BEET SOUP



Beet Soup image

This beet soup recipe is made with red beets and potatoes and blended to create a rich, velvety creamy textured soup.

1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
4 large red beets, peeled and diced (roughly 1.5 lbs)
1 medium white potato, peeled and diced
4 cups chicken or vegetable broth
1 teaspoon salt
1/2 teaspoon ground pepper
Sour cream or crème fraîche
Dill, fresh

Steps:

  • In a large pot on medium heat, warm the olive oil. Add onion and garlic and cook for 3-4 minutes until onions are soft and translucent.
  • Add beets and potatoes, stir to coat with the onion mixture.
  • Add broth, just enough to cover the beets and stir until well combined. (Only add enough broth to cover the vegetables, you may need more or less depending on the size of your beets, as you don't want a runny soup and you can always add more at the end if needed.)
  • Bring mixture to a boil, then reduce to a simmer and cook for 30 minutes until the beets are tender and can easily be pierced with a fork.
  • Once cooked, using an immersion blender or in batches using a bar blender, purée until smooth.
  • Once blended, season generously with additional salt and pepper to taste and serve immediately with a dollop of sour cream and a sprig of dill.
  • Any leftover soup can be cooled completely and stored in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.

I adapted this from a vegetarian soup while my twin toddlers were going through a soup-only phase. They love it. Luckily the rest of the family enjoys it too! It's a nice hearty puree, super-easy to put together, especially if you roast the potatoes and beets beforehand.

2 cups diced potatoes
2 cups diced peeled beets
olive oil, divided
salt and ground black pepper to taste
1 stalk celery, diced
1 onion, diced
1 clove garlic, minced
4 cups chicken broth
½ teaspoon dried thyme
1 bay leaf
1 ½ cups whole milk
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place the potatoes and beets into a baking dish, and drizzle with 1 tablespoon olive oil; season with salt and black pepper.
  • Roast in the preheated oven until tender, about 1 hour; allow to cool.
  • Heat 2 tablespoons of olive oil in a large soup pot over medium heat, and stir in the celery, onion, and garlic. Cook, stirring often, until the onion is translucent, about 5 minutes. Mix in the cooked vegetables, chicken broth, thyme, and bay leaf, bring to a boil, and reduce heat. Simmer until the celery is very tender, about 45 minutes.
  • Remove from heat, and discard the bay leaf. Puree the mixture in the pot with an immersion blender until very well blended; stir in the milk and lemon juice to serve.

3 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, chopped
6 medium beets, peeled and chopped
2 cups beef stock
salt and freshly ground pepper
heavy cream

Steps:

  • Warm olive oil in a large saucepan over medium heat. Stir in onions and garlic; cook until soft but not browned, about 5 minutes. Stir in beets, and cook for 1 minute.
  • Stir in stock, and season with salt and pepper. Bring to a boil; cover, and simmer until the beets are tender, about 20 to 30 minutes. Remove from heat, and allow to cool slightly.
  • In batches, add soup to a food processor, and pulse until liquefied. Return soup to saucepan, and gently heat through. Ladle into bowls, and garnish with a swirl of cream.

1 pound (about 3) beets, roasted, peeled and sliced
1 cup minced onion
3 tablespoons butter
4 cups chicken broth
1 fresh thyme or 1/2 teaspoon dried
1 bay leaf
Salt and pepper
1/2 cup heavy cream
2 to 3 tablespoons red wine vinegar
Lightly whipped cream and dill sprigs for garnish (optional)

Steps:

  • In a large saucepan set over moderate heat cook beets and onion in butter, stirring occasionally, for 5 minutes. Add broth, thyme, bay leaf and salt and pepper to taste and simmer soup, covered, for 15 minutes. Discard bay leaf. Transfer to a food processor or blender and puree, in batches if necessary, until smooth. Return soup to saucepan, stir in cream and vinegar and bring soup to a simmer, stirring, until heated through. Garnish each serving with cream and dill, if desired.;

My Polish Family's Red Beet Soup image

This is the red beet soup that I grew up eating. I make it for my family now, my mother still makes it, her mother made it, and probably her mother made it too. So very rich and good. This is comfort food for me, especially when I am homesick.

2 lbs beef short ribs
salt
pepper
8 red beets, peeled and cubed
4 potatoes, peeled and cubed
1 quart half-and-half
2 cups sour cream

Steps:

  • Place beef short ribs, salt and pepper in a stock pot.
  • Cover with water (at least 3 quarts) and bring to a boil.
  • Let simmer until the meat falls off the bone.
  • Skim off any "scum" and visible fat.
  • Add cubed red beets, ensuring that there is enough liquid to cover them.
  • Bring back to the boil.
  • Simmer until red beets are tender.
  • Take out about 3 cups of the soup mixture including red beets but excluding meat, and place in blender. Blend until mostly smooth.
  • Add the blended mixture back to the pot.
  • Add cubed potatoes and simmer until tender.
  • Add half and half, and sour cream.
  • Mix well.
  • Be certain to not let the soup come to a boil once the dairy products have been added.
  • Check for seasoning. Adjust with salt and pepper as necessary.
  • Serve and enjoy.

3 large beets, about 3/4 pound, trimmed top and bottom
Salt to taste if desired
1 3/4 cups beef broth
2 tablespoons cider vinegar
1/4 cup water
2 tablespoons caraway seeds
2 ounces ham, cut into thin slices
1 cup heavy cream
Freshly ground pepper to taste

Steps:

  • Put the beets in a kettle; add water to cover and salt to taste. Bring to a boil, cover and cook 30 minutes or longer until tender. Cooking time will depend on the size and age of the beets. Drain beets and peel.
  • Put two beets into a food processor or electric blender and blend thoroughly. Add 1/2 cup of the beef broth and blend once more. Spoon and scrape the mixture into a saucepan.
  • Cut the remaining beet into thin slices. Stack the slices and cut them into thin strips (julienne). There should be about 1/3 cup.
  • Put the vinegar, 1/4 cup water and caraway seeds in a saucepan and bring to a boil. Add the remaining broth and cook 5 minutes. Strain the broth and discard the seeds.
  • Heat the puree of beets and pour in the caraway broth. Bring to a boil.
  • Cut the ham into very thin strips. There should be about 1/4 cup.
  • Whip cream and add it to the soup, beating with a wire whisk. Add salt and pepper; bring to simmer.
  • Pour the soup into 6 cups and garnish each portion with thin strips of beet and ham.
