Steps:
- Peel, chop and slice eggs.
- In a heavy saucepan melt butter. Stir in flour, dry mustard, salt and pepper.
- Add Milk (all at once). Cook and stir until mixture is bubbly and thick. Continue to cook about 2 minutes more.
- Carefully stir in eggs, heat through.
- Serve over buttered toast points.
- Garnish with paprika or parsley.

CREAMED EGGS OVER BUTTERMILK BISCUITS
Fresh Buttermilk Biscuits served with warm sliced hard-boiled eggs and topped with a rich cream sauce.

Steps:
- Place eggs in a medium saucepan, cover with cold water, add vinegar, 1-teaspoon fine sea salt and bring water to a full boil. Cook for 6 minutes.
- In a small saucepan melt butter and stir in pastry flour. Cook for 2-3 minutes stir the flour to prevent from burning.
- Slowly stir in heavy cream, fresh grated nutmeg, white pepper and cook until sauce has thickened.
- Cut biscuits in half and place on warm plates. Slice hard-boiled eggs and layer over biscuits. Season sauce with salt and white pepper to taste.
- Pour cream sauce over eggs and serve. Garnish plates with sliced Heirloom Tomatoes.

CREAMED EGGS OVER TOAST
My mama used to make this for us for breakfast and dinner and I still love it today. You can adjust the recipe to your taste by adding more bacon or less onion, it is up to you.

Steps:
- Put the eggs in cold water with salt in a pan and boil approximately 15 minutes. Drain and put ice water in the pan so the eggs will be easier to peel.
- Peel the eggs and set aside.
- Fry the bacon until crispy and remove from the pan. Drain on paper towels.
- Add the chopped onion to the bacon grease and saute until transparent.
- Crumble the bacon and chop the eggs and add to the skillet with the onion.
- Add flour and stir until flour has browned a little bit.
- Add the milk and cook on medium until it thickens like gravy. You may need to add some water if it gets too thick. If it is too thin, make a thickening with 1 T. flour and a little bit of water and pour in to gravy and let thicken. Add the salt and pepper to taste.
- You can either put this over toast or biscuits but we always just used toast.
- Enjoy!

- Add the green onions; stir to combine.
- Add margarine to a skillet over medium heat; let melt.
