CREAMED DRIED BEEF - EVEN FOR SUPPER

Creamed dried beef - even for supper image

This is a little variation on the regular "SOS" your Momma served for breakfast on the weekends.. I served it to my hungry family even for supper, and there were never any leftovers!

Categories     Other Main Dishes

Time 30m

Number Of Ingredients 8

1/2 lb dried beef chipped (or 2 pre-packed packages)
1/2 stick butter or high quality margarine
2 c milk
2 Tbsp (heaping) white flour
1/2 Tbsp ground black pepper or to taste
1/4 tsp ground paprika
8 oz shredded mozarella (or other favorite) cheese
4-6 toasted english muffins or other hearty bread subsitute

Steps:

  • 1. Gather all the ingredients together. This dish cooks rather quickly. If you have kids, enlist them to start toasting the English Muffins or bread! Prepare your beef by pulling it apart into shreds.
  • 2. Melt the butter in a deep sided non-stick pan. When it begins to get bubbly, add the flour, and continue to stir until the flour is dissolved. Add the dried beef and sautee on low to moderate heat until it begins to darken (about 5-8 minutes).
  • 3. Add the milk, and increase to heat to moderate. Cook until it begins to steam, then add the cheese all at once. At this point, you are "get your hands washed, phones off, 5 minutes to eat.."
  • 4. Add the paprika and the ground black pepper as the cheese melts, but keep stirring. The sauce will thicken and become rich. Take it off the heat, and either put the whole saucepan on the table or pur it in a large bowl. Serve immediately, it thickens more as it cools! Enjoy!

CREAMED DRIED BEEF (OR SOS)

Creamed Dried Beef (or SOS) image

If you've ever been in the military, you'll be familiar with this one. My Marine father taught me how to make it when I was a kid, and it's still one of my favorite breakfasts. I use 3 jars of dried beef simply because I love it. You may want try this recipe using only 2 jars the first time you make it. Some folks don't like...

CREAMED CHIPPED BEEF ON TOAST

Creamed Chipped Beef On Toast image

My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

CREAMED CHIPPED DRIED BEEF ON TOAST OR WAFFLES

Creamed Chipped Dried Beef On Toast or Waffles image

I've had this recipe for years given to me by my mother. I have to at least triple this when I make it. The recipe says 4 servings, but we like a lot on our toast. We love it for breakfast with fried eggs. Yummy! I also add ground black pepper to mine, but that's just how I like it. Cook and prep times are approximate.

CREAMED BEEF FOR SOS

Creamed Beef for SOS image

A Recipe that is always requested from my kids when they come and visit. I spent 20 years of my 28 years in the Air Force in the dining hall. I think I have perfected SOS (Creamed Beef).Very simple and quick. Serve over toast (Shingles) or biscuits or hashed brown potatoes. I know leaving the grease in is not real healthy but it really makes it tasty. If you use anything other then HAMBURGER or drain the grease it will not turn out.

ROB'S FAVORITE CREAMED DRIED BEEF

Rob's Favorite Creamed Dried Beef image

I prefer to use the dried beef from a local deli - ask to have it paper-thin sliced or chipped. I serve this over toasted wheat bread for my DH but it is also good served over a oven-baked russet potato. I found this recipe in the Fannie Farmer Cookbook.

" THE" CREAMED DRIED BEEF/CHIPPED BEEF RECIPE

This is a long-time favorite recipe of our Lancaster County, PA family passed down from my mom. She gets requests for it all the time and has to make double or triple this amount now whenever she makes it so everyone has some to take along home too. For me, it's a true comfort food if there ever was one! We always serve it over toast and/or homefried potatoes. My dad refer's to it as S.O.S. from his days in the service. (Recipe makes about 4 servings for our hungry family but it freezes very well so any leftovers won't go to waste.)

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 5

1/2 lb dried beef (chipped, available at your grocer's deli counter)
1/2 cup butter
1 cup flour
3 1/2 cups milk (I use whole milk and even some heavy cream to make it thick & creamy)
black pepper (to taste)

Steps:

  • Melt butter in 2 quart (non-stick) sauce pan or larger.
  • Shred dried beef by hand into small pieces.
  • Add dried beef to melted butter and cook over medium-high heat until edges curl (about 10 minutes but watch carefully-don't burn it).
  • Stir in flour and mix thoroughly.
  • Add milk, reduce heat to medium low and continue stirring frequently until mixture is smooth & bubbly. (Depending on how thick you like it, it may take from 20 minutes to 1 hours to achieve desired consistency).
  • When it's as thick as you'd like, bring to a boil, stirring constantly and boil 1 minute.
  • Remove from heat and serve over toast and/or home fried potatoes.
