LAYERED PEAR-CREAM CHEESE MOLD



Layered Pear-Cream Cheese Mold image

This pretty lime gelatin mold has two layers. Both are studded with pears and one is made with cream cheese and pecans. Serve as a salad or dessert.

Number Of Ingredients 6

1 can (16 oz.) pear halves, undrained
1 pkg. (8-serving size) JELL-O Lime Flavor Gelatin
1-1/2 cups cold ginger ale
2 Tbsp. fresh lemon juice
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup chopped pecans

Steps:

  • Drain pears, reserving liquid. Add enough water to liquid to measure 1-1/2 cups; bring to boil in small saucepan. Chop pears; set aside.
  • Stir boiling liquid into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold ginger ale and lemon juice. Pour 1 cup of the gelatin into 5-cup mold. Refrigerate about 30 minutes or until slightly thickened (spoon drawn through leaves definite impression). Arrange some of the pears in mold, pushing into gelatin in mold.
  • Meanwhile, gradually add remaining gelatin to cream cheese in large bowl, mixing with wire whisk until well blended. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Stir in remaining pears and pecans. Spoon over gelatin layer in mold.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

This is a cool and easy salad or dessert for the summer. I used to make it when I was young and still do!

- 1 (6 oz. pkg )lime jello
- 1/2 t. salt
- 2 c boiling water
- 1 t. lemon juice
- 1 (1 pound 13-oz.) can pear halves
- cold water
- 1/8 t. ginger
- 1 (8 oz) package cream cheese
- 1/2 c chopped pecans

Steps:

  • Dissolve jello and salt in boiling water. Stir in lemon juice. Drain pears,reserving syrup. Measure syrup,add enough cold water to make 1 1/2 c and stir into jello. Pour half the jello into bowl and chill until thickened. Dice pears and fold into thickened jello and spoon mixture into 1 1/2 quart mold. Chill until set,but not firm. Chill remaining half of jello mixture until slightly thickened. In a large bowl,add cream cheese,gradually blend in slightly thickened jello and ginger, beating with a mixer until light and fluffy and thickened.Stir in nuts. Spoon over set jello in mold and chill until firm. Unmold and garnish with salad greens ,if desired.

This was one of my Dad's favorite dishes,Mom served it as a dessert and sometimes as a salad. This is the original recipe,I don't remember adding the nuts but if you like nuts add them.

My mother made this every holiday. I think the original is supposed to be layered. I am not sure. I just mix it all together and let things fall as they may. She didn't have a food processor, so I don't think this is, exactly, her recipe. It is what I do these days.

2 (3 ounce) boxes Jello gelatin, lime (or lemon or equivalent even sugar free)
8 ounces cream cheese
20 ounces crushed pineapple, drain liquid and set aside

Steps:

  • Start jello according to the box.
  • Reduce the 2nd half of the water by the amount of pineapple juice was in the can.
  • Blend all in the food processor.
  • Set in mold.
  • Unmold and plate before serving.
  • Be ready for there to be settling of the ingredients, that's part of the fun.

1/2 cup nuts (optional)
8 ounces cola (very cold)
1 cup dark sweet cherry, pitted and drained

  • Dissolve Jell-O in boiling water, as directed on pkg (don't add in any extra cold water).
  • Cool to room temperature.
  • Add cola, cream cheese, cherries and nuts.

cold water
1-1/2 cups boiling water
1 pkg. (8-serving size) JELL-O Orange Flavor Sugar Free Gelatin
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened

Steps:

  • Drain pineapple, reserving juice. Add enough cold water to reserved juice to measure 1-1/2 cups. Stir boiling water into dry gelatin in large bowl at least 2 min. until completely dissolved. Stir in measured pineapple juice and water. Remove 1 cup of the gelatin; let stand at room temperature.
  • Stir 1/2 of the crushed pineapple into remaining gelatin. Pour into 6-cup mold sprayed with cooking spray. Refrigerate 2 hours or until set but not firm (gelatin should stick to finger when touched and should mound). Gradually add reserved 1 cup gelatin to Neufchatel in medium bowl, stirring with wire whisk until well blended. Stir in remaining crushed pineapple. Pour over gelatin layer in mold.

1/2 cup cold water
1 (15 1/2 ounce) can pineapple chunks, undrained
1/3 cup sugar
1 lemon, juice of

1 orange, peeled, sectioned, and diced
1/2 cup chopped pecans
1/2 cup flaked coconut

Steps:

  • Sprinkle gelatin over cold water; let stand 1 minute.
  • Drain pineapple, and reserve juice; add enough water to juice to make 1 cup. Place juice in a 2-quart saucepan, heat to boiling; add gelatin mixture, stir until gelatin dissolves. remove from heat, stir in sugar, lemon juice and cream cheese, using a wire whisk to blend. 1 cup boiling water

This is a variation of other strawberry cream cheese salad recipes, as it uses fewer ingredients, does not call for sour cream, and uses the small size Jello package. This is a wonderful brunch dish, especially when served with something like Recipe #319338. It's often used for showers, too. This recipe was given to me by a friend's mother many years ago. (Cooking time is chilling time.)

1 (3 ounce) package strawberry Jell-O gelatin dessert
1 (8 ounce) package cream cheese, softened to room temp
1/2 cup heavy cream
1 cup celery, diced fine
2 cups crushed pineapple, well drained
3/4 cup nutmeats

Steps:

  • Prepare jello according to package instructions. Have jello cold, but not set.
  • Blend cream cheese and cream till smooth. Add to jello. (Don't worry about any lumps of cream cheese that may be in the mixture. They are quite pretty - and tasty - in the final product!).
  • Add diced celery, drained pineapple, and nuts. Stir till well mixed.
  • Pour into mold and refrigerate until firm.

RASPBERRY AND CREAM CHEESE MOLD

1 (3-ounce) package cream cheese
1/3 cup walnuts finely chopped
1 1/2 cups water boiling
1 (6-ounce) package raspberry jello
2 (10-ounce) packages raspberries partially thawed
Lettuce leaves

Steps:

  • 1. Divide cream cheese into 18 equal portions shape into small balls. Roll in nuts, pressing hard enough to make nuts cling to cheese set aside.2. In a medium bowl pour boiling water over gelatin. Stir until gelatin is dissolved. Add raspberries and stir until thawed. Pour 1/2 cup mixture into a 4-cup mold. Arrange cheese balls in mold cover and chill just until set, about 30 minutes. Gently pour remaining gelatin over balls. Cover and chill until firm.3. Unmold onto a chilled plate. Garnish with lettuce leaves.
