1 cup fat-free milk
1/2 cup reduced-fat mayonnaise
1/2 cup reduced-fat sour cream
1 envelope ranch salad dressing mix
2 tablespoons dill weed
1/8 teaspoon celery seed
1/8 teaspoon pepper
2 large cucumbers, peeled and sliced
2/3 cup sliced red onion, separated into rings

Steps:

  • In a small bowl, combine the milk, mayonnaise, sour cream, dressing mix, dill, celery seed and pepper. Stir in the cucumbers and onion. Serve with a slotted spoon.

SMOKED SALMON WITH CREAMY CUCUMBERS



Smoked Salmon with Creamy Cucumbers image

1 English cucumber
Kosher salt
2 tablespoons sour cream
2 tablespoons chopped fresh dill
8 ounces smoked Irish salmon
Toasted pumpernickel bread, for serving

Steps:

  • Thinly slice the cucumber on a mandoline and place in a colander over a bowl. Season with 1/2 teaspoon salt and allow the cucumbers to sit for 5 minutes. Squeeze out the excess water and place the cucumbers in a clean medium bowl. Add the sour cream, dill and 1/4 teaspoon salt and stir with a rubber spatula to combine.
  • Lay the smoked salmon on one half of a platter lightly, so there is movement to the plate, leaving open the other half of the platter. Pile the cucumber mixture on a quarter of the platter or spoon into a bowl that fits on the platter. Serve the toasted pumpernickel bread on the other quarter of the platter.

1 English cucumber
1/2 cup white wine vinegar
Big pinch sugar
Salt and freshly ground black pepper
2 tablespoons olive oil
4 tablespoons snipped fresh dill, plus fronds for garnish
1/2 cup creme fraiche
1 tablespoon prepared horseradish
1 tablespoon coarse grain mustard
1/4 lemon, juiced
2 bunches watercress, stems trimmed
1 cup yellow and red grape tomatoes
8 ounces smoked salmon, torn into pieces
1 lemon, cut into wedges

Steps:

  • Peel alternating strips from the cucumber, leaving some peel to create stripes, and slice into thin rounds. In a large bowl, combine the vinegar, sugar and some salt and pepper. Whisk in the olive oil, then 2 tablespoons of the dill. Add the cucumbers and toss. Combine the creme fraiche, horseradish, mustard, lemon juice and the remaining 2 tablespoons dill in a small bowl. Season with salt and pepper. Using a slotted spoon, scoop the cucumbers from the vinaigrette and mound on a large platter. Dip the leaf ends of the watercress in the remaining vinaigrette and mound on the platter. Toss the tomatoes in the vinaigrette, remove with a slotted spoon and mound on the platter. Lay the salmon over the mounds. Spoon the creme fraiche dressing over the top. Garnish the platter with lemon wedges and serve immediately.

Steps:

  • Toss cucumber with salt in a colander and let drain 15 minutes.

4-5 medium size cucumbers
salt to sprinkle over the cucumbers
1-1/2 cups heavy whipping cream
1/4 cup 5% white vinegar
1/4 tsp. salt
1/4 tsp. black pepper
already prepared 'hot' mashed potatoes

Steps:

  • 1. Peel and (thinly slice) each cucumber into a colander. And between each layer of cucumber, peeled and sliced, sprinkle with a bit of salt over each. (I normally set my colander inside a larger bowl, to allow the liquid from the cucumbers, to drain into the larger bowl.)
  • 2. Let cucumbers sit in the colander for 1-3 hours. Then transfer the cucumbers into another bowl. (Discard the remaining liquid that has drained into the larger bowl.)
  • 3. Now add the cream and vinegar to the cucumbers, and gently stir the cucumbers.
  • 4. Add the salt and pepper, and once again, gently stir the cucumbers.
  • 5. Cover the cucumbers, and place the bowl in the refrigerator for at least 2 hours.
  • 6. Serve the creamy cucumbers over the 'hot' mashed potatoes. (For each serving: Just place desired amount of mashed potatoes onto your plate, and top with desired amount of the creamy cucumbers.)
  • 7. Note: Before I top my potatoes with the cucumbers and cream, I first top my taters with a bit of butter, and let it melt into the potatoes just a bit. I just enjoy mine served this way!

1 pound cucumbers, peeled
1 tablespoon salt
2 tablespoons butter
½ cup chopped onion
ground black pepper to taste
½ cup sour cream
1 pinch dried dill weed

Steps:

  • Cut cucumbers in half lengthwise and scoop out the seeds. Cut into 3/4 inch chunks. If the chunks aren't firm, place them in a colander and sprinkle with salt. Let drain 20 minutes (if they are firm you may omit this step).
  • Place butter in a medium to large skillet over medium heat. When it melts, add the onion and cook 5 minutes. Stir in the cucumbers and cook another 5 minutes. Sprinkle with black pepper to taste.
  • Reduce heat to low and stir in sour cream and plenty of dill. Stir and serve warm.

This cucumber salad is quite delish! I usually serve it immediately after preparing it, but you could refrigerate it for 30 minutes before serving it.

6-7 medium size cucumbers, peeled & sliced thin
2 tablesp. finely chopped red or white onion
2 tablesp. thinly sliced green onions (or use red onion)
1 cup mayonnaise
1 cup sour cream
1 (1 oz.) packet hidden valley ranch salad dressing mix
1-1/2 tsp. dried dill weed
1/2 tsp. celery seed
1/4 tsp. black pepper
1/8 tsp. black pepper

Steps:

  • 1. In a large bowl mix together, the mayonnaise, sour cream, ranch dressing mix, dill weed, celery seed, plus the 1/4 teaspoon and 1/8 teaspoon of black pepper.
  • 2. Add the sliced cucumbers and onion, and gently stir to mix everything together.
  • 3. Serve salad immediately.
  • 4. Note: I have made this salad twice, once using chopped white onion, and thinly sliced green onion. The second time I made this salad, I added 4 tablespoons of finely chopped red onion, in place of the white and green onion, and that tasted great in the salad too! Also, when I added the sliced cucumbers, they were cucumbers I had in the refrigerator, which help the salad to stay cool.

My Great Aunt taught me this recipe when she was visiting one summer. It is super easy and I have never written it down just because I have always remembered it. My husband asks for this all the time!

2 large cucumbers
3 scoop(s) of mayonnaise
- salt and pepper

Steps:

  • Nothing is really measured, it depends on how much you want to make, for a family of four I start with 2 pretty good sized cucumbers. I peel and slice thin into a medium bowl.
  • I than add 3 good scoops of mayonnaise with a tablespoon. Season with salt and pepper. Mix to coat the cucumbers well. I add a little more salt and pepper at this time. I like to see the pepper floating in the sauce when it's done.
  • Cover and refrigerate several hours. Stir a couple of times while it's refrigerating. After several hours the mayonnaise will become creamy and the cucumbers are softer. Serve.
  • You can use more cucumbers and mayonnaise for more people.
