon in skillet, and add cold water to cover; season with salt. Bring water to a boil over high heat; cover skillet, and remove from heat. Set aside until salmon is opaque throughout, about 20 minutes. Remove from skillet, and let cool.
  • In a small bowl, stir together yogurt, curry powder, and cilantro; season with salt and pepper.
  • Break salmon into large pieces; serve with vegetables and yogurt sauce. Garnish with cilantro, if desired.

1 cup basmati rice
1/2 cup plain low-fat yogurt
1/2 cup chopped cilantro, or parsley
1 tablespoon freshly squeezed lemon juice
1 small garlic clove, minced
Coarse salt and ground pepper
1 cauliflower, (2 to 2 1/2 pounds)
2 medium onions, halved and thinly sliced
2 tablespoons olive oil
2 teaspoons curry powder
8 (3 to 5 ounces each) lamb rib chops

Steps:

  • Preheat oven to 475 degrees. In a small bowl, combine yogurt, cilantro, lemon juice, and garlic. Season with salt and pepper; set sauce aside. Cook rice according to package instructions; set aside.
  • Break cauliflower into large florets; place on a rimmed baking sheet with onions. Sprinkle with oil and curry powder. Season with salt and pepper; toss to coat. Roast, tossing occasionally, until tender and browned in spots, 25 to 30 minutes.
  • Heat a large skillet over medium-high heat; sprinkle 1 teaspoon salt evenly in the bottom of skillet. Add 4 chops, and cook on both sides, 2 to 4 minutes per side for medium-rare. Transfer to plate. Wipe skillet with paper towel; repeat with remaining chops. Serve lamb with rice, cauliflower, and yogurt sauce.

CURRIED FISH FILLETS WITH YOGURT SAUCE



Curried Fish Fillets with Yogurt Sauce image

Yield Makes 4 servings

Number Of Ingredients 8

3/4 cup plain nonfat yogurt
3 tablespoons minced fresh cilantro
2 tablespoons minced green onion
Nonstick vegetable oil spray
4 4-ounce flounder or petrale sole fillets
2 teaspoons curry powder
2 large egg whites
1 cup toasted wheat germ

Steps:

  • Mix yogurt, cilantro and green onion in small bowl. Season with salt and pepper.
  • Preheat oven to 500°F. Spray baking sheet with vegetable oil spray. Place in oven. Rub each side of each fish fillet with 1/4 teaspoon curry powder. Whisk egg whites in medium bowl until foamy. Place wheat germ on large sheet of waxed paper. Dip fish fillets into egg whites, then turn fillets in wheat germ, coating lightly. Place fish fillets on hot baking sheet. Sprinkle with salt and pepper. Bake until fish is opaque in center, about 8 minutes. Remove from oven; let stand 2 minutes. Transfer to platter. Serve yogurt sauce alongside.

2 tablespoons Major Grey's mango chutney
1 teaspoon fresh lime juice, or to taste
1/2 cup mayonnaise
1 tablespoon curry powder, or to taste
2 tablespoons minced red onion plus additional for garnish

Steps:

  • In a blender or small food processor blend together 1/2 cup of the yogurt, the chutney, and the lime juice until the mixture is smooth, transfer the mixture to a bowl, and whisk in the remaining 1/4 cup yogurt, the mayonnaise, the curry powder, the 2 tablespoons onion, and salt and pepper to taste. Chill the sauce, covered, for at least 8 hours and up to 3 days. Transfer the sauce to a serving dish and sprinkle it with the additional onion.

CURRIED CHICKEN KEBABS WITH YOGURT DIPPING SAUCE

6 ounces fat-free plain yogurt
1 cup packed fresh basil (about 2 1/2 ounces)
1 medium red onion, cut into 3 wedges, each wedge cut into 3 wedges (9 wedges total), divided use
1/2 teaspoon curry powder
1/4 teaspoon pepper
1 pound boneless, skinless chicken breast halves, all visible fat discarded, cut into 1-inch cubes
Cooking spray
1 medium zucchini, halved lengthwise, each half cut crosswise into 8 pieces
1 medium green bell pepper, cut into 16 squares
16 cherry tomatoes

Steps:

  • In a food processor or blender, process the yogurt, basil, and 1 wedge of onion until smooth. Pour the mixture into a medium bowl. Set the remaining onion wedges aside.
  • Stir the curry powder and pepper into the yogurt mixture. Transfer 1/3 cup of the mixture to a small bowl. Cover and refrigerate to serve as the dipping sauce.
  • Add the chicken to the remaining yogurt mixture, stirring to coat. Cover and refrigerate for 30 minutes to 4 hours.
  • Meanwhile, if using wooden skewers, soak seven 10-inch skewers for at least 10 minutes in cold water to keep them from charring or use metal skewers, lightly spraying with cooking spray.
  • Lightly spray the grill rack with cooking spray. Preheat the grill on medium high.
  • Thread the chicken onto 3 skewers, discarding the marinade. Use one of the remaining 4 skewers for each of the vegetables-zucchini, bell pepper, tomatoes, and remaining 8 onion wedges. Lightly spray the kebabs with cooking spray.
  • Arrange the kebabs in a single layer on the grill. Cook, covered, for 12 to 14 minutes, or until the chicken is no longer pink in the center and the vegetables are tender, turning occasionally to cook evenly. Transfer the kebabs to a rimmed baking sheet as they become ready.
  • Slide the chicken and vegetables from the skewers onto a platter. Serve with the reserved 1/3 cup dipping sauce.

Apparently two patties makes one serving, making it four servings for four people, especially with a complete meal. What I plan to do below is write that it makes eight patties, and allow everyone here to decide if they want to serve one or two patties per person. Because of the hot curry paste this is really for people who like their recipes hot.

1 cup plain yogurt
1/4 cup chopped of fresh mint
1 garlic clove, chopped
1 (19 ounce) can chickpeas, drained
1 onion, finely chopped
4 teaspoons hot curry paste
1 egg, beaten
1/2 cup store bought roasted red pepper, chopped
3/4 cup oat bran (or breadcrumbs)
3/4 cup finely chopped almonds
salt and pepper

Steps:

  • In a small bowl, blend yogurt, mint, and garlic. Cover and refrigerate for 30 minutes.
  • Season with salt and pepper.
  • Preheat oven to 375°F.
  • In a large bowl, mix chickpeas, onion, curry paste, and egg. Mash the mixture with a potato masher until blended but not smooth.
  • Add red peppers and oat bran, and season with salt and pepper to taste. Mix with a fork until ingredients are well combined.
  • Shape mixture into 8 patties and coat with chopped almonds.
  • Place patties on a baking sheet lined with parchment paper. Bake in the oven for 30 minutes, turning patties halfway through the cooking.
  • Place each croquette on a bed of salad greens and serve with yougurt sauce.
  • Note: For a meal, serve each person 2 croquettes with buttered linguini, broccoli florets and yogurt sauce (this is just a suggestion, and you can always do something similar along this line).
