1 pound farfalle (bow-tie) pasta
3 tablespoons extra virgin olive oil
2 pounds chicken tenders, patted dry
salt and ground black pepper to taste
24 ounces fresh mushrooms, sliced
1 medium onion, halved and thinly sliced
3 tablespoons fresh minced garlic
3 cups chicken broth
4 teaspoons Dijon mustard
¼ cup heavy cream
2 cups roughly chopped fresh spinach
2 tablespoons coarsely grated Parmesan cheese, or to taste
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and transfer to a serving bowl or a deep platter.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat for 1 to 2 minutes. Season tenders with salt and pepper, place in the hot oil, and cook until lightly brown on one side, 3 to 4 minutes. Turn and cook on the other side until light brown, an additional 3 to 4 minutes. Transfer chicken to a plate.
  • Add mushrooms and onion to the hot skillet and cook until onion is lightly browned, 4 to 5 minutes. Stir in garlic and cook for 1 minute. Stir in chicken broth and mustard, season with salt and pepper, and cook for 5 minutes. Return chicken tenders to skillet and submerge them in the broth mixture. Cook until chicken is no longer pink in the center and the juices run clear, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and place on top of the cooked pasta.
  • Continue to cook the sauce until slightly thickened, about 3 minutes. Turn off heat and stir in cream. Add spinach stir until slightly wilted, about 1 minute. Pour sauce over chicken and pasta. Sprinkle with Parmesan cheese and garnish with parsley.

6 strips bacon, cut into 1/2-inch pieces
2 tablespoons olive oil
1 pound skinless, boneless chicken breasts, cut into strips
1 tablespoon butter
1 teaspoon garlic powder
salt and ground black pepper to taste
3 cloves garlic, minced
4 small tomatoes, diced
2 cups fresh spinach
1 ½ teaspoons paprika
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon red pepper flakes
1 ½ cups heavy cream
1 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • While pasta is cooking, cook bacon in a large skillet over medium-high heat, turning occasionally, until crispy, 10 to 12 minutes. Set bacon on paper towels to drain.
  • Season chicken with garlic powder, salt, and pepper.
  • Heat oil in a skillet over medium heat. Add seasoned chicken; cook and stir until no longer pink in the center and the juices run clear, 5 to 7 minutes. Remove chicken to a plate.
  • Melt butter in the large skillet. Add garlic and cook until fragrant, 30 seconds to 1 minute. Add tomatoes and cook until juices start to release, 3 to 5 minutes. Stir in spinach and cook until wilted, about 3 minutes. Mix in paprika, Italian seasoning, 1/2 teaspoon salt, and pepper flakes. Slowly add cream; bring mixture to a boil. Mix in Parmesan cheese, bacon, chicken, and parsley until well combined. Stir in pasta.

1 teaspoon vegetable oil
12 ounces boneless skinless chicken breasts, cubed
1 onion, chopped
2 garlic cloves, minced
1/2 teaspoon black pepper
2 tablespoons all-purpose flour
1 (385 ml) can fat-free evaporated milk
5 cups whole wheat penne (12oz/375g)
10 ounces fresh spinach, trimmed (recipe states half bag 10oz/284g pkg?)
1/3 cup fresh basil, shredded
1/4 cup sweet red pepper, diced
3 tablespoons fresh lemon juice
2 green onions, chopped
salt, to taste
hot pepper flakes, to taste (optional)

Steps:

  • in large nonstick skillet, heat oil over med-high heat, brown chicken and transfer to a bowl.
  • drain off any fat from pan, add onion (not green onion) garlic and black pepper, fry over medium heat until onion is soft, about 5 minutes, sprinkle with flour, cook stirring for 1 minute.
  • return chicken along with juices from chicken to pan.
  • add evaporated milk, cook stirring and without boiling, until thick enough to coat back of spoon, about 5 minutes. adjust seasoning if needed.
  • meanwhile, in pot of boiling salted water cook penne until tender but firm, about 12 minutes, add spinach, drain and return to pot, add chicken mixture, red pepper, basil, lemon juice and green onions: toss to combine.
  • serve while hot. if desired spinkle indivdual servings with hot pepper flakes.

blackened seasoning---mix together the following and store in a empty spice container
2 tsp salt
2 tsp oregano
2 tsp thyme
1 tsp black pepper
1 tsp white pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp cayenne pepper
CREAMY CAJUN SPINACH INGREDIENTS
4-5 boneless skinless chicken breasts
8 oz angel hair or linguine, cooke al dente
2 Tbsp butter
1 bunch green onions sliced thin
1/2 c chopped red pepper
3 c thinly sliced fresh spinach leaves
1/3 c sundried tomatoes, chopped
1 c milk, 2%
1 can(s) cream of chicken soup
2 c whipping cream
1/4 tsp salt
1/2 tsp dried basil
1/4 tsp black pepper
1/2 tsp garlic powder
1 tsp blackened seasoning from above
2 tsp adobe sauce from canned chipotle pepper, i always have these in the refrigerator for different recipes just store in a plastic container after opening lasts like salsa
1/2 c parmesan cheese
oil for frying chicken

Steps:

  • 1. heat oil in pan (I prefer cast iron) sprinkle all sides of chicken (I coat quite heavily), fry chicken in hot oil approimately 4-5 minutes per side until cooked through. remove from pan and allow to cool. when cool slice diagonally or into whatever size pieces you want. set aside
  • 2. in a large pan over medium heat, melt butter, saute green onions (I save about a 1/4 cup out for garnish), red pepper, spinach, and sundried tomatoes until just turning tender.
  • 3. reduce heat add milk, cream,chicken soup,salt, basil, black and white pepper, garlic powder, blackened seasoning, adobe sauce and chicken. heat through and stir in parmesan to cheese to thicken. (if this is not thick enough you can thicken with a small amount of cornstarch dissolved in small amount of water)
  • 4. pour over hot pasta and garnish with grated parmesan cheese and green onions. ENJOY

A simple pasta dish with chicken, asparagus and shrimp -- topped with a delicious creamy lemon rosemary sauce.

12 oz. pasta (I used mostacolli)
3 Tbsp. olive oil
1 Tbsp. fresh rosemary, finely chopped
2 boneless, skinless chicken breasts, pounded to even thickness
1 bunch (about 1 lb.) fresh asparagus, ends trimmed and cut into bite-sized pieces
3 cloves garlic, minced
1 tsp. lemon zest
1 tsp. lemon juice
2/3 cup (about 1 carton) Greek yogurt, plain
1/3 cup grated Parmesan cheese
2 cups fresh baby spinach
optional garnish: extra shredded Parmesan and/or chopped fresh parsley

Steps:

  • Prepare pasta al dente according to package instructions. (I would add the pasta to the boiling water around the time you begin cooking the asparagus.)
  • Heat 2 Tbsp. oil in a large skillet over medium-high heat. (You will know that it is ready when the oil is shimmering, or it sizzles when you place a drop of water in the oil.) Season both sides of the chicken with a pinch of salt and freshly-cracked black pepper. Add the chicken to the skillet and cook for 3-4 minutes on each side, or until the chicken is fully cooked and the juices run clear. Remove chicken and set aside. Wait a few minutes, then slice the chicken into thin strips.
  • In the same skillet, add the remaining tablespoon of olive oil. Add asparagus, garlic, lemon juice and zest, and rosemary and saute for 4-5 minutes until the asparagus is cooked but still slightly crisp. Remove skillet from heat. Stir in Greek yogurt, Parmesan cheese, and baby spinach.
  • Once the pasta is finished cooking, drain the pasta but reserve 1/4 cup pasta water. Toss together the pasta, creamy vegetable mixture and the chicken. Add some of the reserved pasta water if needed to thin the sauce. Serve immediately, garnished with extra Parmesan and/or chopped fresh parsley.

1 - 1/2 c uncooked penne pasta
1 lb boneless skinless chicken breasts, cut into 1 - inch cubes ( i used a rotisserie chicken )
1/2 c chopped onion
3 clove garlic
1 c heavy whipping cream
2 tsp olive oil
1 can(s) ( 10 3/4 ounces ) condensed cream of mushroom soup
6 c coarsley chopped or torn fresh spinach
2 c shredded mozzarella cheese
1/2 tsp pepper
salt to taste

Steps:

  • 1. Cook pasta according to package directions. Meanwhile, in a Dutch oven over medium heat, cook and stir chicken and onion in oil for 5 minutes or until chicken is no longer pink. ( if using a rotisserie chicken, skip the browning part ) just saute the garlic and onions.
  • 2. Stir in soup and cream. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2 minutes.
  • 3. Stir in the spinach, cheese and pepper; cook for 1-2 minutes or until spinach is wilted and cheese is melted.
  • 4. Drain pasta; add to chicken mixture and toss to coat.
  • 5. Note: I have tried this with other cream soups as well, also have added roasted red peppers. You could add just about anything to this, and it would still be delicious. Enjoy!

2 cloves garlic, minced

4 cups loosely packed baby spinach leaves, chopped
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 WYLER'S Instant Bouillon Chicken Flavored Cube
2 Tbsp. chopped drained oil-packed sun-dried tomatoes
2 Tbsp. chopped fresh oregano
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium-high heat. Add garlic; cook and stir 1 min. Add half the chicken; cook 2 min. or until lightly browned, stirring frequently. Remove from skillet. Repeat with remaining chicken; return all chicken to skillet. Add spinach; cook and stir 1 min. or until spinach starts to wilt.
  • Drain pasta, reserving 3/4 cup of the cooking water. Mix reserved water with cream cheese and bouillon in small bowl until blended. Add to chicken with sun-dried tomatoes; mix well. Cover; cook on low heat 5 min. or until chicken is done. Stir in pasta and oregano; cook, uncovered, 1 min. or until heated through, stirring frequently. Stir in feta cheese.
