ASPARAGUS SOUP
Each spring my husband takes our dogs and searches for wild asparagus. He's been so successful that I finally developed this asparagus soup recipe. We look forward to this special soup every year.-Betty Jones, Kohler, Wisconsin

Steps:
- In a 3-qt. saucepan, saute onions in butter for 4 minutes. Add mushrooms and cook until tender. Add asparagus, broth and seasonings; cover and simmer for 30 minutes. , Add rice. Combine cornstarch and water until smooth; gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

Steps:
- In the soup pot, melt the butter with the oil.
- Add onion, cooking until transparent.
- Add garlic and thyme, cook until the garlic smells aromatic, just a few minutes.
- Put both cans of asparagus and their liquid in a blender to puree. Add the pureed asparagus and chicken broth to the pot. Heat through.
- Add milk or cream to the pot, being careful not to allow it to boil.
- Adjust seasonings to your taste. You might serve with a pat of butter in the center of the bowl.

FRESH ASPARAGUS SOUP

- In a large saucepan, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until tender. Add garlic; cook 1 minute longer. Add asparagus and broth; bring to a boil. Reduce heat; simmer, uncovered, 8-10 minutes or until asparagus is tender. Remove from heat; cool slightly. Transfer to a blender; cover and process until smooth., In a small bowl, mix 2 tablespoons flour and 1/4 cup milk until smooth; set aside. In same saucepan, heat butter over medium heat. Stir in seasonings and remaining flour until smooth; cook and stir 45-60 seconds or until light golden brown. Gradually whisk in cream, remaining milk and reserved flour mixture. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in wine, lemon juice and asparagus mixture; heat through. If desired, top each serving with chives.

CREAMY ASPARAGUS SOUP
I found this recipe in my Immersion Blender manual. It is a great first course. Listed to serve ten if only half cup servings are used, as would be for a first course. If using as a main course adjust servings appropriately.

Steps:
- Melt butter in a 4-quart saucepan over medium low heat.
- Add shallots and crushed garlic and saute over medium low heat for about 5 minutes. Do not allow to brown.
- When shallots are soft, add asparagus, reserving the tips for garnish, and potato to saucepan and cook for about 6 minutes, until the asparagus is bright in color.
- Add wine. Raise the heat to bring the wine to a boil. Reduce the wine until a scant tablespoon remains.
- Add chicken stock. Bring to a boil and then reduce heat to low.
- Simmer for about 20 minutes until the vegetables are soft.
- While simmering, blanch asparagus tips and dry.
- Use immersion blender, or transfer to blender/food processor and blend 30 to 45 seconds.
- Return to pot if necessary.
- Add salt, pepper and basil.
- Stir in cream.
- Serve soup hot, garnished with reserved asparagus tips.

CREAMY ASPARAGUS SOUP WITH MUSHROOMS
This is from one of my Food and Wine cookbooks. It is very easy to make and freezes well. Feel free to omit the mushrooms if you want. Make a big batch of this when asparagus is in season and freeze individual servings of it. YUM!

Steps:
- In a large pot, heat 2 T oil over moderate heat. Add the mushrooms, ¼ t salt and the pepper and cook, stirring occasionally, until the mushrooms are golden; about 5 minutes.
- Remove the mushrooms and set aside. Reduce the heat to low and add another tablespoon of oil to the pot.
- Add the onion and cook, stirring occasionally, until translucent; about 5 minutes.
- Add the water, broth, rice, and the remaining salt to the pot. Bring to a boil.
- Continue boiling for 10 minutes, stirring occasionally.
- Add the asparagus. Cook until tender; about 5 minutes.
- Using a hand blender or food processor, puree the soup until smooth.
- Return the soup to the pot and add the reserved mushrooms.

- In a large saucepan or soup kettle, combine the potatoes, asparagus, onion, celery, bouillon and water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Stir in the butter., In a bowl, combine flour, cream, milk, salt and pepper until smooth; add to the vegetable mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. CUISINART ASPARAGUS SOUP
Got this from a Cuisinart ad in a magazine. It's really tasty as well as low fat and low calorie. You need at least an eleven cup Cuisinart food processor.

Steps:
- Wash asparagus and break off the tough ends. Reserve a few tips for garnish.
- Cut the potato so it will fit through the processor's feed tube.
- In the Cuisinart with the "S" blade, process the shallots and garlic. Remove.
- Insert the 4mm slicing blade, and feed the asparagus and the potato through the feed tube.
- Melt the butter in a large saucepan. Briefly saute the shallot/garlic mixture over medium heat.
- Add the asparagus/potato mixture and the stock. Bring to a boil, then reduce heat and simmer about 15 minutes.
- Strain the solids and reserve the liquid.
- Using the "S" blade, puree the solids. Add about 1 cup of the reserved liquid while the machine is running and process until smooth.
- Combine the puree and the remaining liquid in a clean saucepan and reheat. Season with ground thyme, salt, white pepper and lemon juice.
- Garnish with reserved asparagus tips and a teaspoon of low fat sour cream.
