We've given this creamy cucumber salad recipe a healthy update. But it's still so good, you won't even notice! Reduced-fat sour cream (in place of full-fat) lowers the calorie count without losing taste.

1/2 cup reduced-fat sour cream
2 tablespoons fresh lemon juice (from 1 lemon)
2 tablespoons chopped fresh dill, plus more for garnish (optional)
Coarse salt and ground pepper
4 to 6 Kirby cucumbers (about 1 pound), halved lengthwise and thinly sliced crosswise

Steps:

  • In a medium bowl, combine sour cream, lemon juice, and dill. Season with salt and pepper, and whisk well to combine.
  • Add cucumbers, and toss to coat. Garnish with more dill, if desired. Serve, or refrigerate, covered, up to 4 hours.

Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

Number Of Ingredients 7

1 6 inch piece seedless cucumber, peeled
1 clove garlic (use a small clove)
3/4 c mayonnaise
1 1/2 tsp lemon juice
1 tsp dry mustard
2 Tbsp fresh dill, chopped or 1 tbsp dry
salt to taste

Steps:

  • 1. Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)
  • 2. Place remaining ingredients in food processor and blend together
  • 3. Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.

Coarse salt and freshly ground pepper
1 skin-on salmon fillet (about 1 1/4 pounds), preferably wild
1 pound baby potatoes, such as Yukon Gold
2/3 cup buttermilk
1/3 cup mayonnaise
3 tablespoons coarsely chopped fresh dill
1 large cucumber (about 3/4 pound), peeled and thinly sliced
Lemon wedges, for serving

Steps:

  • Bring 1 1/4 inches of water to a boil in a large straight-sided skillet. Generously season with salt. Add salmon, skin-side down; return to a boil. Remove from heat, cover, and let stand until salmon is just opaque throughout, 15 to 17 minutes. Use a slotted spatula to transfer salmon to a plate, skin-side up.
  • Meanwhile, bring 2 inches of water to a simmer in a large pot fitted with a steamer basket (or a metal colander). Place potatoes in basket, cover, and steam until easily pierced with the tip of a sharp knife, 12 to 15 minutes.
  • Whisk together buttermilk and mayonnaise in a bowl, stir in dill, and season with salt and pepper. Remove skin from salmon; flake fish into large pieces. Divide salmon, potatoes, and cucumber among plates; drizzle with dressing, and serve with lemon wedges.

2 tablespoons lemon juice
1/4 teaspoon sugar (to taste)
6 tablespoons oil (sesame is great or other vegetable)
salt
fresh ground pepper
1 1/2 tablespoons minced fresh dill
2 cucumbers, peeled and thinly sliced
3 minced scallions

Steps:

  • In a bowl, whisk lemon juice, oil and sugar until thick.
  • Add dill, salt and pepper to taste. Mix inches.
  • Add cucumbers and scallions, and coat well with dressing.
  • Chill for 15 minutes and serve cool.

Here's what you need: uncooked farro, english cucumber, salt, plum tomatoes, scallions, fresh parsley, greek yogurt, lemon, olive oil, pepper, fresh parsley, fresh dill

1 ½ cups uncooked farro
1 english cucumber, seeded and chopped
salt, to taste
3 plum tomatoes
½ cup scallions, chopped
fresh parsley, minced, for garnish
¾ cup greek yogurt
½ lemon, juiced
2 tablespoons olive oil
1 teaspoon pepper
1 teaspoon fresh parsley, minced
1 teaspoon fresh dill, minced

Steps:

  • Rinse the farro and add it to a medium saucepan. Add water until the farro is covered. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium, cover, and cook for 25 minutes, until the farro is tender
  • While the farro cooks, seed and chop the cucumber. Add it to a large bowl and sprinkle with salt. Let sit for 15-20 minutes. Rinse the cucumbers in cold water and drain well.
  • Dice the tomatoes.
  • Make the dressing: Add the yogurt, lemon juice, oil, pepper, parsley, and dill to a large bowl and stir to combine.
  • Add the farro, cucumbers, tomatoes, and scallions to the bowl with the dressing and toss to coat. Sprinkle with parsley.
  • Enjoy!

1/4 teaspoon black pepper
1 cup chopped red bell pepper
1/4 cup thinly sliced green onion

1 teaspoon minced garlic
1 whole lemon, juice

  • Put the cucumbers in a blender or food processor.
  • Pulse to chop.
  • Squeeze the juice from 1 lemon and add the juice to the blender/processor.
