1 package (16 ounces) romaine hearts, torn
3 medium navel oranges, peeled and sectioned
2 medium apples, peeled and chopped
1 small grapefruit, peeled and sectioned
1/2 cup pecan halves, toasted
1/4 cup fresh cilantro leaves
DRESSING:
1/2 cup unsweetened apple juice
1/4 cup lemon juice
1 tablespoon sugar
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

Steps:

  • In a large salad bowl, combine the romaine, oranges, apples, grapefruit, pecans and cilantro. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat.

2 cups torn iceberg lettuce
1 cup fresh cauliflowerets
1 cup fresh broccoli florets
1 cup shredded carrots
1/3 cup chopped red onion
6 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
DRESSING:
3/4 cup mayonnaise
3 tablespoons sugar
3 tablespoons lemon juice

Steps:

  • In a large salad bowl, combine the lettuce, cauliflower, broccoli, carrots, onion and bacon. Top with cheese. , Combine the mayonnaise, sugar and lemon juice. Pour over lettuce mixture and toss to coat.
