We have had this sauce on sole and halibut, but try it on your favorite fish, it seems to go with everything.

2 inches cucumbers, finely chopped (peeled if waxed)
1/4 cup minced red bell pepper
1/4 cup snipped fresh chives
1 cup nonfat sour cream or 1 cup low-fat sour cream
1/4 cup fresh lemon juice
2 tablespoons lemons, zest of
1 teaspoon dry mustard
salt (optional)
fresh ground black pepper

Steps:

  • In a small bowl, combine all the ingredients and mix well.

1 cup dry white wine
1/2 cup water
1 tablespoon lemon juice
1 lb salmon fillet
3/4 cup nonfat yogurt
1/2 cup unpeeled cucumber, finely chopped (about 1/2 small)
1 teaspoon dried dill or 1 tablespoon fresh dill weed
1/4 teaspoon salt

Steps:

  • Combine first 3 ingredients in a large nonstick skillet; stir well. Bring mixture to a boil over medium heat. Reduce to low, add salmon. Simmer 8 minutes or until fish flakes easily when tested with a fork.
  • While salmon cooks, combine yogurt, cucumber, dillweed, and salt; stir well.
  • Gently transfer salmon to a serving platter, using two spatulas; spoon cucumber sauce evenly over salmon.

Number Of Ingredients 9

1 1/2 pounds cucumbers (2 large), peeled, halved lengthwise, and seeded
Kosher or sea salt
1/4 cup minced red onion
1/2 cup whole-milk yogurt, drained of excess liquid
1/2 cup sour cream
2 to 3 tablespoons minced fresh herbs (dill, mint, cilantro, parsley, and/or chives)
2 teaspoons minced jalapeño chile (optional)
1 tablespoon fresh lemon juice, or more to taste
Freshly ground black pepper

Steps:

  • 1. Cut the cucumbers into 1/8-inch dice with a chef's knife, or pulse them in a food processor until chopped into 1/8-inch pieces (do not over process). Place the cucumbers in a large stainless steel strainer set in the sink or over a bowl, sprinkle them with 1 teaspoon salt, and let them drain for 30 minutes.
  • 2. Meanwhile, place the onion in a small bowl, cover with cold water, and let stand for 30 minutes.
  • 3. Transfer the cucumbers to a large bowl, squeezing the last bit of excess moisture from them with your hands before you place them in the bowl. Drain the onion thoroughly and add to the cucumbers. Add the yogurt, sour cream, herbs, and jalapeño, if using. Mix gently, and add the lemon juice. Season with black pepper, taste, and add more lemon or salt as you wish. Refrigerate for at least 1 hour before serving. The sauce keeps refrigerated for 2 days.

1 tablespoon canola oil
4 salmon fillets (6 ounces each)
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/2 cup reduced-fat plain yogurt
1/4 cup reduced-fat mayonnaise
1/4 cup finely chopped cucumber
1 teaspoon snipped fresh dill

Steps:

  • In a large skillet, heat oil over medium-high heat. Sprinkle salmon with Italian seasoning and salt. Place in skillet, skin side down. Reduce heat to medium. 3 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 clove garlic, finely chopped
1/4 teaspoon salt
1 lb tuna steaks
1/2 cup chopped cucumber
1/4 cup plain low-fat yogurt
2 tablespoons chopped fresh cilantro
1 tablespoon reduced-fat mayonnaise or salad dressing

Steps:

  • In shallow glass dish or pie plate, mix lime juice, 2 tablespoons cilantro, the garlic and salt. Cut fish steaks into 4 serving pieces. Add fish to lime mixture, turning several times to coat. Cover; refrigerate 1 hour, turning once, to marinate.
  • Meanwhile, in small bowl, mix all sauce ingredients; refrigerate.
  • Set oven control to broil. Spray broiler pan rack with cooking spray. Remove fish from marinade; discard marinade. Place fish on rack in broiler pan. Broil with tops 4 inches from heat 7 to 10 minutes, turning once, until fish flakes easily with fork. Serve with sauce.
