This bread pudding is the ultimate in comfort food from Gramma's kitchen. It is great for using up bread and apples. Enjoy!

4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
2 eggs, beaten
¼ cup white sugar
¼ cup brown sugar
½ cup milk
½ cup margarine
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

3 tablespoons butter, melted
1 loaf (1 pound) day-old cinnamon-raisin bread, cubed
3 cups chopped peeled tart apples
7 large eggs, lightly beaten
2-1/2 cups 2% milk
3/4 cup sugar
3 teaspoons vanilla extract
VANILLA SAUCE:
2/3 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1 cup cold water
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Pour butter into a 13x9-in. baking dish. Combine bread cubes and apples; sprinkle over butter. In a large bowl, whisk the eggs, milk, sugar and vanilla. Pour over bread; let stand for 15 minutes or until bread is softened. , Bake, uncovered, at 325° for 40-45 minutes or until a knife inserted in the center comes out clean., In a small saucepan, combine the sugar, cornstarch, salt and water until smooth. Bring to a boil over low heat, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in butter and vanilla. Serve with warm bread pudding.

12 slices raisin nut bread
1/2 cup butter, room temperature
2 butter croissants, sliced lengthwise -- into 1/4" slices
6 large eggs
1 cup sugar
1/8 teaspoon sugar
1 tablespoon vanilla extract
4 cups light cream or 4 cups half-and-half
1/2 teaspoon cinnamon, ground
1/8 teaspoon nutmeg, ground
1/8 teaspoon sugar

Steps:

  • Preheat oven to 325 degrees. Butter sides and bottom of 13x9" baking pan.
  • Butter one side of each bread slice and layer in pan alternately with croissants (6 slices bread, croissant slices, 6 slices bread).
  • In large bowl with an electric mixer set on med-high speed, beat eggs until slightly thickened, about 5 min.
  • Add sugar and vanilla and beat at med. speed until thoroughly combined.
  • reduce speed to low and add cream; mix until smooth.
  • Pour egg-cream mixture over bread and croissant slices. the slices will absorb egg-cream mixture slowly, so continue adding liquid until all is in pan.
  • In small bowl combine cinnamon, nutmeg and sugar. Sprinkle sugar-spice mixture over the bread pudding.
  • Fill a baking pan larger than the 13x9" bread pudding pan halfway up with hot water. Place in oven, set bread pudding pan in the water bath.
  • Bake 45-50 min. or until custard is set. When set, remove the bread pudding from the oven, and discard water in larger pan.
  • Cool to room temperature. refrigerate for 2 hours or until firm.

We love the use of croissants in this bread pudding. It makes the bready part of the recipe light and flaky. The custard part is delicious. It's creamy and sweet with a lovely egg nog flavor. Ooey gooey apple pie filling is a nice surprise. We never had pie filling in a bread pudding before but it tastes wonderful. This would be lovely for a holiday dessert or brunch.

5-6 - day old croissants split in half
1 can(s) sweetened condensed milk (14 oz)
14 ounce(s) milk (can be skim, whole, 1 or 2 percent)
1 can(s) apple pie filling (21 oz)
1 cup(s) raisins
3 large eggs
1 teaspoon(s) good vanilla extract
2 teaspoon(s) dark rum extract
1 teaspoon(s) Saigon cinnamon
1/2 teaspoon(s) nutmeg

Steps:

  • Preheat oven to 350 degrees. Spray a 10x12 baking pan with baking spray. Split croissants in half and place bottom half, split side up in the pan.
  • Spoon apple pie filling on croissants. Sprinkle raisins on top.
  • Place top half croissants on the mixture.
  • Place liquid ingredients in blender or food processor with dry spices, and mix thoroughly. It will smell just like egg nog!!
  • Pour liquid ingredients into the pan and press down on croissants to make sure all liquid is absorbed.
  • Place aluminum foil over the pan and bake for approximately 25 minutes.
  • Remove foil and bake 10-12 minutes more until croissants puff up.
  • Let stand for about 10-15 minutes to set up. Serve with vanilla or butter pecan ice cream.
  • You can use your own apples after cooking them for a bit on the stove with some sugar and spices, instead of the pie filling. This is a great dessert that will draw lots of compliments and most of the ingredients can be purchased right off the shelf! You can use different kinds of fruits. Make this your own, but the rum extract is an important ingredient. Please don't leave it out.
