3 cucumbers (, standard (or 2 long Telegraph/English cucumber(Note 1))
1/2 red onion (, finely diced)
1 1/2 tbsp red wine vinegar ((Note 2))
3 tbsp extra virgin olive oil
1 garlic clove (, minced)
1/2 tsp Dijon mustard
3/4 tsp mixed dried herbs ((Note 3 sub))
1/2 tsp white sugar ((optional))
1/2 tsp salt and black pepper (, EACH)

Steps:

  • Shake Dressing in a jar.
  • Cucumber: Trim ends then slice about 3 mm/ 1/8" thick.
  • Place in bowl with red onion.
  • Pour over Dressing, toss gently and serve immediately.

1 tablespoon finely grated lemon zest, plus 3 tablespoons fresh juice
1 tablespoon sumac
Kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil
8 cups tender baby greens, such as arugula, frilly mustard, and red-veined watercress
2 cups fresh tender-herb leaves, such as mint, cilantro, and dill
2 cups thinly sliced mini cucumbers (from 2)
1 cup thinly sliced scallions (from 4)
1/2 cup thinly sliced kumquats (from 8)

Steps:

  • Whisk together zest, juice, and sumac; season with salt and pepper. Whisk in oil to combine. Toss remaining ingredients with half of dressing. Serve with additional dressing, if desired.

Garden-grown summer cucumbers are ideal for this easy salad, but even hothouse cucumbers are vastly improved with this zesty treatment. The sumac powder can be found at Middle Eastern groceries or online spice emporiums. Sumac adds a pleasant sour flavor that lemon juice alone does not provide. To keep the cucumbers crisp, don't dress them more than 30 minutes before serving.

2 pounds Persian cucumbers, peeled
Salt and pepper
1/2 teaspoon grated garlic
1 tablespoon lemon juice
2 tablespoons extra-virgin olive oil
4 ounces feta, cut into rough 1/2-inch cubes
1 tablespoon sumac
2 tablespoons chopped mint
2 tablespoons chopped parsley
Pinch of crushed red pepper
Pinch of dried oregano

Steps:

  • Halve cucumbers lengthwise and slice into 1/2-inch pieces. Place in a large bowl and season generously with salt and pepper. Add garlic, lemon juice, olive oil, feta and sumac and toss to coat. Taste and adjust seasoning.
  • Transfer to a serving platter. Just before serving, sprinkle with mint, parsley and crushed red pepper, then dust with oregano.

6 to 7 Kirby cucumbers, peeled, halved, seeded, and sliced 1/4 inch thick (6 cups)
1/4 cup extra-virgin olive oil
1 tablespoon unseasoned rice vinegar, plus more to taste
1/3 cup mixed chopped fresh tender herbs, such as parsley, mint, and chives, plus whole leaves for serving
Kosher salt and freshly ground pepper

Steps:
