MARINATED VEGETABLE SALAD image

Number Of Ingredients 14

1 16 oz package fresh broccoli and cauliflower florets
1 16 oz package cherry tomatoes
1 15 oz. can chickpeas, rinsed and drained
1 6 oz can ripe black olives, drained and sliced
1 c slivered snow peas
3 green onions, chopped
1 medium carrot, cut into thin strips
1 small red bell pepper, chopped
1/2 c olive oil
1/3 cup red wine vinegar
2 garlic cloves, chopped
1 1/2 t chopped fresh or 1/2 t dried basil
1/2 t salt
1/2 t sugar1/4 t pepper

Steps:

  • 1. Combine florets and next 7 ingredients in a large bowl. 2. Process oil and next 6 ingredients in a blender until smooth, 3. Add to vegetables, tossing to coat. Cover and chill 5 hours
