Number Of Ingredients 4

1 package (12 ounces) fresh or frozen cranberries
1 cup dried cherries
1 cup sugar
2 cups water

Steps:

  • In a large saucepan, combine cranberries (no need to thaw if frozen), cherries, sugar, and water.
  • Bring to a boil; reduce heat to medium-low. Simmer until most berries have burst and liquid is syrupy, 20 to 25 minutes. Transfer to a bowl. Cover, pressing plastic wrap directly on surface of relish; refrigerate.

for the cranberry orange relish:
4 c whole cranberries
2 good quality seedless oranges, cut into 16 wedges, (peel and pulp intact)
2 c sugar
for the cranberry orange with cherry gelatin
2 - 3 oz pkgs, cherry gelatin
2 1/2 c boiling water
1 c crushed pineapple, juice and all
10 oz frozen, cranberry orange relish

Steps:

  • 1. For the Cranberry Orange Relish:
  • 2. Put cranberries and oranges in food processor and pulse until finely chopped. (A food grinder can be used instead of the food processor)
  • 3. Place cranberry orange mixture into large bowl and add sugar. Mix well, and let sit for 1 hr or so, until sugar has disolved.
  • 4. When sugar is disolved *pack in 10oz quantities to freeze. *Note: If using to make Cranberry Orange with Cherry Gelatin, you want to drain off most of the juice before packing and freezing.
  • 5. For the Cranberry Orange with Cherry Gelatin
  • 6. Disolve gelatin in boiling water. Stir in cranberry orange relish and pineapple. Pour into mold or serving dish. Refrigerate until firm.

2 cups fresh or frozen cranberries
1 can (14-1/2 ounces) pitted tart cherries
1 medium navel orange, peeled and chopped
3/4 cup sugar
1/2 cup packed brown sugar
1 teaspoon grated orange zest
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon vanilla extract

Steps:

  • In a large saucepan, combine the first nine ingredients. Cook over medium heat until berries pop, about 15 minutes. Remove from the heat; stir in vanilla. Serve warm or chilled. Refrigerate leftovers.

3 cups cranberries, 1-12 oz Package fresh or frozen
2 cups sweet cherries, 1-10 oz Package frozen
2 bosc pears or 2 Anjou pears, peeled and cubed
3/4 cup brown sugar, Packed
1 pinch ground nutmeg
1 pinch ground cinnamon

Steps:

  • In a large heavy saucepan combine all the ingredients and bring to a simmer over medium-high heat. Stir often to prevent sticking.
  • When mixture is simmering, reduce heat to low. Cook mixture until fruit is tender and the relish has thickened, approximately 40-50 minutes, stirring occasionally. Let cool, serve.

1 cup dried cranberries
3/4 cup dried cherries
1/2 cup dried tomatoes, diced
3/4 cup apple cider
1 tablespoon vegetable oil
3 shallots, chopped
1 Granny Smith apple, peeled, seeded, cored and cut into 1/4-inch dice
1/2 cup fresh, halved cranberries
2 teaspoons orange zest
1/4 teaspoon kosher salt

Steps:

  • In a bowl, combine the dried cranberries, cherries, tomatoes, cider and 3/4 cup water. Set aside for 30 minutes.
  • Heat a large saucepan over medium heat and add the oil. Add the shallots and cook, stirring, until they are just tender, about 3 minutes. (Do not let them brown.) Add the dried-fruit-and-cider mixture, the apple, fresh cranberries and orange zest. Cook, stirring occasionally, for 10 minutes. Serve warm or cold.

2 cups dark brown sugar, firmly packed
1.5 cups raisins
1 orange (unpeeled)
1 lemon (unpeeled)
1 cup canned pitted dark sweet cherries (drained)
.5 cup distilled white vinegar
.5 cinnamon stick
.5 tsp ground cinnamon
.5 tsp ground cloves
.5 tsp nutmeg, freshly grated
1.5 cup fresh cranberries

Steps:

  • Quarter and seed orange and lemon, then cut into 1/4" pieces. Combine all ingredients except cranberries in heavy large saucepan. Bring mixture to boil over medium heat, stirring frequently. Reduce heat and simmer 10 minutes. Add cranberries and simmer until they begin to pop, about 5 more minutes. Remove cinnamon stick. Cover and refrigerate until cold. (Can be prepared 1 week ahead.)
