1 1/2 cups unsalted butter (2 1/2 sticks), room temperature
3/4 cup plus 3 tablespoons sugar
2 large egg yolks
1 large egg
1/2 cup ground blanched almonds
1 tablespoon vanilla extract
1 cup fresh cranberries, coarsely chopped
1 3/4 cups sifted unbleached all purpose flour
1 1/2 teaspoons pumpkin pie spice
1/2 cup dried cranberries or currants
Powdered sugar

Steps:

  • Preheat oven to 350°F. Using electric mixer, beat butter and 3/4 cup sugar in large bowl until fluffy. Add yolks and egg 1 at a time, beating after each addition. Beat in almonds and vanilla.
  • Mix fresh cranberries and remaining 3 tablespoons sugar in small bowl. Let stand 5 minutes. Combine flour and spice in medium bowl.
  • Stir fresh and dried cranberries into butter mixture. Add flour mixture and stir until well combined. Spoon batter into ungreased 9-inch tart pan with removable bottom. Smooth top. Bake until top of cake is golden and dry and center of cake is firm, about 55 minutes. Transfer to rack and cool completely.
  • To serve, sift powdered sugar over top of cake. Remove rim from pan and transfer cake to platter.

This was originally from the "Moosewood Sundays" cookbook and was an instant hit around here...part coffeecake, part dessert - yummy! I've never had almonds in the house, but can vouch that it's great even without them. I've added in a bit of orange rind to the cranberry mix before too, to give it a nice zing. I have always used a Bundt pan...makes for a very pretty presentation for breakfast, brunch, tea, dessert, or gifts, especially around the winter holidays.

2 cups cranberries (said fresh, I use frozen)
1/2 cup brown sugar
1/2 cup almonds, finely chopped
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup butter
1 cup sugar
1 teaspoon vanilla
1/2 pint sour cream
2 eggs, beaten
2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt

Steps:

  • Coarsely chop cranberries.
  • Combine cranberries with brown sugar, almonds, cinnamon and nutmeg; set to the side.
  • Cream butter and sugar.
  • Add vanilla, sour cream, and eggs; mix thoroughly.
  • Sift together flour, baking soda, baking powder, and salt.
  • Stir into egg mixture just until moistened.
  • Pour 1/2 of batter into greased Bundt pan or 8" round cake pan.
  • Spread 1/2 of cranberry mixture over the top.
  • Repeat with remaining batter and cranberries.
  • Bake 50-60 min at 350.
  • Remove from pan and cool on rack.
  • Dust with powdered sugar.

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1/4 cup margarine or butter
1 egg, well beaten
3/4 cup fat-free milk
1 1/2 cups Kellogg's® corn flakes
3/4 cup canned whole cranberry sauce
2 tablespoons margarine or butter, melted
1/2 cup firmly packed brown sugar

Steps:

  • 1. Stir together flour, baking powder, salt and granulated sugar. Using pastry blender, cut in the 1/4 cup margarine until mixture is crumbly.2, In large mixing bowl, combine egg and milk. Add flour mixture, stirring only until combined. Fold in 1 cup of the KELLOGG'S CORN FLAKES cereal. Spread batter in 8 x 8 x 2-inch baking pan or 8-inch round cake pan coated with cooking spray. Spoon cranberry sauce evenly over batter.3. Mix the remaining margarine, brown sugar and remaining 1/2 cup cereal. Sprinkle over cranberry sauce.4. Bake at 400°F about 25 minutes or until cake tests done. Serve warm.

1/4 t salt
2 c cranberries
Add
1/2 chopped walnuts or other nuts
1/2 c melted butter
2 beaten eggs
1 t almond extract

Steps:

  • Can use frozen cranberries--just dump them in. Bake for 40 minutes at 350 degrees in a greased pie plate.

•1 1/2 cups cranberries, roughly chopped (fresh or dried)
•1 1/2 cups sugar
•1 cup buttermilk
•1 cup unsalted butter
•1 egg
•1 teaspoon vanilla extract
•1 teaspoon baking soda
•1/2 teaspoon salt
•powdered sugar, garnish

Steps:

  • Directions 1.Preheat oven to 350º F and lightly grease 2 loaf pans. 2.In a medium bowl, sift together flour, baking soda and salt, and set aside. 3.In a large bowl or mixer, cream together the butter and sugar until lightened in color and fluffy. 4-5 minutes. 4.Beat in egg and vanilla extract and mix well. 5.Alternate between adding 1/3 cup of dry ingredients and 1-2 tablespoons buttermilk. Begin and end with flour mixture. 6.Gently fold in chopped cranberries and pour batter into loaf pans. 7.Place in oven and bake for 30-35 minutes, or until toothpick inserted in center comes out clean. 8.Let cool, then sift powdered sugar on top and enjoy!
