4 (3-oz.) pouches Blue Harbor Albacore Tuna (or 12-oz. total drained canned tuna)*
1 egg
1/4 cup finely chopped white onion
2 tablespoons finely chopped fresh parsley
1 tablespoon mayonnaise
1 teaspoon Sriracha sauce
zest and juice of 1/2 lemon
1/4 teaspoon salt
1/2 cup dry bread crumbs
3 tablespoons avocado oil (or your preferred oil)

Steps:

  • Add the tuna to a large bowl. Stir in the onions and fresh parsley.
  • In a smaller bowl, whisk together the egg, mayonnaise, Sriracha, lemon zest, and lemon juice.
  • Add the liquid mixture to the tuna mixture and stir together. Add the bread crumbs, and use your hands to combine and mix evenly.
  • Divide the mixture into 4 equal portions, about 1/2 cup each. Shape into 4 patties, each about 1 inch thick.
  • Heat the avocado oil (or your desired cooking oil) over medium heat. Using a fish turner, gently lay the tuna patties in the pan, and cook until browned, about 3-4 minutes on each side. Season with additional salt and pepper, as desired. Serve warm.

1/2 cup Italian-seasoned bread crumbs

1 teaspoon shoyu
1/4 cup chopped onion
1 teaspoon chopped green onion
1/4 cup ogo seaweed
1 teaspoon sesame oil
1 tablespoon oil
Bean sprouts, chopped cabbage or greens, as an accompaniment

Steps:

  • Place tuna cubes in a bowl with shoyu, onion, green onion, seaweed, and sesame oil. Mix well and then quickly sear in hot oil in a high heat wok. Don't cook for more than 1 or 2 minutes, as you want the center raw. Serve on a bed of greens.

1 teaspoon grated cumin seed
1 teaspoon grated star anise
2 tablespoons olive oil
4 tablespoons butter
1/2 minced yellow onion
1/4 large diced red onion

1/4 large diced yellow pepper
1/4 large diced green pepper
1 1/2 cups orange juice
Salt and pepper to taste
1 cup lobster stock
6 ounces sushi grade tuna
3 tablespoon whole coriander seeds
1 tablespoon star anise
Pinch salt and pepper

Steps:

  • Toast spices in saute pan over high heat until aromatic, then grind in a coffee mill. Heat olive oil and butter, then saute minced onions and ground spices. Add cabbage, spices, and diced peppers and cook until tender. Add orange juice and salt and pepper. Let simmer, then add lobster stock and reduce. Dredge tuna in coriander crust. Pan sear to to temperature. In a bowl, place cabbage then top with seared tuna.

2 tablespoons lemon juice

2 1-inch-thick tuna steaks, thawed

2 cups broccoli florets
2 tablespoons butter
salt and pepper to taste
1 (5 ounce) can tuna packed in oil, drained
1 tablespoon teriyaki sauce
1 pinch garlic powder

Steps:

  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli and steam until just tender, 2 to 6 minutes depending on the size of the broccoli florets. Remove the broccoli to a serving bowl and toss with butter, add salt and pepper to taste.

These little fritters - or 'tuna pancakes' as my 5 year old calls them, are fast and nutricious - and loved by big and little people alike - especially my very fussy 5 year old. You can even can add sweet chilli sauce and some fresh coriander to give them an Asian flavour.

100 g canned tuna in water
125 g creamed corn (2-3 tablespoons fresh corn can be substituted)
1/2 small onion, finely diced
1 tablespoon flour
1 egg
1 tablespoon grated cheese
1 tablespoon chopped fresh parsley (optional)

Steps:

  • Mix all the ingredients together in a bowl.
  • Heat up a frying pan.
