Cantaloupe Salsa image

Tortilla chips aside, this is also good over grilled fish or chicken. Variation: Try it with honeydew melon or a combination of the two. * Just a reminder....be sure to wear gloves when chopping hot chiles, and wash hands thoroughly afterwards!

Number Of Ingredients 6

2 cup(s) (1/4 inch) diced cantaloupe melon, from a 2 1/4 lb piece
1/4 cup(s) (1/4 inch) diced vidalia or red onion
2 tablespoon(s) chopped fresh cilantro or basil
1 - (2 inch long) hot red or green chile, minced*
2 tablespoon(s) fresh lime juice
1/4 teaspoon(s) salt

Steps:

  • Mix all ingredients together in a medium bowl. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.
  • * Remove the seeds of the chile if you want to lessen the heat.
