Number Of Ingredients 10

4 tilapia fillets (6 ounces each)
1 tablespoon reduced-fat mayonnaise
1 tablespoon lime juice
1/4 teaspoon grated lime zest
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 cup panko bread crumbs
Cooking spray
2 tablespoons minced fresh cilantro or parsley

Steps:

  • Preheat oven to 425°. Place fillets on a baking sheet coated with cooking spray. In a small bowl, mix the mayonnaise, lime juice and zest, salt, onion powder and pepper. Spread mayonnaise mixture over fish. Sprinkle with bread crumbs; spritz with cooking spray., Bake until fish just begins to flake easily with a fork, 15-20 minutes. Sprinkle with cilantro.

I'm a real fan of Tilapia with so many ways to fix it. Here's another. Delicious! Excellent for those who do not like fish, but need the Omegas.

Number Of Ingredients 7

1 cup saltine crackers, crushed to crumbs
1 tablespoon italian seasoning
1/2 tablespoon dried parsley
fresh ground black pepper
1/3 cup unsalted butter, melted
2 tablespoons parmesan cheese or 2 tablespoons asiago cheese, grated
2 tilapia fillets

Steps:

  • Preheat oven to 400°F
  • Melt butter in shallow pie dish; set aside.
  • In another shallow dish, mix cracker crumbs, seasoning and spices.
  • Dry fillets and dredge in butter; then, in crumb-seasonings mixture.
  • Place on oil-sprayed foil-lined baking sheet and distribute remaining crumbs on tops of fillets.
  • Drizzle remaining melted butter over crumbs.
  • Sprinkle each with grated cheese.
  • Bake for 15-20 minutes, until fish flakes easily and topping is golden.
  • Serve with Chili SauceII-Recipe #7161, if desired.

FISH
1/2 lb. Tilapia fillets
1/2 Fiber One Org. bran cereal
1/2 tsp. dried basil leaves
1/8 tsp. salt
1/8 tsp. pepper
1/8 C. milk
1/2 T. olive or canola oil
fresh basil
SAUCE
1/3 C. sour cream
1 tsp. horseradish
1 tsp. dijon mustard
1 med chopped green onion (1 T.)

Steps:

  • Heat oven to 450 F. Spray 13x9 pan, cut tilapia into 4 serving pieces. Place cereal in plastic bag and finely crush. In shallow bowl mix cereal, basil, s&p, In another shallow bowl, place milk. Dip fish pieces into milk, then coat with cereal mixture. Place in pan, drizzle oil evenly over. Bave uncovered 10-15 min. Meanwhile, in small bowl mix all sauce ingredients until blended. Serve sauce with fish and garnish with fresh basil leaves.

FISH:
4 - tilapia fillets
1 cup(s) panko bread crumbs
1 teaspoon(s) basil, dried
1/4 teaspoon(s) salt
1/8 teaspoon(s) pepper
1/4 cup(s) milk, skim
1 tablespoon(s) olive oil, extra virgin
SAUCE:
6 ounce(s) greek yogurt, plain
1 tablespoon(s) prepared horseradish (not creamy)
1 teaspoon(s) dijon mustard
2 - scallion, chopped (both greens & whites)

Steps:

  • Preheat oven to 450 degrees F. Spray bottom of 13" x 9" pan with cooking spray. Cut tilapia into 4 serving pieces. Place panko in resealable food-storage plastic bag; seal bag & finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In shallow bowl, mix panko, basil, salt & pepper. In another shallow bowl, place milk. Dip fish pieces into milk, then coat with panko mixture; place in pan. Drizzle oil evenly over fish.
  • Bake uncovered 10 - 15 minutes or until fish flakes easily with fork.
  • Meanwhile, in small bowl, mix all sauce ingredients until blended. Serve sauce with fish.
