This is a lovely party appetizer. I especially like it at Thanksgiving and Christmas and New Year's Day.

1 (12 ounce) package fresh cranberries
3/4 cup firmly packed brown sugar
1/3 cup currants
1/3 cup water
1/8 teaspoon dry mustard
1/8 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1 (35 ounce) brie round
fresh fruit

Steps:

  • Combine first 9 ingredients in a medium saucepan.
  • Cook over medium heat, stirring constantly, 8 minutes or until cranberries pop.
  • Set aside, and let cool.
  • Remove rind from top of Brie, cutting to within 1/2-inch of outside edges.
  • Place cheese on a baking sheet; spoon cranberry mixture over top.
  • Bake at 300ºF for 20 minutes, or until cheese is softened, but not melted.
  • Transfer cheese to a serving platter; garnish, if desired.
  • Serve with assorted crackers.

8 ounces round brie cheese (about 4 inches in diameter)
1/2 cup prepared whole berry cranberry sauce
2 tablespoons granulated sugar
1 teaspoon fresh peeled ginger, grated or finely chopped
1/4 teaspoon finely grated orange zest
1/4 teaspoon cornstarch
1/8 teaspoon ground allspice
2 tablespoons hazelnuts or 2 tablespoons pecans
1 tablespoon thinly sliced fresh chives

Steps:

  • Preheat oven to 350 degrees F.
  • With sharp knife, cut circle in top of rind of cheese, leaving 1/4-inch border around top of cheese.
  • Carefully remove center circle and discard.
  • (Do not cut side of rind.) Place cheese on pie plate or other small shallow ovenproof baking dish.
  • In small saucepan, stir together cranberry sauce, sugar, ginger, orange zest, cornstarch and allspice.
  • Stir over medium heat until mixture comes to a boil and thickens slightly.
  • Remove from heat.
  • Spread cranberry mixture on top of cheese.
  • Bake 5 to 10 minutes, until cheese is soft but not runny.
  • (Do not overheat.) Sprinkle with nuts and chives.
  • Serve with Toasteds® crackers.

1 16 ounce Brie
1/4 teaspoon nutmeg
2/3 Cup whole cranberry sauce
4 Tablespoon Brown Sugar
1/2 Teaspoon Orange Extract
4 Tablespoons Chopped Pecans

Steps:

  • Freeze the Brie and slice off the top rind with a sharp knife. Mix the nutmeg, cranberry sauce, brown sugar and orange extract together. Top the mixture with pecans. Bake at 400 degrees for approximately 20 minutes.

1/2 cup whole cranberry sauce
1/4 teaspoon grated ginger root
1/4 teaspoon grated orange peel
1/8 teaspoon allspice
2 tablespoons chopped pistachio nuts, hazelnuts or pecans, toasted*
1 teaspoon chopped fresh chives
1 package Keebler® Toasteds® buttercrisp cracker

Steps:

  • 1. With sharp knife, cut circle in top rind of cheese, leaving 1/4-inch border around top of cheese. Carefully remove center circle of rind and discard. Do not cut side of rind. In 9-inch pie plate place cheese.2. In small bowl stir together cranberry sauce, gingerroot, orange peel and allspice. Spoon onto center of cheese round. Bake at 350°F for 10 to 15 minutes or until cheese softens.3. Sprinkle with nuts and chives. Serve with crackers.*NOTE: To toast nuts spread evenly on baking sheet. Bake at 350°F for 5 to 10 minutes or until light golden brown, stirring once or twice.
