VEGGIE PIE (CRUSTLESS QUICHE)



Veggie Pie (crustless quiche) image

Simple veggie side dish or lunch. Add diced chicken to the veggies before baking and serve with a salad to serve as dinner.

Number Of Ingredients 8

2 c fresh broccoli florets
1/3 c onion, diced
1/3 c green pepper, diced
1 c milk
1/2 c bisquick
1 c cheddar cheese, shredded
2 eggs
salt & pepper to taste

Steps:

  • 1. Cook broccoli in 1 inch salted boiling water in a skillet for about 5 minutes.
  • 2. Mix broccoli with onion and pepper and put in 9" pie plate.
  • 3. Combine milk, cheese, Bisquick, eggs, salt and pepper and pour over veggies.
  • 4. Bake in a 400 degree oven for 35-45 minutes until set and cheese is golden brown.

Yield 1 pie 6 people

Number Of Ingredients 8

1 zucchini (scraped and cut into 2 inch slices)
1 onion (sliced)
2 large tomatoes (cut into chunks)
1/2 stick butter
1/2 cup grated parmesan cheese
1 egg
salt to taste
hot sauce to taste (optional)12 ounces mozzarella

Steps:

  • Put butter into a 10 inch skillet. Add veggies, cover, lower heat and simmer about 15 minutes (till tender). Remove from heat and add parmesan cheese, egg, salt & pepper. Transfer into a glass pie dish, top with mozzarella and bake at 350 degreet for 30 minutes. Remove, let set for 10 minutes and serve.
