Slow Cooker Recipe. This recipe was clipped out of a magazine adapted from Brett Favre's Family Chili recipe in Green Bay Packers Cookbook. I changed up a bit for us and will note my changes. My husband liked it because it was spicy and was not overload on the beans. Enjoy

1 1/2 lbs lean ground beef (I used 1 1/3 pound ground beef and 1/2 pound sausage)
2 medium green peppers, chopped
2 stalks celery, chopped
1/2 cup green onion, sliced
1 small onion, chopped
2 garlic cloves, minced (I doubled)
1 (15 ounce) can kidney beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (14 1/2 ounce) can diced tomatoes with garlic, undrained
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 (10 3/4 ounce) can cream of mushroom soup
1 3/4 ounces chili seasoning mix (I used Texas Red)
1 tablespoon chili powder
1/2 teaspoon creole seasoning
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In a large skillet, cook beef (& sausage if added) until no longer pink; drain off fat.
  • In a slow cooker stir together meat with all listed ingredients.
  • Cover and cook on low heat for 7 to 8 hours.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 medium onion, chopped
1-1/2 teaspoons garlic powder
1 tablespoon canola oil
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
2 cans (4 ounces each) chopped green chiles
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
Tortilla chips, optional
Shredded cheddar cheese, optional
Sliced seeded jalapeno pepper, optional

Steps:

  • In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Remove from the heat; stir in sour cream and cream. If desired, top with tortilla chips, cheese and jalapenos.

1 tablespoon olive oil
1 lb fresh shrimp
1 lb andouille sausage, finely diced
1/4 cup onion, chopped
1 cup chicken broth
1 (15 ounce) can green chilies, chopped
2 green onions, sliced
1 (15 ounce) can cannellini beans, undrained
1 teaspoon garlic powder
1/8 teaspoon ground red pepper
1 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon cilantro
blackening seasoning
2 tablespoons butter

Steps:

  • Mix spices (except blackening seasoning) together to make spice blend.
  • Heat oil in large saucepan over medium-high heat.
  • Render sausage in oil for 5-7 minutes.
  • Add onions; cook another 4-5 minutes.
  • Stir in broth, green chilies and spice blend; simmer 15 minutes.
  • In a small pan melt butter for sauté. Heavily coat shrimp with blackening seasoning and sauté in melted butter 2-3 minutes on each side.
  • Stir in beans and shrimp, reserving a few shrimp for garnish. Simmer 5 minutes.
  • Top with onions.
  • Garnish with Monterey Jack cheese and two blackened shrimp.
