This is a fantastic, quick to prepare snack. You will love the combination of salty/sweet taste and the crunch of the almonds and browned crackers. I got the recipe from my friend after we tasted these snacks at her home. These crackers are really pleasing to the eye and will keep several days in a container with a tightly-fitting lid. They would also make a great Christmas gift in a decorative tin.

5 ounces Club crackers
1/2 cup butter
1/2 cup sugar
1 teaspoon vanilla
1/2 cup sliced almonds

Steps:

  • Arrange single layer of Club Crackers on a cookie sheet with sides.
  • In saucepan, melt butter, add sugar and boil for two minutes; add the vanilla and stir. Pour immediately over crackers and sprinkle with sliced almonds.
  • Bake in the oven for 10-12 minutes at 350 degrees or until lightly browned.
  • Cool, break apart crackers carefully and arrange on serving platter.48.

1 cup creamy peanut butter
1 cup marshmallow creme
2 pounds milk chocolate candy coating, melted
Holiday sprinkles, optional

Steps:

  • Spread half of the crackers with peanut butter. Spread remaining crackers with marshmallow creme; place creme side down over peanut butter crackers, forming a sandwich. Place on waxed paper-lined pans; freeze for 15 minutes or until firm., Dip sandwiches in melted candy coating, allowing excess to drip off. If desired, drizzle with additional candy coating and decorate with sprinkles. Store in an airtight container.

This quick and easily made snack is quite addictive. I never seem to make enough when friends visit but they never seem to mind waiting while I make more. It's also good for practicing your "pan flipping" skills. This recipe is made with "popcorn seasoning". Although I used Cheddar cheese powder in this variety, many other flavors are available. oyster crackers
aresol spray olive oil (Not the pump spray type)
cheddar cheeze popcorn seasoning
salt

Steps:

  • In a sauté pan add Oyster Crackers about 2 or 3 layers deep.
  • Turn the flame on low.
  • Spray the oil liberally on the surface of the crackers.
  • Before the oil soaks in, liberally sprinkle the Cheddar powder and a little salt.
  • "Flip"the crackers in the pan and repeat the last step about 3 or 4 times until they are well coated, tasting as you go, until they reach the flavor that you like.
  • Caution: Be careful not to spray the oil into the open flame.
  • When you reach the intensity of flavor that you like, remove from the flame and let cool or eat them warm-- ENJOY!

1 (250 g) box Ritz Bits mini cheese crackers
1 (250 g) box mini cheeze nibs crackers
1 (250 g) box cheese sticks
6 tablespoons dried dill
1 cup melted hard margarine
1/3 cup cooking oil
2 packages dry ranch dressing mix (powder seasoning)

Steps:

  • Preheat oven to 275.
  • Place rack in middle of oven.
  • Place all 4 types of crackers in a roasting pan.
  • Mix melted margarine, oil, ranch dressing and dill in a bowl.
  • Pour margarine mixture over crackers and stir until all crackers are well coated.
  • Put roasting pan in oven (not covered).
  • Cook for 45 minutes stirring every 15 minutes.
  • Remove from oven and cool.
  • Taste best when cool.

My Jewish grandma used to make homemade cheese blintzes, which are crepes. I adapted this for my family as a snack. Making crepes can be tedious; these are wonderful.

1 (8 ounce) container cottage cheese
¼ cup matzo meal
¼ cup white sugar
½ teaspoon salt
40 whole saltine crackers
2 eggs
¼ cup vegetable oil, or as needed

Steps:

  • Stir together the cottage cheese, matzo meal, sugar, and salt in a bowl. Place about 1 tablespoon of the cheese filling onto a cracker, top with another cracker, and press down. Set the filled crackers aside. Beat the eggs in a shallow bowl.
  • Heat the vegetable oil in a large skillet over medium heat. Dip both sides of each filled cracker in the beaten egg, then place into the hot oil. Pan-fry the cracker snacks on both sides until golden brown, 1 to 2 minutes per side. Serve hot.

1 container of spreadable cream cheese (i used pineapple for mine)
4 Tbsp jelly or preserves of your choice. (i used strawberry)

Steps:

  • 1. Soften the Cream Cheese and mix the jelly or the preserves in with the cream cheese so that it is a combined.
  • 2. You can refrigerate and soften it and spread on the grahams whenever you choose. Break the grahams in half so that you have two squares and spread mixture. The mixture will soften the grahams so that it will take like cheesecake crust.
  • 3. You can use any combinations that you like.

1/4 cup canola or vegetable oil
1 teaspoon dried dill weed, or to your taste

  • Preheat oven to 250°F. In a large mixing bowl, combine ranch dressing mix, oil, dried dill, garlic powder, and salt, and mix well. Stir in oyster crackers mix to coat. Pour crackers onto a large cookie sheet. Bake 15 minutes, stirring every 5 minutes or so. Cool and add to a covered container.

1 Tbsp garlic powder
1/2 c parmesan cheese
1 c vegetable oil

  • 1. mix crackers and dry ingredients in large bowl, add oil and mix again. Spread out onto cookie sheet and bake 325 for about 20-25 minutes or until brown. I have added some cayenne pepper, cumin, chili powder as additional spices. Let cool and store in container.
