  • In a skillet, cook sausage, onion and green pepper until sausage is no longer pink; drain. Add 1 cup stuffing mix, corn and parsley. Spoon into a greased 1-qt. baking dish.   • 1. This casserole my grandma made for me when I was a little girl. Peel 4 lg potatotes, dice and boil till till fork tender but not soft or they will mash up in the casserole. dice and fry onion, add ground beef, fry till no longer pink, add 2 cans creamed style corn. I let this simmer while the potatoes are boiling. Add the drained potatoes. Being from Wisconsin, I sprinkle my serving with grated cheddar cheese. It's also really yummy with French's fried onion rings sprinkled on top.

1 sleeve saltine crackers, crushed
1 Tbsp sugar

handful real bacon bits or bacon crumbled

Steps:

  • 1. Preheat oven to 375 degree F. In a 3 quart casserole; add the corn, saltines, sugar, salt & pepper. Mix eggs and add to casserole. Stir all well.
  • 2. Lay butter pats evenly over casserole and sprinkle with bacon. Bake 1 hour 15 - 30 minutes. If the corn starts drying too much on top, add some foil and finish baking.
  • 3. When serving, I mix the bacon into the corn. Enjoy!

1/4 level teaspoon garlic powder

1/8 teaspoon red pepper flakes
1 teaspoon cornstarch

  • 1. Pre-heat oven to 350 degrees. Grease a 2.5 quart pyrex dish.
  • 2. Melt a stick of butter over low heat in a small pan.
  • 3. Fine chop the red bell pepper, green onions and the jalapeno slices, set aside.
  • 4. In a medium mixing bowl add creamed corn, corn meal, cornstarch, sugar, garlic powder and stir to combine.
  • 5. Beat the two eggs and add to the mixture.
  • 6. Add fine chopped red bell pepper, green onions and jalapeno slices, add the melted butter, sprinkle with the red pepper flakes and stir.

1 sweet onion, chopped
1 stick butter, melt 6 tablespoons of it
3 eggs
1 c sour cream
1/3 c yellow corn meal
1/2 - 1 tsp kosher salt
1/2 -1 tsp fresh cracked black pepper
1 - 14 -15 oz can, creamed corn
1 c shredded cheddar cheese

  • 1. Preheat oven to 350 degree F.
  • 2. In a skillet; saute the onion and peppers with 2 tablespoons of butter.
  • 3. In a bowl whisk the remaining 6 tablespoons of butter with the eggs and sour cream.

2 bag(s) (16 oz.ea.) frozen white corn
1 pkg (8 oz.) cream cheese
1/2 c butter
1/2 c chopped green pepper
1/2 c onion, chopped fine
2 c shredded cheddar cheese
2 c diced or cubed cooked ham
FOR TOPPING (OPTIONAL):
4 slice bacon
2 Tbsp butter
3 slice bread

Steps:

  • 1. Spray the slow cooker with cooking spray. Place the corn into the slow cooker. Add cream cheese, butter, green peppers and onion, and ham.
  • 2. Cover and cook on HIGH until butter and cream cheese are melted, about 30 minutes.
  • 3. Stir in the shredded cheddar, cover, and cook on HIGH for about 2 hours.
  • 4. (Optional) After the first hour and a half, top with breadcrumb mixture and crumbled bacon. Turn setting to LOW for the last 1/2 hour.
  • 5. TO MAKE TOPPING: Cook 4 slices of bacon until crisp; drain on paper towels. Melt 2 Tbsp. butter in microwave. Tear up 3 slices bread into small crumbs and mix with melted butter. Spread the buttered crumbs over the corn mixture in the slow cooker and top with crumbled bacon. Continue cooking, covered, for another 1/2 hour, as stated above.
