WHITE CHOCOLATE CHIP CRANBERRY OATMEAL COOKIES

I originally made these at the request of my old chorus director John Kelleher, who also worked at Seattle area Starbucks (I think he'd had the combo in a cookie there, once). I was surprised but very pleased they came out so tasty! These days, these are pretty much the only cookies which are requested and I make on a fairly regular basis.

3/4 cup sugar
1/4 cup packed brown sugar
1/2 cup butter, softened
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup all-purpose flour
1 1/2 cups quick-cooking oats (not instant)
3/4 cup dried cranberries
6 ounces white chocolate chips

Steps:

  • Preheat oven to 375°F.
  • In a large bowl using an electric mixer combine the sugar, brown sugar and butter; mix well to cream together.
  • Add in egg and vanilla extract and mix until combined.
  • Add the cinnamon, baking soda, salt and flour and mix well.
  • Fold in the oatmeal, dried cranberries and white chocolate chips- making sure that all ingredients are uniformly distributed.
  • Roll dough into 1-inch balls and place 3 inches apart onto a greased cookie sheet and bake at 375° for 10-12 minutes, just until the edges are lightly golden.
  • Remove from oven and let cool for 2-3 minutes on the cookie sheet, then transfer cookies to cooling rack.

1/2 cup margarine, room temperature
1 teaspoon vanilla extract

1 cup all-purpose flour, wholewheat flour works just as well
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup quick-cooking oats, not instant
1/2 cup unsweetened coconut, medium
1/2 cup dried cranberries, Ocean Spray Craisins
1/2 cup slivered almonds, lightly toasted
2/3 cup white chocolate chips, placed in freezer to harden this retains their shape in baking

Steps:

  • Preheat oven to 350°F
  • Cream together white and brown sugar, margarine, vanilla and almond extracts.
  • Beat in egg.
  • Mix in sifted flour, baking powder and soda, salt, oats and coconut until combined.
  • Stir in dried cranberries, almonds and white chocolate chips.
  • Drop slightly heaped tablespoons of dough on a sprayed SHINY baking sheet.
  • Bake 10 to 12 minutes depending on your oven. Should be evenly golden in colour.
  • Remove to cooling rack.
  • Freeze really well.

1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup butter, at room temperature (1-1/2 sticks)

orange zest, grated (zest of 1 orange)
1/2 cup dried sweetened cranberries
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Line cookie sheets with parchment or silpat.
  • Whisk together flour, baking powder, soda, and salt in a medium bowl. Set aside.

  • Move oven racks into the middle and upper third of the oven. Preheat to 375. Grease a baking sheet or use a silpat. Sift flour, salt and baking soda together and put aside. Mix sugars and butter in an electric mixer on low speed until combined. Add Grand Marnier and eggs one at a time until combined. 2 egg whites (or one whole egg)
1 cup unsweetened applesauce

1 1/2 old-fashioned oatmeal or 1 1/2 quick oats

Steps:

  • Mix Splenda, Egg whites, Applesauce and Vanilla together.

3 cups quick-cooking oats
2 cups flour
1 cup white sugar
1 cup brown sugar

Steps:

  • 1. Cream together butter, white sugar, and brown sugar. Beat in eggs one at a time and stir in the vanilla.
  • 2. In separate bowl, mix flour, soda, salt and cinnamon. Add to creamed mixture slowly so it's perfectly integrated.
  • 3. Add oatmeal one cup at a time and stir in until well-combined. I find this step is easier to do sometimes with a big wooden spoon instead of with the Kitchenaid mixer. The mixer sometimes gets overwhelmed by the heft of the oatmeal!
  • 4. Add white chocolate and cranberries and mix well. Let refrigerate for half an hour.
  • 5. Place walnut-sized balls on lightly greased baking sheet. These don't flatten out much so if you like a flatter cookie, flatten with a fork dipped in sugar (or the palm of your hand!). Bake at 375 for 8 minutes. They will come out looking really doughy, but they stiffen as they cool. 8 minutes results in a perfectly chewy cookie.

  • In mixer bowl, cream butter, shortening, brown sugar, and granulated sugar.
  • Slowly add eggs, almond and vanilla extracts and beat well to combine.
  • Gradually add flour mixture to bowl and beat well.
  • By hand, stir in chocolate chips and cranberries.
  • Drop by rounded 2 teaspoonfuls (or a small #60 cookie scoop) 2" apart onto an ungreased baking sheet (I just line mine with parchment paper).
  • Bake for 8-10 minutes, or until just slightly browned and set on top.
  • Remove cookie sheet from oven and allow cookies to rest for 1-2 minutes.
  • Transfer cookies to rack and cool before packaging. Store in an airtight container or Ziplock baggie.

I saw this on another website and they looked so good! The recipe says they can be quite rich, so you only need a few. You can also easily double the recipe and look like great food to share at potlucks and parties.

1/2 cup Butter Flavor Crisco
3 teaspoons water
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup white chocolate chips (Half a bag)
1/2 cup dried cranberries (Craisins)

Steps:

  • In a small bowl, combine the flour, baking soda and salt. Stir well to combine.
  • In a large bowl or your mixer, cream together the butter, water, brown sugar & white sugar until smooth. Beat in the egg and add the vanilla.
  • Add the flour to the creamed mixture and stir well.Mix in the white chocolate chips and the dried cranberries.
  • Drop by heaping teaspoons onto a non-stick cookies sheet, or use a small ice cream scooper.
  • Bake for about 8-10 minutes. The best is to keep them just slightly undone, as they will finish for another minute on the pan after you've removed them from the oven. Allow to cool on a wire rack.

  • In a large mixing bowl, beat margarine and sugars until light and fluffy. Add egg and whites.
  • In a medium size bowl, combine flour, baking soda, baking powder, cinnamon and nutmeg; add the dry ingredients to the sugar mixture.
  • Stir in oats, and vanilla, then chocolate chips, and cranberries - It will be very thick. Chill dough for 1 hour.
