Apples, No Pie, a la Mode image

3 tablespoons butter
1-inch piece fresh ginger, grated or minced
3 Golden Delicious apples, quartered, cored and sliced
2 teaspoons lemon juice
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg, eyeball it
1 pint vanilla ice cream
1 canister whipped cream

Steps:

  • Heat a skillet over medium to medium-high heat. Add the ginger and apples to warm butter, squeeze a little lemon juice over the pan and saute 4 to 5 minutes. Add brown sugar, cinnamon, nutmeg to the apples and cook another 2 minutes. Spoon apples into dessert dishes and top with ice cream and whipped cream. Garnish whipped cream with a pinch more cinnamon or nutmeg.

4 large McIntosh or Empire apples, cored
1 tablespoon lemon juice
3/4 cup brown sugar
1/4 cup instant oatmeal mix or rolled oats
1/4 teaspoon nutmeg, a healthy grating
1 teaspoon ground cinnamon
4 tablespoons butter, cut into pieces
2 ounces, 1/8 cup, golden raisins, chopped
1/4 cup chopped walnuts or walnut pieces or pecans
1 pint Dulce de Leche (caramel) ice cream or caramel swirl ice cream
Whipped cream, in a canister

Steps:

  • Preheat oven to 425 degrees F.
  • Sprinkle cored apples with lemon juice. Mix next 7 ingredients and over-stuff apples. Bake 20 minutes in a small oven safe dish. Transfer apples to small bowls with a spoon and top with ice cream and whipped cream.

1 1/2 tablespoons powdered sugar

Steps:

  • Preheat oven to 350ºF.
  • Coat a large baking sheet with cooking spray.
  • In a medium bowl, combine apples, brown sugar, lemon juice and cinnamon; toss to coat apples.
  • Place wonton wrappers on a flat surface. Drop apple mixture by teaspoonfuls onto center of each wrapper.
  • Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal.

1/2 tsp ground cinnamon
24 wonton wrappers
1 1/2 tsp powdered sugar

  • 1. Preheat over to 350 degrees. Coat a large baking sheet with cooking spray or use parchment paper.

1 teaspoon grated orange zest
1/2 teaspoon ground nutmeg
1 pound Brie cheese, rind removed
72 wonton wrappers
1 large egg, beaten
Oil for deep-fat frying

Steps:

  • In a small bowl, combine the cranberry sauce, orange zest and nutmeg. Place 1 teaspoon cheese and 1 teaspoon cranberry mixture in the center of a wonton wrapper. Moisten edges with egg; fold opposite corners together over filling and press to seal. Repeat., In an electric skillet, heat 1 in. of oil to 375°. 4 ounces really good bacon, cut into 1/2 -inch cubes
1/4 cup sugar
3 to 4 tart apples, like Granny Smith, peeled, cored and cut into 1/2-inch slices
Vanilla ice cream

Steps:

  • Put the bacon in a large skillet over medium heat and cook until some of the fat has been rendered and it begins to brown on the edges, 6 to 8 minutes. Pour off all but 1 tablespoon of the fat from the pan and sprinkle the bacon with 1 to 2 tablespoons of the sugar. Turn the heat to low and cook, turning the bacon pieces occasionally, until the sugar begins to melt and coat the bacon, about 5 minutes. Adjust the heat as necessary to prevent the sugar from burning. When the bacon is dark, remove it with a slotted spoon and let it cool on paper towels.
  • Add the apples to the remaining bacon fat in the skillet, and cook until just beginning to soften on the edges, about 6 to 8 minutes. Add the remaining sugar and continue cooking until the sugar melts and the apples are very tender, 5 to 10 minutes more. Serve the apples over ice cream along with any pan juices and a sprinkle of the candied bacon.

1 can (21 ounces) apple pie filling
1 graham cracker crust (9 inches)
2 cups butter pecan ice cream, softened if necessary
1 jar (12 ounces) hot caramel ice cream topping
1/4 cup chopped pecans, toasted

Steps:

  • Spread half of the pie filling over crust. Top with half of the ice cream; freeze 30 minutes. Drizzle with half of the caramel topping; layer with remaining pie filling. Freeze 30 minutes. Scoop remaining ice cream over top. Freeze, covered, until firm., Remove from freezer 30 minutes before serving. In a microwave, warm remaining caramel topping. Serve pie with warm caramel topping; sprinkle with pecans.
