Simmering horseradish in cream tempers its pungency; that's the first step in making this distinctive version of mashed potatoes, which nicely complements a sumptuous main course.

1 1/2 cups heavy cream
1/2 cup finely grated peeled fresh or prepared (drained) horseradish
3 pounds Yukon gold potatoes, peeled and cut into 2-inch chunks
Coarse salt
3 tablespoons unsalted butter

Steps:

  • Heat the cream and horseradish in a small saucepan over medium heat until just simmering. Remove from heat.
  • Cover potatoes with cold water in a saucepan. Bring to a boil; add salt. Cook until tender, about 8 minutes; drain.
  • Force potatoes through a ricer or food mill into a bowl. Stir in butter and the cream mixture. Season with salt.

Number Of Ingredients 6

2 lbs potatoes (Yukon Gold, red or Russet varieties work well)
1 c milk, warm
2 tbs unsalted butter
2 tbs horseradish (store-bought)
kosher salt and fresh ground pepper
1/4 c olive oil

Steps:

  • Warm the milk and butter in a small saucepan over medium heat until the butter melts and set aside. Peel and quarter the potatoes so they are of even size--this will ensure they cook consistently. Place in a medium saucepan with cold water to cover. Bring to a boil, then add 1 tsp of salt. Reduce the heat and simmer for 15 to 20 min, until the potatoes are very tender. Drain, and then pass the potatoes through a food mill or a ricer into a large mixing bowl (alternatively, you can use a potato masher or a large fork). Stir in the warm milk and butter mixture until it is absorbed and the mixture is smooth. Add the 3 tbs of horseradish, season with salt and pepper and combine well. Finish it off by stirring in 1/4 c olive oil. Serve hot.

I make this creamy horseradish sauce that goes great on prime rib, roast and sandwiches. One day I thought I bet that would be good in mashed potatoes and its great. The horseradish enhances the potatoes and changes up the taste just a bit. It is really good. Try it.

6 large yukon gold potatoes
1/2 c sour cream
1/2 c whipped cream cheese
1 Tbsp prepared horseradish
1/2 stick butter
salt and pepper to taste

Steps:

  • 1. Peel and cook potatoes in salted boiling water until tender.
  • 2. Mix together sour cream, cream cheese and horseradish.
  • 3. Press potatoes through a food ricer and then add horseradish mixture with butter use just enough sauce to make potatoes smooth. Salt and Pepper to taste
