LAYERED PEAR-CREAM CHEESE MOLD
This pretty lime gelatin mold has two layers. Both are studded with pears and one is made with cream cheese and pecans. Serve as a salad or dessert.

Steps:
- Drain pears, reserving liquid. Add enough water to liquid to measure 1-1/2 cups; bring to boil in small saucepan. Chop pears; set aside.
- Stir boiling liquid into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold ginger ale and lemon juice. Pour 1 cup of the gelatin into 5-cup mold. Refrigerate about 30 minutes or until slightly thickened (spoon drawn through leaves definite impression). Arrange some of the pears in mold, pushing into gelatin in mold.
- Meanwhile, gradually add remaining gelatin to cream cheese in large bowl, mixing with wire whisk until well blended. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Stir in remaining pears and pecans. Spoon over gelatin layer in mold.
- Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

- Dissolve jello and salt in boiling water. Stir in lemon juice. Drain pears,reserving syrup. Measure syrup,add enough cold water to make 1 1/2 c and stir into jello. Pour half the jello into bowl and chill until thickened. Dice pears and fold into thickened jello and spoon mixture into 1 1/2 quart mold. Chill until set,but not firm. Chill remaining half of jello mixture until slightly thickened. In a large bowl,add cream cheese,gradually blend in slightly thickened jello and ginger, beating with a mixer until light and fluffy and thickened.Stir in nuts. Spoon over set jello in mold and chill until firm. Unmold and garnish with salad greens ,if desired.

This was one of my Dad's favorite dishes,Mom served it as a dessert and sometimes as a salad. This is the original recipe,I don't remember adding the nuts but if you like nuts add them.

My mother made this every holiday. I think the original is supposed to be layered. I am not sure. I just mix it all together and let things fall as they may. She didn't have a food processor, so I don't think this is, exactly, her recipe. It is what I do these days.

- Reduce the 2nd half of the water by the amount of pineapple juice was in the can.
- Blend all in the food processor.
- Set in mold.
- Unmold and plate before serving.
- Be ready for there to be settling of the ingredients, that's part of the fun.

CHRISTMAS CHERRY CREAM CHEESE-JELLO MOLD
This makes a wonderful dessert for the holidays, and is very easy to prepare, just make sure that you chill it well before serving --- you might want to make two of these to serve if you have a larger dinner party, you can make this in single serving bowls also instead of a large mold :)

VELMA'S STRAWBERRY CREAM CHEESE SALAD MOLD
This is a variation of other strawberry cream cheese salad recipes, as it uses fewer ingredients, does not call for sour cream, and uses the small size Jello package. This is a wonderful brunch dish, especially when served with something like Recipe #319338. It's often used for showers, too. This recipe was given to me by a friend's mother many years ago. (Cooking time is chilling time.)

- Prepare jello according to package instructions. Have jello cold, but not set.
- Blend cream cheese and cream till smooth. Add to jello. (Don't worry about any lumps of cream cheese that may be in the mixture. They are quite pretty - and tasty - in the final product!).
- Add diced celery, drained pineapple, and nuts. Stir till well mixed.
- Pour into mold and refrigerate until firm.
