COUNTRY GRAVY
Country gravy, also called sawmill gravy or white gravy, is a staple of hearty Southern cooking. It can be used as a creamy blanket for chicken fried steak or to accompany a plate of freshly baked biscuits at breakfast time. This recipe is a down-home classic that takes just 15 minutes to pull together.

Steps:
- After removing cooked meat from skillet or pan, add oil to drippings in skillet. Stir in flour, scraping up brown particles. Cook over medium-high heat 2 to 3 minutes, stirring constantly, until mixture is light golden brown.
- Stir in milk. Heat over medium-high heat, stirring constantly, until mixture is boiling and thickened. If gravy is too thick, stir in more milk, 1 tablespoon at a time, until desired consistency. Stir in salt and pepper.

BIG BATCH CREAMY GRAVY FOR A CROWD
This meatless gravy gets a kick from a whole lot of freshly ground black pepper. It's perfect for using in a fountain. Serve with biscuits and browned sausage.

- Melt butter in a saucepan over medium-high heat. Add flour and whisk until smooth, at least 2 minutes. Slowly add milk, whisking continuously until mixture is smooth, about 5 minutes.
- Stir half-and-half into the saucepan; season with salt and pepper. Add liquid smoke. Cook and stir until gravy is smooth and slightly thickened, 2 to 3 minutes more.

CREAM (WHITE) GRAVY
A good old fashion recipe I grew up on.

Steps:
- 1. Add 3 tablespoons of bacon grease or sausage grease to skillet over medium heat.
- 2. Add 3 tablespoons flour into pan and whisk into the grease until lightly browned.
- 3. Open evap milk and pour into a measuring cup; add 1 can of water and enough of whole, 2% or 1% milk to make 1-3/4 cups. Whisk milk slowly into flour mixture and cook until mixture thickens; stirring constantly. Add salt and pepper to taste.
- 4. NOTE: You can add crumbled, browned sausage to your gravy after the milk before it thickens.
- 5. NOTE: if gravy is too thick - whisk additional milk into gravy until correct consistency. If gravy is too thin: 1. Add 1-2 t. of flour into small jar with lid. 2. Add enough milk to make a pourable paste, 3. Shake jar to mix. 4. Whisk paste into gravy slowly to thicken.
WHITE CREAM SAUCE/GRAVY
I was abroad in Deutchland (Germany) and came across this recipe which is very similar to Swedish Cream Sauce and is very tasty on meatballs, porkchops, potatoes, rice, and biscuits.

Steps:
- Using an 8" skillet bring 1 cup of beef broth to boil and reduce heat to simmer. Stir in 1/2 cup of heavy whipping cream and add 1 tbs of soy sauce. Mix 2 tbs of white flour with 2 tbs of water and mix until paste forms then scoop into skillet. Use wisk to stir to beat out the lumps from the flour while still keeping sauce at a simmer. Sprinkle 1 tbs of sugar over top and wisk in after it caramalizes and dash salt and black pepper to taste. Keep simmering and stirring until sauce thickens and starts to stick to wisk a little then it is done.
