SHRIMP SPAGHETTI

My husband loves shrimp so I created this simple pasta dish for him. Lemon zest adds freshness and I like to sprinkle the spaghetti with basil for color and taste.

4 ounces spaghetti
2 tablespoons extra-virgin olive oil
1 lemon, zested; zest cut into thin slivers
10 uncooked medium shrimp, peeled and deveined
1 clove garlic, minced
salt and freshly ground black pepper to taste
¼ cup chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While spaghetti is cooking, heat olive oil in a skillet over low heat. Add lemon zest and cook for 5 minutes. Strain olive oil through a sieve and return to the skillet. Add shrimp and garlic. Cook in the lemony oil, stirring occasionally, until shrimp turns pink, about 3 minutes. Season with salt and pepper.
  • Drain spaghetti, reserving about 1/2 cup of the cooking water. Add drained spaghetti, reserved cooking water, and basil to the skillet and mix well. Serve immediately.

4 -5 ounces angel hair pasta, cooked al dente
3/4 lb raw shrimp, peeled, deveined and tails removed
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
2 tablespoons flour (divided)
2 tablespoons olive oil
1 tablespoon butter
1 1/4 cups low sodium chicken broth
1/2 cup whipping cream
1/2 teaspoon cajun seasoning or 1/2 teaspoon Old Bay Seasoning
shredded parmesan cheese (optional)

Steps:

  • Sprinkle shrimp with salt, pepper and toss to combine. Sprinkle 1 tablespoon flour over the shrimp and toss to coat the shrimp. Repeat by sprinkling 1 more tablespoon flour and toss to evenly coat the shrimp.
  • Melt butter and olive oil in a large skillet over medium high heat. When hot, add the shrimp in a single layer and cook on each side, flipping once, until golden brown, approximately 3-4 minutes per side. Remove to plate.
  • Pour in the chicken broth. Cook for about 5 minutes, whisking the bottom of the pan to deglaze. Reduce heat to medium and pour in cream, whisking constantly. Cook sauce over medium heat until bubbly and the cream starts to thicken the mixture, about 5 minutes. Adjust seasonings as desired with cajun seasonings. If too thick, add a few tablespoons additional broth.
  • Add the cooked pasta and shrimp to the sauce and stir to combine. Dust with parmesan, if desired.

Serve over cooked fettuccine, linguini, or the pasta of choice, and crusty bread, so you can scoop up every drop of the yummy sauce! A green salad, or some sauteed zucchini, will fill out this meal beautifully.

8 slices bacon, cut into 1/4-inch pieces
4 tablespoons unsalted butter
3 cloves garlic, chopped
¼ cup white wine
1 teaspoon Dijon mustard
1 ½ pounds uncooked medium shrimp, peeled and deveined
½ (16 ounce) package dry fettuccine pasta
1 tablespoon chopped parsley, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place bacon in a 12-inch oven-safe skillet over medium heat; cook and stir until browned and crispy, 7 to 8 minutes. Remove bacon, leaving the drippings in the skillet.
  • Melt butter in the same skillet and add chopped garlic. Cook and stir until garlic is fragrant, 1 to 2 minutes. Pour in white wine and cook for about 2 minutes. Stir in mustard until well combined.
